Community Supported Agriculture

Information

The Community Supported Agriculture program (CSA) has an average of 21 participants per week. A majority of our participants are CSUN staff and faculty. We market our CSA program via Facebook, Instagram, and bulletin board as well as during our on and off campus tabling events. To sign up for CSA you must visit www.underwoodfamilyfarms.com and go under their CSA program tab, where you will find the link CSA sign-up. We have a new PEP Jessica Wunder and Elizabeth Sedano were handing out the produce boxes during the summer.

IRA Grant Agenda Item 6.3

Information

An Instructional Related Activates Grant (IRA) was awarded to the Magaram Center in the amount of $8,000. This grant will be used in a collaborative project between with food science students and nutrition students to promote healthy eating and food preservation at the AS Farmers Market. This project will enhance the AS Farmers Market by providing students and the CSUN community with nutrition information, cooking demonstrations and recipe testing focusing on produce from the farmers market. The grant will cover an update to Compusense, sensory evaluation software and install the final sensory workstation. This software will allow the foods science student to properly analyze consumer acceptance of the recipes and products created.

Athletics Partnership – Health Assess

Information

During July 2015 a cooking class was provided to all new freshman athletes. As of August 2014, there have been 341 Bod Pod tests from the Athletic Department. The following from each team: Men’s Basketball = 45, Women’s Basketball = 41, Softball = 58, Men’s Soccer = 87, Men’s Volleyball = 39, and Women’s Water Polo = 6. Health Assess has also completed 65 diet analyses. These number reflect all Athletic Bod Pods and Diet Analysis completed from August 2014 to May 2015

Research Night Agenda Item 6.5

Information

On May 8th, the MMC together with Kappa Omicron Nu (KON) hosted an event to showcase scholarly research and projects of undergraduate and graduate students in Food Science, Nutrition, Kinesiology, Health Science, and Environmental and Occupational Health majors at CSUN. There were 8 presentations and 7 posters on a wide range of topics including: Determination of coumarin and capsaicinoids by High Performance Liquid Chromatography (HPLC) Classroom of the future Lilian Collection Senior Wellness center We had 20 attendees and the night allowed a great opportunity to discover research and projects conducted by fellow student and faculty from the various departments.

NEVHC Contract/CHLA Agenda Item 6.6

Information

The Northeast Valley Health Corporation (NEVHC) has partnered with Los Angeles County Department of Public Health and First 5 LA to bring Choose Health LA Kids to the communities of the Northeast San Fernando Valley and Sun Valley. The Marilyn Magaram Center is a subcontract with NEVHC. The goal is to improve nutrition, increase physical activity and reduce obesity in the communities The Center had three students participate in the grant by providing healthy food demonstrations to parents, participated in updating resource guides for the community and in nutrition education. The 2nd year for the subcontract ended and the Center will the 3rd year to meet its mission by participating in promoting healthy lifestyles to the communities.

Information

There have been a total of 19 Education series events. There have been a total of 264 participants. After each event participants are emailed a survey to complete. There are a total of 39 responses as of the current date. The average score is a 4.8 out of 5, which takes into consideration level of interest, professional usefulness, and effectiveness of delivery. 95.5% of the students attending the event responded positively and stated they would attend another Education series event. SCIFTS Grant Agenda Item 6.8

Information

Julie Ellis submitted a grant proposal for new Rheology equipment to the Southern California Institute of Food Technologists (SCIFTS). The full amount of 10,900 was awarded to purchase a new rheometer and viscometer from Brookfield Engineering Laboratories for the food chemistry lab. This equipment will enhance student learning with hands-on experience with modern rheological equipment and will allow for faculty research opportunities.

Professional Experiences Programs (PEP)

Agenda Item 6.9

Information

The Professional Experiences Program (PEP) students have participated in various on and off campus projects throughout the semester. Positions include: Food Science Lab Assistant, Food Chemistry Lab Assistant, Community Supported Agriculture, Education Series, Health Assess, Food Safety Coordinator, Educator, Glendale Adventist Medical Center, UniHealth Grant, Choose Health LA Grant. From 1/05/2015-5/11/2015 Number of PEP students: 33 PEP total hours: 781 PEP total contacts: 2027

This year the PEPs have met more than a quarter of our target goal of contacts. The PEPs are influential asset to the Marilyn Magaram Center. We received about 22 applicants for the upcoming year and look forward to having the enthusiastic PEPs become part of the Center in reaching its goals.

USDA-HSI Grant Project Agenda Item 6.11

Information

The USDA-NIFA Breastfeeding Education Grant is in its second year of implementation. Over the summer, Dr. Merav Efrat collaborated with faculty and students at The Center for Visual Communication (VISCOM) to create a lactation education brochure. This brochure provides students information about the lactation education curriculum at CSUN and careers in lactation education. Additionally, over the summer Dr. Efrat worked with an external evaluator to complete an evaluation report which examined the efficacy of the lactation course and practicum on participating students' competencies in the area of lactation. Pre and post-tests were utilized to evaluate the course and phone interviews were utilized to evaluate the practicum experience. The evaluation report findings were very positive and found that students who participated in the lactation education course and lactation education practicum improved their lactation education competencies as well as interest to integrate lactation education into a future healthcare career. Recommendations for improving the practicum were to find alternative sites for students to gain practical experience in the area of lactation education. Based on these recommendations we are currently exploring alternative opportunities for our MS nutrition students to gain practical experience in the area of lactation education. This Fall the Health Sciences Department is offering 2 sections of HSCI 434-Lactation Education. Both sections are full. We hope to offer another 2 sections in the Spring. Also, this Fall, Dr. Fajardo will be oversee outreach sessions. We plan to facilitate at least 10 outreach sessions to undergraduate students and encourage them to pursue graduate studies in nutrition. We also plan to award 5 GRE stipends to undergraduates and up to 4 $1000 tuition stipends to M.S. Nutrition and Dietetic students.

Product Development Project “Marmalade”

Agenda Item 6.12

Information

This semester in FCS 302 Product Development, Food Science Students Aryn Noble, Cassie Berger, Christina Bowen, and Tiffany Zaich started working on an exciting new product – Matador Marmalade. Matador Marmalade is being developed with the idea of creating and incorporating campus recognition and sustainability into a product generated by the students for the students. Professor Julie Ellis inspired the idea for developing a marmalade that can be sampled at the weekly CSUN Associate Students Farmer’s Market and sold on casmpus. The concept of orange marmalade was chosen because CSUN was established on an orange grove in the late 1950’s and some of these original trees still remain. The product is expected to begin production in Fall 2015. Project will be coordinated by Julie Ellis, Annette Besnilian, and Cassie Berger in collaboration with Product Development Class.

Back to School Health Fair Agenda Item 6.14

Information

On July 25th, 2015 the Center participated at a Community event called Back to School Expo sponsored by Brooks and Brooks Foundation & LPCC. The Parenting with Love Back to School Expo featured family friendly oriented products, services and activities, exhibition, food, and games. The Center provided nutrition education and distributed MMC tote bags and pencils for the children and families. The Center being there for a short period of time reached about 15 children including their parents.
