The Biggest Celebration of baking and bakers in Nigeria, the Nigerian Cake Festival & Flour Craft Exhibition holding in major cities, recorded an impressive turnout as the train moved to Abuja. The festival & exhibition

is a platform to celebrate young and creative bakers for youth empowerment and enterprise development featuring a baking competition, business showcase and career development workshops.

Ten Cake makers showcased their skills at the event as retailers of cakes and other products exhibited. The event was tilted to favor Brekete Widows, a haven for less privileged widows with over 3000 members. All members of Brekete Widows will be trained by experienced bakers in the art of cake making. This is in addition to 50% of all auction sales at the event. According to the Festival Coordinator and MD/CEO of Versatili Communications Limited, Michael Salako, each training package is worth N150'000 and participants at the event, led by Ine Thelma Ako of Rainbowtouch Cakes, have signified interest to train the widows in batches as their own way of giving back to the society. Below is the detailed account of the 3-day event.

DAY 1: 5TH FEBRUARY 2015 The event kicked off with the National Anthem, after which the Festival

Organizer, Mr. Michael Salako gave the opening remarks. The Master of Ceremonies, Marku, then introduced the dignitaries and judges invited them to the high table. The special guests were: Amb. John Fasanu, Dr. Olu Usim-Wilson(Senator-hopeful FCT), Dr. Bilkisu Magoro (Member, National Conference), Dr. Shuaibu Adamu (Manager, Community Empowerment, FCT MDGs) and Nancy Nathan (Task Manager, Youth Empowerment, FCT MDGs) The Judges were introduced as Mrs. Abiola Okeji of A & B Cakes and Fruties Expression (Chief Judge), Arc. Bankole Ojo-Medubi, Alfred Atungu (Six foot+), Onwurah Ifeanyi Agility (Chairman, Actors Guild of Nigeria, Abuja Chapter) and Jeffery Bent of BENdtMARK Fashions.

Ten bakers tested their skills against each other in the baking competition that consisted of two categories: Professional and Expert. Some bakers came from outside Abuja; Delta, Jos and Sokoto. The seven bakers in the Professional category were Farida Bashar, Stella-Maris Obeta, Medu Omotejowho, Esther Oni, Olanike Kolawole, Cecilia Chukwu and Olufunmi Ajiboye; while in the Professional category: Abe Taiwo Oluwakemi, Sunmisire Olayemi and Ine Thelma Ako. While they worked on their craft, the presenters, Chinenye Ozo and Cecilia Egbele, asked them questions about their designs. The presenters also interviewed the exhibitors: Cakes and Roses, Rainbow Touch Cakes, Fletchers' Kids and Things, Halamin Herbal Products and National Blood Transfusion Service (NBTS).

Pupils of Olumawu Basic Education School presented various pastries which had been done by them; Dr. Omo, FCT Coordinator of NBTS gave a short speech on the importance of blood donation. Meanwhile, the judges went round the contestants' tables, tasting and analyzing the designs, which was based on the theme: Bake a birthday cake for a top shot in the Ministry of Agriculture. Guests also moved round the exhibition stands and bakers' tables, taking advantage of the delicious free samples. Free cupcakes were also distributed to all that attended, courtesy A & B Cakes; as well as free recharge cards to some lucky winners of “Fastest Fingers First.”

The competitors created wonderful cakes, depicting their concept of the theme. The winners of Thursday's event were as follows: Farida Bashar, third position, Olanike Kolawole, second and Medu Omotejowho won first position for the professional category, while Ine Ako came third, Sunmisire Oluyemi second and Abe Taiwo Oluwakemi snagged the top position for the expert category.

The cakes were then auctioned, with half the proceeds given to the Widows of Brekete Family and the other half to the bakers. Over a hundred thousand naira was realized from the auction.

DAY2: 6TH FEBRUARY 2015.All competing bakers returned, bright and early to begin the task for the

day: Bake a “Back to School” cake for a kid. The Judges panel, which was comprised of Abiola Okeji, Bukola Ogunsaju, co-owner of A & B Cakes and Fruties Expressions and Nosen Akele of Oven Cake Craft went round the competitors' tables to observe.

Students from Nanny Precious School, Lugbe attended as part of their learning experience. They went round the exhibition stands and enjoyed free cupcakes from A & B Cakes. Chief Judge, Abiola Okeji, drew from her years of experience in the baking industry to give a talk: How to be a top baker and stay on top. At intervals, free recharge cards for all the networks were given out in “Fastest Fingers First.”

