Backgrounds

The network is financed by the Central Innovation Programme for SMEs in the assisted-ZIM-

NEMO module implemented by the Federal Ministry of Economics and Technology for the

period of 2010-2013. More then 20 network partners from industry, academia and marketing

mainly located in Baden-Württemberg have come together in the network to share the theme

of "food and health" tactics.

Objectives of the Network ‘Bioactive Plant Foods’ The goal of the network is to produce bioactive products (bakery / food supplements) with an additional health benefit of bioactive plant ingredients of amaranth. This will be achieved through: • Promoting the integration of research, midsize businesses and industry and thus creation of resources and synergies • Scientific contribution to the explanation of the cause-effect relationship between nutrition and health • Establishment of quality standards • Assistance in development, distribution and marketing of bioactive plant products with proven health benefits by promoting a new established quality brand • Creating transparency for consumers through clear communication and marketing strategies • Expansion of the network and establishment in the innovation landscape in Baden-Württemberg

A network has a vision

Visions are a part of modern businesses and the network Bioactive Plant Foods has the vision

to build a center of excellence for amaranth and other bioactive foods. The members of the

Steering Committee explain the backgrounds and details about their ambitions.

A vision is an idea that is concerned with the longer-term development of a company. A real-

istic view into the future, that defines a goal for the organisation that is worth achieving. A

vision is also the basis of the network Bioactive Plant Foods since the association of compa-

nies and universities directs its attention to the front aiming to improve people's health

through their diet. Through the production of functional foods and dietary supplements the

network tries to achieve its visions. "It is important for us that there is a scientific basis for the

relationship," explains Dipl. oec. troph. Karin Wrzesinski, director of marketing and product

management of Agilepharma GmbH. Prof. Dr. Michael Wink Director of the Department of

Biology at the Institute of Pharmacy and Molecular Biotechnology of the Heidelberg Univer-

sity and Dipl. LM-Ing. Mario Jekle, group manager of AG Cereal-Process-Engineering at the

Institute of brewing and beverage technology of Weihenstephan Science Center of Food,

Land-use and Environment form the scientific basis of the Steering Committee and represent

the network members of colleges and universities. Together with the companies they want to

explore how nutrition and health are related.

Amaranth, which is originated in South America is the key plant of the network and contains,

besides essential amino acids, many polyunsaturated fatty acids, minerals, vitamins B and E

and dietary fiber. "The importance of amaranth for a healthy diet is documented" declares Dr.

Dietrich Paper, Managing Director and Head of Development of Anoxymer GmbH "Of par-

ticular interest are food ingredients that improve blood values" explains Prof. Wink. The car-

bohydrates of the plant cause only a slow rise of the blood sugar levels. Therefore Amaranth

is a valuable food for people who have problems with blood sugar or overweight. Further-

more, amaranth is an excellent source of vegetable protein. The plant prefers warm growing

regions but can also be grown in Baden-Württemberg. "We use plants that can be grown in

our region and bring added value to a natural diet," said Mario Jekle. "Locally produced prod-

ucts" play an important role. The goal is to turn precious food in a marketable product. "We

want to work together to develop and market an innovation " said Dr. Bernd Fiebich, General

Manager of VivaCell Biotechnology GmbH. Testing the bioactivity of foods is the goal of the

enterprise. "We will start with amaranth and want to continue with further food products in-

cluding for example milk or beer. "The consumers can be sure that the products developed in

the network conserve the valuable nutrients of amaranth" said Dr . Dietrich Paper. The scien-

tific findings acquired in the community project will support the upcoming market of func-

tional foods. Another focus of the network is preventive nutrition. Educate consumers about

healthy nutrition and to inform about the function of food is part of the mission statement of

the merger. "Our idea is that food serves not only as an energy source, the nutritional physiol-

ogy as well as further benefits of the food come to the fore," says Jekle. "For this reason food

supports also health maintenance, we want to work proactively and prevent diseases of con-

sumers" said Wrzesinski. Functional foods may thus contribute to health prevention, regen-

eration and thus reduce the health care cost.

This naturally high-quality vital-substance-profile makes the "miracle grain of the Incas" interesting for different products of Agilpharma. The studies of the network, which will examine the health-promoting and preventive effects of amaranth, meet the scientific requirements of Agilpharma. The nutrition, prevention and recovery aspect is supported by a health blog and several bestseller books as well as numerous public events. Role in and expectations for the NW Ultra Energie Produkte contributes its expertise in the development of an anti-inflammatory protein for the prevention of inflammatory diseases. We hope to develop jointly through our network activity a marketable amaranth protein in 2014.

