• The area: is located 50 km from Venice and 100 km from Cortina D’Ampezzo, the Queen of the
Dolomites and extends over a hilly territory where for centuries men have dedicated to viticulture,
creating a landscape so fascinating to aspire to UNESCO recognition.
• The steep slopes of the hills make it difficult to mechanize the work and it is truly thanks to the
large peaceful army of men and the love that they have for their land that it has been possible to
preserve these beautiful hills and to create a strong bond between man and the rural
countryside.

The work of the organic winegrower is to create
a collaborative relationship with the living
organisms existing in nature and on the
vineyard. To manage the complex balance of
the vital energies of plants, microorganisms and
insects needed to obtain the best grapes while
respecting the environment.
Biodynamic farming incorporates ideas about a
vineyard as an entire ecosystem, and also takes
into account things such as astrological influences and lunar cycles.

The Story of PerlageThe story of Perlage was born in 1985, when the 7 Nardi brothers, encouraged bytheir father Tiziano and mother Afra, decided to embark on a journey of
discovery in converting to organic agriculture. They started in Soligo, from thefamily's vineyards, the Riva Moretta, in the heart of the ConeglianoValdobbiadene DOCG Prosecco Superiore area.

Glera and the vinification
The glera grape is a rustic and vigorous white grape variety with
hazel shoots and rather large and long bunches featured by
golden yellow berries.
Charmat Method:
• 1st fermentation: it takes place thanks to selected yeasts at
temperature around 16°C and lasts 15/20 days.Subsequently, the wine begins the phase of maturation.
• 2nd fermentation: the prise de mousse takes place during the
re-fermentation, sugar and yeasts are added and they
produce CO2. The process lasts almost 30 days.
Spumante (Sparkling) is usually between 5 and 6 bars ofatmosphere/pressure
Frizzante (demi-sparkling) has between 2.5 and 3.5 bars
SUGAR LEVEL
Brut is when the sugar content is less than 12 g/litre.
Extra dry is when the sugar content is between 12 and 17 g/litre.
Dry is when the sugar content is between 17 and 32 g/litre.
Demi-sec is when the sugar content is between 32 and 50
g/litre.
