    Tech boomZ Zegna blurs the line between function and style with ready-to-wear for generation next

    The latest state of luxury combines a collective lust for fashion and sport, and Z Zegna is leading

    the sprint with the help of a new design team

    Murray Scanlon. The brand is busy making its

    mark among upwardly mobile and tough mudder

    millennials by incorporating performance details

    into their benchmark Italian tailoring.

    In fact, high-tech moments celebrate the labels

    newly defined spirit, which was inaugurated last

    spring when the collection clearly began catering

    to urban sportos through innovations such as high-

    performance fabrics and zero-seam essentials,

    all the while keeping precision tailoring intact.

    Translation? Its a little bit Nike and a whole lot of

    Italian soul.

    Enter this falls Icon Warmer Jacket, equipped

    with a heat-generating panel powered up by a

    wireless charging system. Its heating support,

    which lasts up to 13 hours, can be activated

    according to your needs, whether youre braving

    a brisk fall breeze or sub-zero winds. Slim-fit and

    tailored, it redefines the utility jacket for globe-

    trotting iron men who require a friendly carry-on

    alternative to their bulky down parka. Also on deck

    are knits in Techmerino merino wool with quick-

    dry mechanics so theres no need to sweat a mad

    dash to the office mezzanine.

    While techno-savvy details elevate Z Zegnas

    latest collection, what also stands out is the ease

    with which it combines tailoring and an off-duty

    sensibility to create a wardrobe apropos for

    success. For example, a baseball bomber worn

    over a single-breasted pinstriped suit wears well

    from nine-to-five in a conservative tonal grey

    palette. Continuing the theme of a seriously no-

    sweat attitude, a felted patchwork blazer gets an

    update with wool pants finished with a knit cuff.

    Other well-executed styles play with contrasting

    textures, like a hooded nylon shell layered with

    a traditional camel wool topper or an indigo

    herringbone vest paired with a cornflower-blue

    down jacket. Committed to active wear as ready-

    to-wear momentum are tone-on-tone lace-up

    boots in subtle shades, such as charcoal and khaki,

    which finish the collections look while making it so

    much easier to parkour to your pod.

    Weekend warriorsLuxury outdoor-apparel company Canada Goose is marching to a fresh new look

    The name Canada Goose has become as ubiquitous to the Canadian identity

    as our bone-chilling winters. Walk any

    street in any snowy month and youll

    likely encounter en masse the companys

    signature red, blue or white parkas with

    fur-trimmed hoodies.

    The coats are toasty-warm, so much

    so that the brand itself touts them to be

    the warmest on the planet. A lofty claim

    perhaps, but its hard to argue when context

    is provided. EnterHutterite down.

    Considered the most premium Canadian

    down available, it is the DNA of the jacket

    because it retains more warm air than competitors

    (and knock-offs), which, in turn, equals more

    insulation. The coyote-fur hoods an iconic symbol

    of the companys style never freeze or hold water,

    helping to create a protective windbreak.

    Scientists in the Antarctic are devoted to the

    brand, having worn its Expedition Parkas for the

    past 30 years, and so do many other extreme-

    weather enthusiasts.

    Champion Iditarod sled-dog racer Lance

    Mackey trekked 1,200 kilometers across the

    Alaskan wilderness as the brands ambassador,

    as did mountaineer Laurie Skreslet, the first-ever

    Canadian to summit Mt. Everest in his custom

    Summit Pink parka.

    The Goose People have spoken and, simply

    put, the brand has earned its right to brag.

    Practicality aside, Canada Goose is also reaching

    out to consumers who may prefer exploring their

    urban neighbourhoods.

    The company has designed product lines that

    marry functionality with an urban-chic aesthetic.

    Eschewing familiar, traditional materials, its fall/

    winter 2015 collection of new parkas is decidedly

    more fashion-forward.

    It introduces quilted lightweight down with the

    debut of its exterior-quilted design line, which

    still features the proprietary super-lightweight

    nylon fabric.

    The Macmillan Parka for men is fur-free and

    features a high collar and adjustable hood, while

    the Carson Parka is a longer style deemed perfect

    for urban exploration or commuting to work.

    For women, the Chelsea Parka is a slightly

    shorter style offered in an earthy Bordeaux colour,

    and the Heatherton Parka is hoodless, which is

    well suited for that girl-about-town look.