Expertise The company Wüst is a medium- size bakery based in Achern using wholegrain flour. The main feature of Wüst is a consistent ecological functioning at all levels of production. Furthermore the bakery subjects to Demeter and EG-control procedures. Bakery products are therefore only produced of organic ingredients. Role in and expectations for the NW The bakery Wüst performs bakery tests with amaranth and is interested in a new "healthy" product-line (bread/rolls). They expect to get through the network scientific and technological input for the development of new product.

Expertise As a platform for the Life Science & Biotechnology BioLAGO e.V. links about 80 research institutions and companies around the Lake Constance - in Germany, Switzerland, Austria and Liechtenstein. Role in and expectations for the NW As a partner of the network "Bioactive Plant Foods" BioLAGO e. V. promotes the development of healthy and safe foods. While supporting the public relations the association of companies and research institutes located on the Lace Constance campaigns for attracting new partners for the network. The goal is to use insights from biotechnology and life sciences to produce value-added products in the food industry. In addition BioLAGO assists in conceptualisation and implementation of events to inform the public about current scientific knowledge and new technologies to improve food.

As researchers we are working inter alia for manufacturers of dietary supplements and carry out clinical trials in human medicine for stress-depressants. Expertise The focus of scientific interest is the prevention of aging processes in the brain and age-related, neurodegenerative diseases. The best prevention can be achieved by ensuring a sufficient supply of micronutrients and secondary metabolites e. g. in functional foods or through supplementation. The research focus is on mitochondria which not only provide cells with energy but also contribute mainly in old ages to increased oxidative stress. This mitochondrial dysfunction can be positively influenced by dietary ingredients such as polyunsaturated fatty acids and isolated secondary metabolites extracted of berries and mediterranean plants. Since especially food supplements contain vitamins, minerals and phytochemicals in very high concentrations the study also always observes potential toxicological effects for instance by determining the toxicity to cells and the metabolic activity. Role in and expectations for the NW In addition to the exploration of new bio-active food in terms of effects on energy metabolism we bring in our expertise in assessing the safety of foods and bio-functionality. Furthermore we participate in the demarcation between physiological and pharmacological effects of new bio-active food and contribute to the differentiation to drugs.

Expertise The laboratory of cell cultures technology deals under the direction of Prof. Dr. Bettina Weiß with primary cultures, cell lines, the production of monoclonal antibodies, differentiation studies in cell cultures, the development of test systems as well as co-cultures as standard bioanalytical methods for nucleic acids and proteins. In projects the scientists explore the production of biopharmaceuticals in cell cultures and the development of cell culture test systems. Role in and expectations for the NW One research focus of the department Biotechnology of the University in Esslingen is the development of differentiated cellular assays and analytical techniques for bioactive substances. These substances can be classic chemical-pharmaceutical but also in future in complex matrices such as food. Expectations for the network are the methodological connection with analytic partners to initiate synergistic effects. The various results provide a scientific contribution to the effects of herbal ingredients. We also want to see our research within the entire value chain from production to consumers. Thus, the cellular measurement methods are not considered in isolation but refer to the variations in natural products as well as to different processings of other network partners and the use of the consumer.

Expertise The following research topics are the focus: impact of stubble on agronomic parameters, energy crops for biogas plants, simplified method of N-depot fertilisation, effect of sowing date, plant protection and seed rate on yield of winter barley, multiplication and evaluation of historical types of lentils from the Swabian Jura, catch crops by combine harvester-seeds as well as weed control and variety selection in soybean. Role in and expectations for the NW Objective of the network is that the plants which substances are used in the new functional foods can be grown in Germany. Research interest of the HfWU is to optimise cropping systems, which played minor role that they can be well cultivated, meet the necessary quality requirements and achieve high levels of value-adding ingredients. This can be accomplished by planting trials and genotype screening. Through the network the entire value chain is covered so that the activities of HfWU can be targeted at the demand of the downstream sector. The bundling of different expertises in the network should promote the implementation of research projects.

