Motivations

Life is short. Live passionately.

Good Questions

A Grandfather was digging potatoes along with his grandson. After several hours of hard work, the little fellow looked up into his grandfather’s face and asked “why did you bury all these things in here?”

A Better Offer

Some friends of mine took their 5 - year old grandson, Christopher, to church one Sunday. Being a member of the choir, Bettie went and took her places with the choir while Christopher and his grandpa sat in the congregation. During the services, Bettie motioned several times to Christopher to poke Grandpa and keep him awake, but there was no response from him. After church, Bettie asked Christopher why he didn’t do what she had asked - especially since she had given him $0.50 Said Christopher: “Grandpa gave me $1.00 to let him sleep.”

Food Safety Tips For Heal thy

Hol idays

Parties, family dinners, and other gatherings where food is served are all part of the holiday cheer. But the merriment can

change to misery if food makes you or others ill. The good news is that practicing four basic food safety measures can help

prevent foodborne illness. 1. Clean: Wash hands with warm water and soap for 20 seconds before and after handling any

food. Wash food-contact surfaces with hot, soapy water after preparing each food item Rinse fruits and vegetables thor-

oughly under cool running water and use a produce brush to remove surface dirt. 2. Separate: Keep raw eggs, meat, poul-

try, seafood, away from foods that won't be cooked. Take this precaution while shopping in the store, when storing in the

refrigerator at home, and while preparing meals. Consider using one cutting board only for foods that will be cooked (such

as raw meat, poultry, and seafood) and another one for those that will not (such as raw fruits and vegetables). Keep fruits

and vegetables that will be eaten raw separate from other foods such as raw meat, poultry or seafood—and from kitchen

utensils used for those products. 3. Cook: Use a food thermometer to make sure meat, poultry, and fish are cooked to a

safe internal temperature. To check a turkey for safety, insert a food thermometer into the innermost part of the thigh and

wing and the thickest part of the breast. The turkey is safe when the temperature reaches 165ºF. If the turkey is stuffed, the

temperature of the stuffing should be 165ºF. Bring sauces, soups, and gravies to a rolling boil when reheating. Cook eggs

until the yolk and white are firm. When making your own eggnog or other recipe calling for raw eggs, use pasteurized shell

eggs, liquid or frozen pasteurized egg products, or powdered egg whites. Don't eat uncooked cookie dough, which may

contain raw eggs. 4. Chill: Refrigerate leftovers and takeout foods—and any type of food that should be refrigerated—

within two hours. That includes pumpkin pie! Set your refrigerator at or below 40ºF and the freezer at 0ºF. Check both peri-

odically with an appliance thermometer. Never defrost food at room temperature. Food can be defrosted safely in the re-

frigerator, under cold running water, or in the microwave. Food thawed in cold water or in the microwave should be cooked

immediately. Allow the correct amount of time to properly thaw food. For example, a 20-pound turkey needs four to five

days to thaw completely when thawed in the refrigerator. Don't taste food that looks or smells questionable. “When in

doubt, throw it out." Leftovers should be used within three to four days.

Use care with stuffing

Whether it is cooked inside or outside the bird, all stuffing and dressing must be cooked to a minimum temperature of

165ºF. For optimum safety, cooking your stuffing in a casserole dish is recommended.

Stuffing should be prepared and stuffed into the turkey immediately before it's placed in the oven.

Mix wet and dry ingredients for the stuffing separately and combine just before using.

The turkey should be stuffed loosely, about 3/4 cup stuffing per pound of turkey.

Any extra stuffing should be baked in a greased casserole dish.

Senior Spotlight

Tony Schrier—Senior Center Member

I was born in 1944, the last winter of World War II in the Netherlands. We spent that winter hungry since the Germans keep all the food for themselves. In 1950, my Dad was trying to improve his work situation and looked for opportunities elsewhere since work was hard to come by and he had lost his business. He ended up working for the US Corp of Engineers in Maroc, which at that time was a French colony. Finally in 1951, the de-cision was made for Mom, my brother and I go to Maroc. In 1958, the US military was starting to pull out of Maroc and my parents had to make a decision on where to go. Several friends of theirs over the years had been encouraging them to go the USA. The decision was made to do that and the family applied for visas and moved to the USA in 1959. The destination was Las Vegas, Nevada. I was enrolled in Gorman high school even though I never graduated from grade school. I was quite concerned that I would not cope well with High School, but that proved to be of no concern. When registering for school I was informed that I had to take a foreign language. I

responded that English is a foreign language, but that was not an option. At that time Dutch was my native language and French, Arabic and English were secondary. The decision during my senior year is what next? The idea of becoming an attorney was still strong so I chose a college that also had a law school. Somehow I decided that I would continue with the Catholic schooling and that left me with two schools to consider both Jesuit Universities. The University of San Francisco ended up being my first choice. When I left school the US government decided that I should go into the US Army in 1965. During that period I managed to go to Fort Polk, LA, then Fort Bliss, TX, followed by Vietnam and for closing Germany. Upon return to the US in 1970, I started my career in the Banking/Finance where I met Anne, who worked for the company attorney. That relationship ended up in a wedding on November 27th 1971. After 27 years of being a bachelor, I was married to Anne and had an immediate family of four, Anne had 2 children from her prior marriage. That career ended up taking the family to Utah, Colorado, Texas, Minnesota, Illinois and Pennsylvania. From there we retired to Bayfield in 1969 and had our retirement home built. But in 2000 I was given an offer to go back to work in Texas which lasted till 2008 when I retired for good. Then I got involved with the Pine River Valley Historical Society and the American Legion post to occupy my time when I am not doing something with my stamp collections. Life has not been dull!