    Also new is the Canada Goose Camo available

    in Classic, Whiteout and Whiteout Lite, inspired

    by the snow leopard and marking the brands first

    foray into print for its adult collections.

    In 2013 the company sold a majority stake to

    U.S. private equity giant Bain Capital in a move

    that will allow it to push into new territory and on

    the backs of many more consumers.

    The brand is mum on the markets it plans to

    move to next, but really, once youve been to

    Antarctica, what could possibly stand in your way?

    When Garrett Rank walked off with the Ontario Mid-Amateur Championship at Westmount Golf

    and Country Club in June, it was simply the latest

    noteworthy victory at a club that has long been a

    focus of golf in Canada.

    Westmount is, all at once, historic, classic,

    brilliant and incredibly fun. Rarely do golf clubs

    have all those elements, but thats the case with

    Westmount, which has long been heralded as one

    of the best courses anywhere in the world.

    This is one of the finest courses Ive ever

    played, said former Masters champion Doug

    Ford when he battled for the Canadian Open at

    Westmount in 1957. More recently, Canadian Golf

    Hall of Fame journalist Lorne Rubenstein wrote in

    The Globe and Mail that the course is superb.

    And the good keeps getting better. Recently

    Westmount underwent a significant renovation

    to its clubhouse, modernizing elements while

    remaining true to its connection to the course.

    The makeover was done by Gary Nicholls, a

    London, Ont.,-based golf architect who started in

    the business at the prestigious Redtail Golf Course

    in Port Stanley and has worked on numerous top

    private clubhouses in recent years. He utilized the

    key elements of Westmounts building vaulted

    ceilings and a patio that overlooks the 18th green

    and modernized them. The result, when the

    clubhouse reopened in July, is stunning.

    Part of Westmounts intent was to continue

    elevating its course and amenities. Bunkers were

    rebuilt on the course, and new family-friendly

    undertakings, like movie nights on the driving

    range, are all part of the club now, says Brad

    Duench, Westmounts general manager.

    members were added in recent months, especially

    in new categories aimed at members under 45

    years of age. The club has a deep connection to

    the community of Kitchener-Waterloo.

    The course is the element the club is based on.

    Designed by the legendary Stanley Thompson,

    known as the dean of Canadian golf architects,

    it meanders over remarkable land, with fairways

    cutting through massive trees to greens protected

    by flashed-sand bunkers.

    Westmount is one of the worlds top 1000

    golf courses in the Rolex guide; ranks No. 12 in

    Canada, according to SCOREGolf magazine; and is

    listed by Golfweek as No. 8 among classic courses

    in the country.

    It still remains one of the best tests of golf in

    the country, says noted golf architect Ian Andrew

    on Golfclubatlas.com. Westmounts strength is the

    wonderful collection of par-fours; some, like the

    15th, are truly exceptional.

    But the truth is that Westmount is also

    exceptionally playable and incredibly fun. Golfers

    may face decisions on its canted fairways, but one

    isnt going to lose a lot of golf balls at Westmount,

    which is also a delightful walk.

    Curling, tennis and other activities are also part

    of Westmount, which has a popular junior golf

    From grilled cheese sangies to sous-vide salmon, Relish Cooking Studio can teach you how to cook like Gordon Ramsey (well, almost)

    When it comes to cooking, it seems there really is a difference between the sexes, but it might not be

    what you think.

    In fact, there are a few things women can learn

    from men in the kitchen.

    According to Donna-Marie Pye, co-owner of

    Relish Cooking Studio in Uptown Waterloo, women

    tend to approach cooking as an obligation, while

    men tend to be more invested in the experience.

    Men will take time to enjoy the chopping, the

    sauting, the grilling. That approach can make

    the whole experience more enjoyable, turning an

    obligatory chore into something more akin to a

    daily highlight.

    Men are very specific about what it is they

    like, says Pye, a home economist and cookbook

    author. We run bread-making classes and weve

    had a lot of men come because they really get into

    something singular. They really want to know how

    to do something, and do it well.

    Of course, there are men whose expertise doesnt

    extend beyond bacon and eggs, just as there are

    women who cant stand the sight of a strainer and

    WANT TO COOK

    dont know what to do with a paring knife.

    All of us gourmands and grouches face the

    same problem, though: we have to eat. And for

    almost all of us, that means we also have to cook.

    Thats why Pye started Relish with co-founder

    Maria Burjoski in 2010.