Each competitor did their best to showcase their talent. The Judges

pronounced Esther Oni as the winner in the Professional category, with Medu Omotejowho and Farida Bashar as first runner up and second runner up respectively. Ine Ako was the winner in the Expert category while Sunmisire Oluyemi and Abe Taiwo Oluwakemi came in second and third. The event came to an end, with auction shifted to Saturday.

DAY 3: 7TH FEBRUARY 2015. The grand finale was anchored by Goldfish. The contestants' final task:

Bake a valentine cake. In attendance were representatives of FIIRO, SURE-P and MDGs.

While the bakers worked on their cakes, the FIIRO representative, Philip Stephen Pius who is the Chief Scientific Officer at the FIIRO Abuja Liaison Office, gave a talk on the importance of cassava flour in baking; Nosen Akele made a live presentation on cake decoration, Nancy Nathan presented a paper on “Empowering People” and Kris D wowed the crowd with a high energy music performance. This was followed by the premiere of the first television program dedicated to baking in Nigeria; The Baking Show. The premiere was greeted with loud cheer from the guests present, they also congratulated Versatili Communications for the innovation.

At the end of the final day, nineteen cakes were auctioned off with 50% of the proceeds going to Brekete Widows. The overall winners for the three- day baking competition were Esther Oni of Yummy Feel Cakes for the Professional Category and Ine Thelma Ako of Rainbowtouch Cakes for the Expert Category.

In October 2015, she was named the new Internat ional Chair & International Liaison of the organization. Putting together birthday parties have become a problem for some families especially sweet 16 parties for their

beaut i fu l daughters. Budgets are outrageous thereby putting them off or making them forfeit the parties. Birthday parties are very cherished moments for children as they grow up. At the end of this article it is my intention to help you achieve a successful sweet 16 bash on a shoe string budget.

When planning a sweet 16 party, it will be good if you involve the celebrant in the planning it is advisable to consider the invitations, narrow down the number. Since you are trying to reduce the number of guests and also your mode of communication is very important; you may not need to go printing invitations or cards. You can send a text, e-mail, E-IV (electronic Invitation). It is also important to inform guests not to extend the invitation to another person. In a situation where you want to use the paper invitation there are some packs of invitation you can go for from a stationery shop or supermarket. You may also ask your Princess to make her own flyers. This is opportunity to unleash her creative and you may be pleasantly surprised.

You may not have to bother about the decoration since your daughter is involved in the planning she may just need a little decoration to transform the dullest room into something colorful and festive. Get a few balloons, streamers, ribbons and crepe paper. You can always check the décor website and you will find dozens of ideas for easy fun and craft to create the party décor. Your daughter can involve her friends too. Rubbing minds makes things a lot easier by creating a more suitable atmosphere for the party and they feel very proud when they view the finished décor.

Apart from the décor we also need to consider refreshment this usually is a very important aspect of the party. Not to worry all you need to do is make it clear to the invited guests that you will not be having a sit-down dinner. You can specify what you will be serving once you are working with a tight budget you might want to consider

making the party a little later in the evening. You and your daughter can make pastries on that day before guests start arriving. Make sure everything is set ahead of schedule. These days, teenagers are not entirely crazy about food. The pastries that you have made, gives them variety of to pick from and you will avoid having leftovers at the end of the day. Dessert can be served to the guest too, just a combination of fruits, ice cream, cakes etc to make the presentation more attractive or

festive. You just have to approach a creative baker in town to bake for you or bake cakes with different layers.

While you are planning for the party you can surf the internet, search for party games or activities that can you can introduce at the party to make it more interesting and fun teenagers love to play. Tailor your key words and choices to the sweet sixteen girl's preferences.

You also have to make a good plan for music it doesn't have to be a professional Deejay providing the music. Ask your daughter and her friends for their favorite music and you will be amazed they all have it on their phones already. Another vital consideration when planning is the venue for the sweet sixteen bash. Rather than take the celebration to a hall, restaurant, amusement park or pool side and spend so much, you can invite the guest to your home.

Thoughts of how to make a photo album pops up, but that should not be a problem all you need do is purchase a picture frame (should not be bigger than a 5X7 frame). Once you've gotten the frame you can make a little graphic on a piece of decorative paper, with a simple write up that says 'Amanda's Quinceanera” and slip it into the frame. Your guests can take it home and use it for their own picture frame.

When these are taken into consideration your daughter is sure to have a remarkable and unforgettable 16th birthday.

