In a shaker, muddle the ginger, kumquats and sugar. Add remaining ingredients and fill the shaker with ice. Shake vigorously, and pour, unstrained, into an Old Fashioned glass.

Rim a double Old Fashioned glass with paprika sea salt. Muddle the cilantro in a mixing glass, then add the jalapeo slice and gently muddle again. Add remaining ingredients to the mixing glass. Shake well, and double strain into the rimmed double Old Fashioned glass. Garnish with a cilantro leaf and/or a pineapple leaf.