    Pye came from a professional food background,

    having worked as a home economist, recipe

    writer and tester, and food marketer. Burjoski

    was a businesswoman whose Sicilian roots had

    her helping with the family food business from

    childhood.

    Together, they wanted to make a special,

    homelike place where people could learn

    everything, from the basics to high cuisine.

    Alongside it, theyd sell the elements of a quality

    kitchen, specializing in higher-end investment

    pieces and superior ingredients.

    Today, the open-concept kitchen at the heart of

    their cooking studio on Regina Street hums with

    activity most nights of the week. From basic knife

    skills to youth summer camps, barbecue-and-beer

    nights to world cuisines, the small classes cover

    pretty much everything a home chef and even

    some professionals would like to know.

    For Pye, the couples classes can be the most

    illuminating. Usually we have one whos a bit

    more nervous, and the other is more confident,

    she says.

    Taking a few moments to learn basic skills, like

    knife-handling, seasoning and flavouring, can make

    all the difference, as can having the right tools.

    Thats where a few premium investment pieces

    are worth it, she says. Strolling through the store,

    Pye points out her top recommendations: a good

    knife, a saut pan, a Dutch oven and a tapered

    wooden spoon. Throw in some Maldon salt, vanilla-

    bean paste and a microplane zester, and even the

    least adventurous cook is ready to go.

    Dont expect to find powered gadgets to

    clutter your counter here. Almost everything

    at Relish is human-powered and hands-on, and

    thats the point.

    For some things, like bread-making and pasta-

    making, its all about the feel, Pye says. You just

    have to get into it.

    After 30 years, the reimagining of Janet Lynns Bistro keeps late chefs legacy alive

    When the original Janet Lynns Bistro opened in a quaint white house in Kitcheners Market

    Village, Rubiks Cube was all the rage, David

    Letterman had just launched his first Top Ten

    List, and Michael J. Fox was going Back to the

    Future at the movie theatres.

    Without the aid of a time-travelling DeLorean,

    owners Kevin Wong and his wife, the chef Janet

    Lynn Leslie, could never have imagined back then

    that, 30 years later, the restaurant they created

    would still be considered one of the best places to

    eat in Ontarios Tri-Cities.

    So popular was the restaurant throughout the

    80s that, by 1991, it had outgrown its Village

    location and moved to Uptown Waterloo to a larger

    space with a more substantial kitchen for Leslie

    and her staff to work in, and a grander dining room

    complete with tall columns, life-sized paintings

    and cozy banquettes for Wong to entertain in. The

    move attracted new clientele while keeping regulars

    happy with classic dishes like calfs liver with rsti

    and duck confit with honey-braised red cabbage.

    For more than a dozen years, the restaurant ran

    like clockwork, playing host to a second generation

    of families and guests who celebrated weddings,

    marked milestone birthdays, fell in love and got

    engaged. Tragically, in 2004, Janet Lynn Leslie,

    the celebrated, award-winning chef who led the

    kitchen from the beginning, suddenly died of

    cancer at the age of 47.

    That might have spelled the end for many

    restaurants, but Kevin Wong was determined to

    carry on her legacy. Fortunately, he didnt have to

    look far to find a talented chef who could maintain

    the high standards his wife had set. Nelson Zepeda

    had worked closely in the kitchen with Leslie at

    the bistro for a dozen years hes one of several

    employees who are now well into their second

    decade and took over the stoves after her passing.

    For the next six years, Zepeda ensured that

    the kitchen ran smoothly, eventually adding his

    own twist to dishes. In 2010 Wong contemplated

    a major renovation to keep up with the changes in

    the kitchen. Around the same time, the building

    where the restaurant was located was sold,

    and the new owners, capitalizing on how the

    neighbourhood around the restaurant had evolved,

    were looking to increase the rent dramatically.

    Wong briefly considered closing the restaurant

    but did not. As he told a reporter at the time: I

    felt if I closed that Id be letting down our many

    patrons who had supported Janet Lynns for so

    many years.

    In 2012 he opened in the Belmont Village

    shopping district as JLB-1985, so-named in honour

    of the original restaurant and paying homage

    to its history while hinting at the new, updated

    direction it would take. Gone were the columns and

    decorative wall murals, and in their place a bright,

    modern warehouse-style space with exposed

    ceilings and brick walls welcomed a new generation

    of customers. The open kitchen, complete with bar

    seating, is a focal point that shines a spotlight on

    what has always been the heart of the restaurant.