Sweet 16 Bash on Shoe String BudgetBy Akanu Ozo

I have found truth in the saying that “You are what you eat”. Up until 2 months ago I not only weighed about 105kg, I felt uncomfortable with myself, feeling

over weight with a big tummy, big thighs, big butt, not looking smart when dressed etc and then I said to myself ogbeni (Guy) you have to do something, and what did I do? Nothing extraordinary, I just remembered the saying you are what you eat and if you want to be healthy you have to be mindful of not only what you eat but how you eat as well and I decided to give it a try so, here is my story.

What did I do exactly? I decided to live healthy. My definition of a healthy living is creating a lifestyle where you feel balanced mentally, emotionally, physically and spiritually. Healthy living definitely has its roots in creating and maintaining a healthy body to make it possible to carry out daily activities and have the energy to enjoy special occasions too.

Why a healthy lifestyle?A healthy lifestyle involves eating a balanced diet, exercising regularly and managing stress effectively. Making these healthy choices every day can affect more than your physical appearance, it can also increase both the length and quality of your life by boosting your immunity to disease and keeping you emotionally healthy.

How do you feed and live healthy?My first step in living a healthy life was to work on my eating habits and I cut out late night meals especially heavy carbohydrates: rice, eba, tuwo masara even akpu, fried yam which I sometimes ate as late as 9.00p.m. Whatever I got when I got home I ate but since I decided I was going to live healthy, I had to put an end to that habit because after eating the next thing was to slump in my bed and sleep. Since am less active at night I end up not burning the calories gotten from these meals which then are converted to body fat. Also because the digestive system slows down at night, food eaten is not fully absorbed. So I decided latest time for dinner became 7pm so my big belle (tummy) could return to its original size but as you know old habits die hard so adjusting no be beans (isn't easy) whenever I felt hungry after

7.00p.m rather than take heavy food I opted for smoothies, fibre rich fruit or even fizzy water in very small quantity i.e. less than moderate. I realize any hunger after dinner was actually just oju kokoro (craving) but after sometime I became the boss and didn't eat at all after 7pm.

Then I quit joking with my breakfast. WHY? It gives me enough energy to go through the day I made sure

my breakfast was balanced and contained all the essential food nutrients required but then I didn't take too much food like they say moderation is the key when your breakfast is so heavy you realize your day starts slowly and sluggishly. So my ideal breakfast was e.g 3 moderate balls of akara and a small bowl of pap, 2 slices of bread (toasted), one sausage, one fried egg and a cup of tea and when I wasn't taking sausage I fried 2 eggs, fried chips with shredded vegetables sauce (steamed), 2 moderate slices of boiled boiled yam with egg sauce and a glass of freshly squeezed juice. Also I started to eat lots of veggies and fruits like carrot, cucumber tomatoe, garden egg, sour sop, apple, pear, orange etc. Between meals I substituted these in place of snacks like meat-pie, doughnut or fish roll. When my eating habit changed I noticed I became sharper, stopped dozing off at meetings, had high level of energy and became more confident, even clothes that I haven't worn in years now fit easily.

I am sure you are wondering how many kilos I have lost, well don't be in a hurry, that will come but just not now. I once read an article which said “Eat breakfast like a king, lunch like a prince and dinner like a pauper” and iI decided that was going to be my guide into my transition into healthy living. Living healthy hasn't stopped me from eating what I want but just knowing how to and when to eat has helped tremendously, for instance when I have rice and vegetable soup for lunch it is going to be on a ratio of 1:3, with the vegetable 3 times more than the rice. So that way I am not totally cutting out my source of energy and instead of taking beef I go for goat meat chicken or even fish as a source of protein. Carbohydrates are important parts of our meals as they are our main source of energy. A lot of people tend to stop intake of carbohydrates to prevent gaining of weight, well extensive research has made me realize that is not the solution

Meet the Abuja Winners

INE THELMA AKO was born and raised in Port Harcourt Nigeria, a Kalabari girl from Abonnema, a wife

and a mother of four great kids. I studied Mass Communication and obtained a B.sc and later on Masters in Arts, Law and Diplomacy in the university of Science and Technology, Port Harcourt.