Expertise The research interests concentrate on the areas of metal analysis, sensors systems, spectroscopy and chemical surface modification. The various research projects deal among other with sensors for contactless glucose monitoring, studies on iron and copper content in selected cell organelles and the accumulation of heavy metal ions in plants for the remediation of contaminated soils and waters. As a service the Institute offers highly sensitive fluorescence spectroscopy SPEX - Fluorolog-3. Role in and expectations for the NW The Institute of Analytical Chemistry of the University of Mannheim in the network investigates biological activities of plant compounds. The focus is on plant extracts with high levels of amino acids, polyphenols, and phytosterols. These extracts are characterised with respect to their influence on cell culture growth of human cells. Here the determinations of the effect on the respiratory activity of the cells and the measurement of the influence on the glucose and cholesterol metabolism have priority. Through its participation in the network the university is hoping to contribute to the development of innovative food products and to gain new insights into mechanisms of cell differentiation and to the developments of diseases.

These are all involved in specific biochemical pathways and play an important role in the balance between health and disease. Role in and expectations for the NW The role of IABC in the network is to analyse relevant biomarkers and to investigate the effect of bioactive food components in different products and extracts of amaranth in vivo. IABC expects that the connection of the network leads to better contact with scientific institutions and cooperation in scientific issues for the further development.

We hope that by linking basic research with practice a broader scientific basis for plant breeding will be obtained.

Expertise The Life Science Center (LSC) is an interdisciplinary research center at the University of Hohenheim. It provides a central platform for life science-oriented disciplines of agricultural sciences and food technology for performing innovative research in a companionship. The main duties of the LSC include the initiation and implementation of research projects in various disciplines and fields of study for the purpose of innovative, research-oriented synergies. Role in and expectations for the NW The Life Science Center supports the network "Bioactive Plant Foods" as a partner with his long experience in management and coordination of European collaborative research projects and its international network in the food sector. Ms. Brown is a member of numerous national and international organisations in the food sector and has very good contacts to the European Commission. Other priorities of the LSC are the know-how transfer to SMEs in the food sector as well as the dissemination and communication of research results. The LSC would like to support the members of the network to implement joint research projects on European level.

Expertise The focus of the since 2009 newly occupied chair of brewing and beverage technology are the cereals and alternative herbal ingredients and their procedural and biotechnological processing. The application and methodically -oriented research focuses on liquid foods and drinks such as beer and onto solid food matrices of baked goods. The department examines the interactions of herbal food and beverage matrix to the occurring physico - chemical and biological reactions in a process engineering context. Role in and expectations for the NW The network subsists on the active collaboration and intensive knowledge exchange of the partner. This is made possible primarily by the different competencies of the involved network participants. In our opinion this is a central link between procedural and technological issues concerning the processing of raw materials as well as the design of the final product qualities. In this context structuring and biotransformation processes are developed from the grain to the finished product. Thus we can bring in our expertise in the area of grain processing to the research area of the network and based on synergistic effects of the network partners we expand the potential of bioactive plant foods significantly. TUM is an advisory member of the Steering Committee of the network.

Expertise Since the founding in 1995 in Tübingen ULTRA SPORTS developed performance-enhancing sports nutrition. The efficacy of the products is tested at regular intervals by the laboratories of the University for Sports in Cologne which is accredited by the NADA (National Anti-Doping Agency). The products are sold by a Germany-wide dealer network. Role in and expectations for the NW The Ultra Sports GbR performs tests for athletes on effects of inhibition of inflammation caused by the developed amaranth extracts. We hope to develop jointly with the network a marketable amaranth protein to expand our product portfolio in 2014.

Expertise The Department of Biology at the Institute of Pharmacy and Molecular Biotechnology at the University of Heidelberg deals under the direction of Prof. Dr. Michael Wink with biogenic agents and biotechnology, molecular evolution, regulation of gene expression, biosensors, bioinformatics and natural products with antimicrobial activity. In the area of biogenic substances and biotechnology research scientists investigate the biochemistry and physiology of metabolism and transport of secondary materials, the chemical ecology and molecular pharmacology focusing on herbal medicines and phytomedicine. Furthermore the focus of molecular evolution is deepened by the specialisation in biodiversity, systematics and molecular ecology as well as biomonitoring of environmental influences. Role in and expectations for the NW Prof. M. Wink and his team will accompany the project with phytochemical expertise. The lab in Heidelberg regularly conducts chemical analysis of plant compounds by HPLC, GLC, LC-MS, GLC-MS and NMR. In addition, the AG Wink will contribute its expertise in the field of molecular pharmacology. Prof. Wink is an advisory member of the Steering Committee of the network. We hope for a successful implementation of the amaranth project and establishment of future collaborations.