    A small patio accessed by French doors allows

    for alfresco dining, and theres a dining room

    downstairs available for private events.

    The duck confit is still served, alongside a

    more casual JLB burger. Asian-influenced dishes,

    like ginger-chili pork and shrimp dumplings and

    Thai curry shrimp, share the menu with classic

    bistro offerings rack of lamb, smoked salmon

    and chocolate mousse. Today a new generation of

    customers is discovering JLB-1985, and after 30

    years, the restaurant is just getting started.

    Shaving years off By shaving, men are exfoliating the lower part of their face, says Dr.

    Cohen, which helps to have an anti-aging effect.

    To avoid irritation, he recommends heating up

    the beard, shaving with the grain and avoiding an

    extra-close shave.

    Using high-quality products also helps protect

    skin. Taylor of Old Bond Street, founded in

    According to a survey from the U.S. public

    health institute Centers for Disease Control and

    Prevention, men fail in this regard. Less than 15

    per cent of men use sunscreen as recommended,

    says Toronto dermatologist Dr. Paul Cohen, citing

    the report.

    He suggests making sunscreen a part of grooming.

    Use it as an after-shave: shave your face and

    cover it with sunscreen, says Dr. Cohen. Youre

    getting sun damage all year, and UVA can be

    pervasive not the kind of UV that burns but the

    one that ages and can cause skin cancer.

    But remaining vibrant-looking while grey isnt easy.

    Fortunately, theres middle ground. Colour

    camouflage is a salon service pioneered by

    Camouflage rinses out after four to six weeks,

    says Caleb ODonovan, head of education at

    Torontos Mankind Grooming Studio for Men,

    so it doesnt leave any colour band, any tell-tale

    At-home colour kits are cheaper Mankind

    charges $25 for camouflaging but can be tricky

    to apply and look unnatural. With a lot of guys,

    theres a stigma around dyeing their hair or

    beards, says ODonovan. So if you left the office

    on Friday with a head of grey hair and you come

    in with black or brown hair on Monday, you might

    catch a bit of stick over it.

    Brighten up Long in the tooth refers to getting older, but its often the darkness of teeth that

    betrays age. Dr. Bruno Paliani, a cosmetic dentist

    in London, Ont., advises whitening teeth that

    have yellowed with age by absorbing organic

    compounds in staining foods and drinks.

    When people whiten, they see themselves look

    younger because thats what their teeth looked like

    when they were younger, says Dr. Paliani.

    In-office professional treatments usually involve

    applying a barrier around gums and then a high

    concentration of bleaching solution to teeth,

    activated with a blue light. Dr. Palianis offering,

    Rapid Teeth Whitening, is available in 15-minute to

    one-hour sessions that may need to be repeated.

    Typically more affordable is dentist-supervised

    take-home whitening, in which custom-made trays

    and teeth-whitening solution are used for two to

    eight weeks.

    Specialty beers are outpacing the usual suspects, as consumers expand their horizons and develop a more adventurous palate

    Remember when a beer was just a beer?Well, file that stubby in your memory bank

    and welcome to the world of craft beer. Now,

    you dont just drink craft beer, you experience

    it through a tasting at a nice pub or at a

    microbrewery. And few places are better for

    sampling different craft beers than the area

    stretching from Waterloo and Wellington down to

    London and into southwestern Ontario.

    Beer tasting is a full sensory experience. You

    dont pound back the beer; you savour it, absorbing

    its aroma and applying adjectives like nutty or

    smoky, and enjoying its notes, which can be

    flowery or spicy or, really, just about anything.

    Its easy to visit southwestern Ontarios craft

    microbreweries and sample these artisanal brews

    at a number of specialty brewpubs. Start with the

    market in St. Jacobs. Already well known for its

    fabulous farm-fresh food, its now also the location

    of Block Three Brewing Company, started by four

    buddies who founded their own beer-tasting club

    Were a brewer and three accountants, says

    Graham Spence, one of the co-owners (and one

    of the three accountants). He and brewer Bryan

    Maher and fellow number crunchers Philip Hipkiss

    and Derek Lebert opened Block Three in 2013.

    We wanted to try something new that had

    flavour and didnt taste like everything else,

    Spence says. When we finished school and moved

    back to Waterloo, there werent too many craft

    brewers. So we got together and went for it.