I worked with the Rivers State Broadcasting Corporation, Port Harcourt for 13 years as a broadcaster, a principal presentation officer as at 2009 when my family and I relocated to Abuja. I made some efforts to get back to broadcasting in Abuja but when things seems to be delaying I sought to get a skill while I wa i t , t h e n a n o p p o r t u n i t y f o r empowerment and skills acquisition was organized in my church; Family Worship Centre Abuja, I quickly registered and was part of the programme; at the end we were expected to present something we had learnt, I was asked to bake and decorate a six inches cake but as God would have it, my own cake was so badly baked it fell a really great fall, so bad I couldn't join others to present. This to me was not only a shame but a pain. I was so angry with myself coming from a home where my mother used to bake a lot for the family; really lovely cake, f rom where I picked interest in baking, having done most of the baking with her, I felt that it would just be a work over, but no, it fell a great fall.

This was what pushed me to my first cake school; Manaseh G l o b a l i n A b u j a because I thought to myself I can do this. Since then it's been a continuous job of self development, always on the Internet hours on the end, I have also attended a lot of cake conventions and workshop in Nigeria and America. I was privileged t o j o i n I C E S ( Inter nat ional Cake Explorers S o c i e t y ) a s i n t e r n a t i o n a l a n d l o c a l member in my p u r s u i t f o r excellence, a p r e s t i g i o u s world class cake o r g a n i z a t i o n which has been in existence for forty years. This has given me a platform to connect with renowned sugar artist around the world during our mind blowing conventions in America and in Nigeria where I have learn a lot. Learning for me has no end because I believe there are better ways of doing the things we do and the fact that our cake world is dynamic, I have committed to constantly fine tune my art and re-invent myself.

I found an overflowing spring of joy making every single cake especially at the beginning coming from that place of failure, my joy knew no bound. I see my clients so happy a lot of times because of my art and these too has been a great inspiration and joy to me. I'm inspired to do more now because I have thought to myself if making cakes makes me this happy, this girl wants to be happy all the time; then God stamped it with his word "Whatsoever thy hands find to do I will bless it". Am very grateful to Him as its

beginning to show now. I owe it all to God whose unconditional love continues to make me a wonder to many. Am blest to have a very supportive husband, children, sister and a great team as staff. It's been a year and five months now and by the grace of God, Rainbow Touch Cakes has been privileged to render services which also inc ludes ca ter ing s e r v i c e s t o multinationals like Total E and P, Access B a n k , S k y b a n k , government Agencies

and a countless number of individuals of great repute.

We have also commenced trainings and have given free training as a give back to society because I am passionate

about young people particularly the less privileged and I have realized that to be a cake maker you don't necessarily need to go to the university, one could learn on the job and so we are c r e a t i n g opportunities for people to work here and become who they want to be, that's the general idea of

the company. I rise up each day with so much passion in my heart to be a little better than yesterday because of my conviction that am called to show forth the excellence of my God. I am God's work in progress, yet even now I see Rainbow Touch Limited as the symbol of cakes in Nigeria; like the Rainbow up there in the sky, we have come to stay and the best is yet to come.

and she grew up in Kongo, Zaria, Kaduna s t a t e . S h e s holds a B.A. d e g r e e i n French from Ahmadu Bello U n i v e r s i t y , Z a r i a . Growing up, Esther watched her aunty Peace Odiongenyi make baked goods, however she did not bake as an adult until 2006 when she was in 100 level at the university. She watched her university roommate make pastries, and this is when the inspiration to bake was born. Although E s t h e r d i d n o t h a v e a n y measurement/recipe to work with, she began baking a cake. This cake was the first birthday cake she made, and she received glowing compliments from her friends for the cake.

In 2011 with encouragement from her l o v e l y h u s b a n d O l u s h o m o , she decided to learn some basics from a f r i e n d a n d baker Tabitha Adogbo. After the training, l o t s o f r e s e a r c h work, and constant communication with foreign bakers and pastry chefs such as Jacqui of Charly cakes Angels, she began to create her own recipes.

During her NYSC service year she decided to start a pastry business called “Yummie Feel” where she began to make cakes for different occasions and with a variety of flavors such as chocolate, red velvet etc. She has been privileged to make cakes for high profile people among them was the 54th Nigeria independence cake made for NTA Entertainment.

Yummy Feel provides more than just cakes, they make other bake goods such as banana breads, chin chin, muffins, cookies, pies, and small chops. In addition to pastries, Esther supplies pure coconut oil and pure honey straight from the farm for her customers.

What makes Yummie Feel different from other bakers is their focus of healthy offerings; their aim is to provide pastries with less fat and calories and to promote healthy pastries and cakes through their offerings.

Winning this competition has challenged Esther to aim higher, her aspiration is to have a baking segment on the Food Network . In the mean time she is happy to bring her customers healthy treats through her business Yummie Feel.
