PREFACE
UNESCO in cooperation with the International Union of Nutritional Sciences(IUNS) has compiled this COMPENDIUM OF AFRICAN HIGHER EDUCATION PRO-GRAMMES IN FAMILY & HOME ECONOMICS, NUTRITION, FOOD SCIENCE ANDTECHNOLOGY AND HEALTH SCIENCES.1 The purpose of this compendium is tooffer African Member States of UNESCO information on available degree programmesin these areas in order to assist interested students in their search for higher educationand to provide institutions themselves with facts and information on similar training pro-grammes offered elsewhere in Africa. Three other compendiums of the same nature areavailable for Asia and the Pacific, Latin America and the Caribbean and the ArabStates2.
UNESCO receives innumerable requests from students for guidance on trainingin fields concerned with the home and family environment, food and nutrition and heal-th. This compendium will be expanded as necessary after its first diffusion based oncomments and information provided by readers. In any future edition, we hope to provi-de qualitative information on the content and substance of training programmes in orderto describe how higher education programmes are responding to prevailing humandevelopment concerns.
The information reported on each institution has been obtained from publishedinternational sources and, wherever possible, from the institution itself. The followingreferences were consulted:
Association of African Universities, Directors of African Universities, (Ghana: Akan Printing Press Ltd., 1988).
Association of Commonwealth Universities, Commonwealth Universities Yearbook, (London: The Bath Press, 1991).

2According to UNESCO regional delineations, the following countries appear in both Africa and the ArabStates-Algeria, Egypt, Libya, Morocco, Sudan and Tunisia. These six countries are included in both theAfrican and Arab States compendiums.

Although we have gathered more information on some institutions and less onothers, for consistency reasons, we have standardised the presentation of information.
The institution name appears on the top of each page and at the bottom right sideof each page there is an indication of when the data on that institution was last updated. T h efields of study o ffered are indicated according to the way that they are designated by theparticular institution. Here, we have tried to identity institutions in each country with fields ofstudy most closely related to home economics, food and nutrition and health sciences. [Insome countries, e.g., Burkina Faso, Gambia, Liberia, Senegal, Somalia, the closest field ofstudy identified to these areas is public health.] Student enrolment applies to the particu-lar Centre, Faculty or Department as specified in the institution entry at the top of each page.
Information on student enrolment and school fees were obtained from the refe-rences cited above or the institution itself (in this case, the figures apply to the year in whichthe information was updated by the institution). Invariably, with each new academic yearthere will be fluctuations. This information should be regarded as indicative.
A number of African countries, we note, are particularly endowed with training pro-grammes in the areas of concern-Nigeria, Egypt, Kenya, United Republic of Ta n z a n i a ,Malawi and Zambia-and many of these programmes offer degrees at Masters and Doctoratel e v e l s .
We were unable to identify relevant institutions in the following countries-A n g o l a ,Cape Verde, Comoros, Djibouti, Equatorial Guinea, Guinea, Guinea-Bissau, Mali,Mozambique, Namibia and Sao Tome and Principe.
This compendium has been a collaborative project with the International Union ofNutritional Sciences and UNESCO. Dr. Rajammal P. Devadas, Vice Chancellor of theAvinashilingam Institute for Home Science and Higher Education for Women (DeemedUniversity), Coimbatore, India, serves as Chairperson of the RUNS Committee associatedwith this effort. UNESCO as part of its Individual Internship Programme has offered nume-rous young professionals the opportunity to contribute to this information exchange project.3Ms. Wendy Heilman started the initial research on the four compendiums. Ms. Va n e s s aHoltzer and Ms. Ana Michel provided further assistance with the data collection and proces-sing. Ms. Janelle Miller assisted with finalization of all four compendiums.4
3The UNESCO Individual Internship Programme has, since its inception, been of mutual benefit toUNESCO and participating interns. The programme offers young professionals the opportunity to workunder supervision within the Organisation in areas directly related to education, science, the social andhuman sciences, culture and communication. Interns volunteer up to three months of their time to the pro-gramme in exchange for the experience gained.
4Special appreciation is given to Ms£. Josephine Chona and Ms. Allison Hannigan for their compu-ter assistance with data entry. Ms. Chona was especialy helpful to the interns throughout the preparationprocess.
