I want to express my gratitude to Christine Wilczek. She is truly a gem in the realestate world that is crumbling as I'm writing this. Christine went above andbeyond anything I ever expected a real estate agent to do. My family and I listedour home about 6 months ago. We had an offer within a few weeks (because ofthe amazing advertising on our home) that ended up falling through, obviouslydue to reasons that were completely out of Christine's control. She was patient,understanding and really made us feel at ease during that disappointing time.

Fast forward 5 months and we have another offer. After agreeing on a price,things seemed to be going smoothly. The close was going to be relatively quick(about a month after the offer) but we had plenty of time to get everything takencare of. Less than 2 weeks before our scheduled closing date, we were informedthat the buyer's lender had done a "drive by" appraisal and we appraised forless than our sale price. Christine literally went above and beyond her call ofduty. She was on the phone demanding a "real" appraisal. In this market,especially in the Lemont area, a drive by appraisal is just unacceptable andChristine made that very clear to the lender. They agreed to schedule a newappraisal but by now, we were only a week away from closing. Her relentlesscalling resulted in a "rush" appraisal being ordered. Bright and early Saturdaymorning (6 days before we were scheduled to close), with a smile on her face,Christine was at our house ready to meet the appraiser. He told her the resultswould be in on Monday. Christine made 8 phone calls on Monday trying to getthe results. Christine knew that obviously my husband and I were nervous at thispoint seeing that the "drive by" appraisal came in lower than our agreed uponsale price. Tuesday came along and Christine continued her pursuit by making18 phone calls. Finally, after several more phone calls on Wednesday, she

received the results of the appraisal (which came in where it needed to). At thispoint, the buyer had to file for an extension on the closing, which resulted in usfiling an extension on our new home. By Friday of this week (the day we wereoriginally scheduled to close), the buyer still didn't have a clear to close andChristine never stopped making call after call after call on our behalf. Mondaycame around and her calls began again. We are finally scheduled to close onThursday and I honestly believe that without Christine, this would not behappening.

Throughout this entire process, Christine has been absolutely amazing. She hasnever made me feel like I'm bothering her (and believe me ... I called her a lot!),she has been calm, reassuring, sympathetic (we have two very young childrenand living out of boxes is not pleasant), and just plain wonderful. She called meat 8:00 pm one night, with her kids in tow, to let me know she finally heard backregarding something we were waiting on. It's as if her work day never ends! Herdedication to her clients is outstanding! She is a go-getter and WILL get the jobdone. I can't imagine going through this process with anybody else. The realestate world is a mess right now but is does have a shining star in Christine. Icannot thank her enough for everything she has done for my family and I. Ingredients1 pound sweet or hot Italian sausage1 pound lean ground beef1/2 cup minced onion2 cloves garlic, crushed1 (28 ounce) can crushed tomatoes2 (6 ounce) cans tomato paste2 (6.5 ounce) cans canned tomato sauce1/2 cup water2 tablespoons white sugar1 1/2 teaspoons dried basil leaves1/2 teaspoon fennel seeds1 teaspoon Italian seasoning1 tablespoon salt1/4 teaspoon ground black pepper4 tablespoons chopped fresh parsley16 lasagna noodles16 ounces ricotta cheese1 egg1/2 teaspoon salt3/4 pound mozzarella cheese, sliced3/4 cup grated Parmesan cheese

DirectionsIn a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until wellbrowned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season withsugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoonsparsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.Bring a large pot of lightly salted water to a boil. Cooklasagna noodles in boiling water for 8 to 10 minutes.Drain noodles, and rinse with cold water. In amixing bowl, combine ricotta cheese with egg,remaining parsley, and 1/2 teaspoon salt.Preheat oven to 375 degrees F (190degrees C).To assemble, spread 1 1/2 cups of meatsauce in the bottom of a 9x13 inch bakingdish. Arrange 4 noodles lengthwise overmeat sauce. Spread with one half of thericotta cheese mixture. Top with a third ofmozzarella cheese slices. Spoon 1 1/2 cupsmeat sauce over mozzarella, and sprinkle with1/4 cup Parmesan cheese. Repeat layers, andtop with remaining mozzarella and Parmesancheese. Cover with foil: to prevent sticking, either spray foilwith cooking spray, or make sure the foil does not touch the cheese.Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes.Cool for 15 minutes before serving.


Stuffed Beef TenderloinIngredients

2- 3 tablespoons butter1/4 cup chopped shallots oryellow onion1 cup chopped fresh mushrooms1 (1 1/2-pound) beef tenderloinSalt and freshly ground black pepperSoy sauce, to taste

Directions

Preheat oven to 400 degrees F.In a medium skillet, melt the butter and cook the shallots or onionover lowheat until tender, about 5 minutes. Add the mushroomsand cook over lowheat about 5 minutes or until the liquid is reduced by half. Let cool.Butterfly the beef tenderloin by cutting the beef lengthwise down the centerto within 1/2-inch of the other side. Set the beef aside.To stuff the tenderloin, open the beef and sprinkle in the inside with salt andpepper and rub with soy sauce. Spoon the mushroom mixture down thecenter of the tenderloin. Bring the 2 sides of the tenderloin up and aroundthe filling to meet. Using butcher string, tie the tenderloin together at 2-inchintervals. Place the tenderloin in a roasting pan.Roast for 40 minutes for medium rare. Let stand for 10 minutes beforeslicing.Slice about 1 1/2 inches thick.

Ingredients

12 oz bittersweet chocolate¾ cup (1-1/2 sticks) unsalted butter4 eggs2 tablespoons sugarMelted butter to grease molds

Mint chocolate chip ice cream OR vanillaice cream - optionalFresh mint garnish - optionalFresh berries to garnish - optionalCrushed Heath bar pieces - optional

1. In large glass bowl, break up bittersweet chocolate. Add butter; microwave onhigh 2 minutes until melted & smooth, stirring halfway through. Stir until smooth;cool slightly.

2. In medium size bowl, whip eggs & sugar on med-high speed of electric mixeror by hand, until tripled in volume, about 6-7 minutes.

3. Fold egg mixture into chocolate & divide among 8well-buttered 6 oz ramekins or molds. Bake at350ºF 15-17 minutes or until top is just set.

4. Invert cakes onto plates; sprinkle withcrushed Heath bar pieces, serve withice cream, fresh berries and/orfresh mint.

1-3/4cups HONEY MAID GrahamCracker Crumbs1/3cup margarine or butter, melted1-1/4cups sugar, divided3pkg. (8 oz. each) PHILADELPHIA CreamCheese, softened1cup BREAKSTONE'S or KNUDSEN SourCream2 1/2tsp. vanilla3 eggs1can (21 oz.) cherry pie filling

PREHEAT oven to 350°F if using a silver 8- or 9-inch springform pan (or to 325°Fif using a dark nonstick 8- or 9-inch springform pan). Mix graham cracker crumbs,margarine and 1/4 cup of the sugar. Press firmly onto bottom and 2-1/2 inchesup side of pan; set aside.

BEAT cream cheese and the remaining 1 cup sugar inlarge bowl with electric mixer on medium speeduntil well blended. Add sour cream and vanilla;mix well. Add eggs, one at a time, beating onlow speed after each addition just until blend-ed. Pour into crust.

BAKE 1 hour to 1 hour 10 min. or until center isalmost set. Turn oven off. Open oven door slight-ly. Let cheesecake set in oven 1 hour. Removecheesecake from oven; cool completely. Refrigerate atleast 4 hours or overnight. Loosen cheesecake from rim ofpan; remove rim. Top cheesecake with pie filling just before serving. Store leftovercheesecake in refrigerator.