    Block Threes signature King Street Saison is a

    light, crisp Belgian ale, produced from a yeast that

    delivers notes of cloves and citrus.

    The Waterloo area, home to Oktoberfest, has

    long been hospitable for craft brewing. At one time,

    the region had nearly 300 independent breweries.

    Through the 20th century, they were gradually

    supplanted by large mechanized brewers, but by

    the 1980s a micro-renaissance began. Then in 1984,

    craft brewing was revitalized with the opening of

    Brick Brewing Company, which now has facilities in

    both Kitchener and Waterloo.

    Beer tasting is a full sensory experience. You dont pound back the beer; you savour it, absorbing its aroma and enjoying its notes.

    There are craft brewers in at least 50

    communities in the province. [Craft brewing

    is] growing so fast that we cant keep up, says

    John Hay, president of the Toronto-based trade

    association Ontario Craft Brewers. Our objective

    is to have a craft brewer in every town and city

    in Ontario.

    Theyre getting there. Down in St. Thomas, Paul

    Corriveau, vice-president of sales and marketing

    for Railway City Brewing Company, sounds off

    a long list of upscale pubs and restaurants in

    the London area that serve the eight-year-old

    brewerys signature ales. Railway City brews a

    copper and amber beer called Iron Spike Blonde

    and an ale called Dead Elephant, named after the

    famous circus performer Jumbo, who was killed by

    a train in St. Thomas in 1885.

    Its easy to organize your own beer-tasting tour

    of the Waterloo and London areas, notes Hay, and

    you can now sample hundreds of different beers.

    There are beers for nearly all tastes and

    palates, he says. Thats what happens when you

    have such a variety.

    Mercedes-Benz Canada describes the GLA

    as a cross between a stylish coupe and a

    compact SUV, noting that its dual-hood

    power domes, signature front headlamps

    and twin-louvre grill are intended to project

    an aura of self-assured athleticism. Its sort

    of like the high-school quarterback minus the

    annoying cockiness.

    The GLA comes in two versions: the basic

    250, offering 208 HP and 258 pound-feet of

    torque, and the exponentially more powerful

    45 AMG, featuring the most powerful series-

    production four-cylinder engine in the world.

    The 45 AMGs 2.0L turbocharged engine

    offers 355 HP and takes you from 0 to 100

    Retired space walker Chris Hadfield returns to his launch pad as an adjunct professor at the University of Waterloo

    To the moonand back

    Since gaining worldwide fame for sharing his space time through social media, Commander Chris Hadfield has set his astronaut suit aside for life in academia. The first Canadian to walk in space in 2011, he blasted into further notoriety in 2013 on YouTube, when he sang David Bowies Space Oddity sitting in a tin can at the International Space Station. He has since retired and is now an adjunct professor at a place he used to call home the University of Waterloo.

    What does Waterloo and the K-W-C area mean to you?My family is from the Galt area, now part of

    Cambridge. My brother was born there. When I

    was a masters student and doing post-graduate

    research at the University of Waterloo, my wife,

    Helene, was working on King Street for Mutual

    Life, so we bought a house right where Mutual Life

    used to be. We also got married in Waterloo.

    Where were some of your favourite places to spend free time while in the area? We really liked the Mennonite country that

    surrounds Waterloo. Wed get in our little old

    Volkswagen and drive around town and go up to

    St. Jacobs. Coming out of school, Helene and I had

    no money, so our adventures were going to auction

    houses to furnish our home.

    How did the opportunity come about to become an adjunct professor for the University of Waterloo?David Johnston [Governor General of Canada]

    was President of the university at the time they

    were getting ready to launch the aviation program,

    and he asked me if it was something I would ever

    consider. I was an active astronaut at the time, so

    it got put on the back burner. But after I talked

    with some colleagues, family and friends about it,

    it just made sense.

    So how does it typically work?I give guest lectures and Im on staff and assist,

    given my unique experiences.

    Have you always sported a moustache? Since Alex Trebek lost his, yours could be most recognizable Canadian moustache.I have, actually. I know there are Twitter sites

    dedicated to it, but Ive sported it ever since I was

    18 years old.

    When did you know you wanted to become an astronaut?I decided I wanted to be an astronaut on the same

    day they walked on the moon. It sounds trite, but

    its true. I was nine or ten, and I decided that was

    the most interesting human endeavour going on

    and tested the very best of people. I just wanted to

    be a part of that.
