Strawberry Parfait
Prep 20 mins | Cook 15 mins
½ cup crunchy granola
2 punnets of strawberries
2 tbsp caster sugar
1 Red Delicious apple, cored and diced
1 Golden Delicious apple, cored and diced
1 Granny Smith apple, cored and diced
2 seedless oranges, peeled and segmented
2 seedless mandarins, peeled and segmented
200g strawberry yoghurt
Serves 4
1. Slice apples into thin wedges, segment oranges and mandarins and reserve juices and slice one punnet of strawberries into halves.
2. In a pot, place caster sugar and reserved juices from oranges and mandarins and stir over low heat until dissolved. Then add a punnet of strawberries in a blender with syrup from stove and puree into a smooth sauce. Set aside.
3. To make the parfait, add some yoghurt in the base of your serving dish, followed by a sprinkle of granola. In a separate bowl, toss the red, green and yellow apples with oranges and strawberries, then add to the yoghurt and granola base.
4. Sprinkle with the rest of the granola and top with the strawberry sauce and finish with strawberry garnish.

From the M1, head west on the Logan Mwy then take exit 31. Turn right onto Station Rd, then left onto Kingston Rd and follow to the lights. Stay right and turn into Chambers Flat Rd, then drive approximately 9.9km to The Berry Patch.

Cucumber and Mango Salad
Prep 10 mins
3 mangoes, peeled and cubed
1 seedless unpeeled cucumber halved and thinly sliced
1 small red onion, halved and thinly sliced
½ red capsicum sliced thinly
2 tbsp lemon juice
Salt and pepper to taste
Serves 6
1. Peel and cube mangoes and thinly slice the cucumber, onion and capsicum.
2. Combine all ingredients and chill before serving.

Wombok SaladPrep 15 mins
SALAD MIX
½ wombok, chopped in half again then sliced thickly
1 carrot, thinly cut (julienne)
½ red onion, thinly sliced
5 radish, thinly sliced
½ red capsicum, thinly sliced
2 stalks parsley, chopped finely
2 stalks coriander, chopped coarsely
Serves 4
1. In a salad bowl, combine all salad mix ingredients together except for the noodles and almonds and chill.
2. In a shaker, combine all dressing ingredients and shake well.
3. Before serving, add the noodles and almonds then pour over the dressing.

¼ cup caster sugar
1 tbsp soy sauce
2 tsp sesame oil

Kenon Mushroom Chicken Stir-fry
Prep 15 mins | Cook 10 mins
2 tbsp caster sugar
2 tbsp soy sauce
300g chicken breast, cut into thin strips
2 tbsp olive oil
1 medium red onion, cut into thin slices
½ red capsicum deseeded and finely sliced
100g Shiitake mushrooms, trimmed and sliced
150g Swiss Brown mushrooms, sliced
100g Enoki mushrooms, trimmed and separated
1 bunch English spinach, trimmed and washed
White rice (to serve)
Serves 4
1. Combine the caster sugar, soy sauce and chicken in a bowl. Stir well to combine.
2. Heat 1 tbsp of oil in a wok over high heat. Add chicken and stir-fry for 3 minutes or until the chicken is cooked. Remove the chicken to a plate and set aside.
3. Add the remaining oil to the wok and heat over high heat. Add the onion, capsicum, Shiitake and Swiss Brown mushrooms and stir-fry for 2 minutes.
4. Add the chicken and spinach and stir-fry for 1 minute or until the spinach just begins to wilt.
5. Add the Enoki mushrooms to the wok and stir-fry for 1 minute or until heated through.
6. Serve immediately with cooked rice.

Cucumber SoupPrep 10 mins
2 cucumbers
½ green apple
1 clove garlic
1cm piece of fresh ginger
1 green tea bag
1 cup stock
Small handful of basil leaves
Salt and pepper
Optional: ½ hass avocado
Sour cream, garlic chives (to serve)
Serves 4 (entrée size)
1. Add cup of boiling water to tea bag and leave to cool with bag still in.
2. Roughly chop cucumbers, apple, garlic and ginger then place in a food processor or blender with basil and process to a smooth puree.
3. Add tea, stock and seasoning and blend to combine.
4. Chill and serve in bowls topped with a teaspoon of sour cream and scattering of snipped chives. For a party, serve in shot glasses.
For a creamy, dairy free version, add the avocado from the start.

200g of fresh strawberries
20ml watermelon liqueur
20g sugar
Serves 1
1. Blend all ingredients until silky smooth.
2. Pour into a martini glass and garnish with grated orange zest.
