    HELLO! Welcome to the fifth annual seed catalog from The Maine Potato Lady. In more thanfifteen years work with seed potatoes, I have become known to many of you as The Potato Lady,helping you to select the right varieties for your garden, and offering growing hints drawn from myown experience as a successful organic farmer. In this catalog, I am pleased to offer you certified seedpotatoes, onion sets, French and Dutch shallots, potato onions, cover crops, soil inoculants, fertil-izers, and fall-planted garlic. I know youll love the wide variety of potatoes featured here, includingfingerlings, blue- and yellow-fleshed tubers, and heirloom potatoes. I have grown and eaten andenjoyed! just about all t he varieties I offer. They all p roduce beautifully, theyre available in manycolors and shapes, and theyre delectable to the taste truly a feast for the eye and palate.

    About UsLocated in the foothills of Maine, the LaCourse FamilyFarm, home of The Maine Potato Lady, has been inoperation for more than 20 years. Our 100-acre piecewas once part of a 560-acre farm that dates back tothe 1600s.

    Our custom-designed and hand-built log home crownsour hill-top farm. We gathered stones from field edgesand milled our own lumber to finish the building,which has sheltered our family for many years. We arepleased to live off the grid, with a solar system to provide electricity.

    Our south-facing fields are rich with fertile, well-drained silt loam. Our sugar bush produces fabulousmaple syrup, and our cedar bog is a special habitat with sphagnum moss and rare pitcher plants. Weare privileged to work and live in this rural environment, where deer, moose, turkey, ravens, eagles,and a variety of beautiful trees, plants, and birds are all around us.

    We are primarily seed growers raising garlic, shallots, andpotato onions. We have produced all our own vegetablesfor many years. Our children are involved in the planning,the everyday work, the decisions, and the rewards. Theywere raised knowing and recognizing not just the typesof vegetables, but even the different varieties of what wegrow. They are an integral part of this farm; their participa-tion makes it all possible, and brings joy to all we do.

    About Our Certified SeedMany of you have asked for sweet potatoes, andwe are pleased to offer sweet potato slips grownby our neighbor, a young farmer in Parkman,Maine, just on the next ridge from our farm.These plants are sustainably grown on a farmthat has been in the same family for four genera-tions. We have chosen two varieties that you willenjoy eating with your family over the holidays.

    We ship sweet potato slips on four dates in May(check one on order form). Handling and grow-ing instructions are included with each order andcan also be downloaded from our website.

    The sweet potato (Ipomoea batatas), a viningplant related to morning glories, is a differentplant species than the familiar Irish or whitepotato (Solanum tuberosum). The edible part ofthe sweet potato is a swollen portion of the root,which forms in the hill of soil. By contrast, whiteor Irish potatoes produce tubers on the ends ofstolons, or shoots, which form above the seedpiece in a hill of soil. (True yams (Dioscorea spp.)

    are native to Africa and not grown in this country.)Sweet potatoes require 90-150 frost-free days tomature. Northern growers can be successful withsweet potatoes by using black plastic to warm thesoil and row cover to prolong the growing season.

    Fingerling PotatoesShaped like fingers, hence their name. Prized for their interesting colors and exquisite flavors, they are inhigh demand with chefs and market farmers. They are prolific producers and fairly resistant to disease.

    BANANA Probably the best known of thefingerlings. Tan skin with dark yellow flesh.Matures earlier than most fingerlings with respect-able yields of 2-3 tubers at 75 days. Steamedand tossed with butter and parsley, these makea tasty late-summer dish. Resistant to scab, but

    FRENCH FINGERLING Though plumper thanmost, this potato (also known as Nosebag) is stillconsidered a fingerling.     COBBLER Many years ago on a summer evewhile visiting one of our family seed potato grow-ers, we were served freshly-dug Cobblers, golf

    ball size, boiled and tossed with butter, salt, andparsley. Oh, scrumptious! The potatoes were goodand so was the company, making for a memorablemeal. A selection from Early Rose believed to havebeen discovered by an Irish shoemaker in the late1800s, Cobbler has round, buff-skinned tubers withwhite flesh thats a little mealy, perfect for soak-ing up that butter. Early maturing and exceptionaleating qualities keep this variety in the seed trade.

    Scalloped PotatoesHeres what I call a pantry dish one that is easily assembled from ingredients I alwayshave on hand. This is wonderful on a cold winter night, as a side dish to baked ham, venisonsteaks, or roast pork. Add a green salad or steamed broccoli for a beautifully balanced meal.

    3 cups thinly sliced potatoes tsp paprika(peeled if desired) Try Kerr's Pink, tsp dried mustardRose Gold or Yellow Finn 3-4 tbs unbleached our

    1 cups warm milk or cream 3-6 tbs butter1 tsp salt

    Set a large pot of salted water to boil. Preheat oven to 350F. Lightly grease a 10 casserole dish thatis at least 3 deep. Parboil the potatoes; cook about 8 minutes until the potatoes are just tender.Drain the potatoes thoroughly. Combine the milk or cream, salt, paprika, and mustard. Layer thepotatoes into the dish, sprinkling each layer with our and bits of butter. Pour the seasoned milkover the potatoes, pressing them down very gently. Bake uncovered 35-45 minutes, until it islightly browned and the potatoes are very tender. Do not overcook. Serves 6-8.

    This dish can be varied by adding bits of savory foods in between the potato layers. Try crumblesof crisp bacon, nely chopped onions or leeks, well-drained corn kernels, or nely diced hamor chicken. Leftovers reheat well; use a very gentle heat.

    Cover Crops & Green ManuresWe incorporate cover crops and green manures

    into our farm plan and rotations to build beneficial

    levels of organic matter and humus in our soil.

    Green manure or plow down crops can add sub-

    stantial amounts of enriching biomass or organic

    matter to the soil. Legumes provide essential nitro-

    gen. As this matter feeds the soil organisms, they

    in turn break down the organic matter and release

    a wealth of nutrients to feed the next crop. Cover

    crops protect against erosion, holding together all

    that precious topsoil that we have worked hard

    to build up. Here is a selection of the basic greenmanure crops that we use.

    BUCKWHEAT With its wide, heart-shaped leavesand rapid growth, buckwheat is the best greenmanure crop for weed suppression. Buckwheat isalso widely used for building worn-out soils, asit accumulates phosphorous, potassium, calcium,and nitrogen, making all these nutrients availableto the next crop. Its fibrous root system improvessoil aeration and friability, encouraging earthwormactivity. Plant after danger of frost, then work intothe soil at 6-8 weeks before the flowers set seed.Or plant as a late summer or fall cover crop 40-60

    Managing Fusarium Dry Rot in PotatoesThe Fusarium fungi (F. sambucinum and solani)cause dry rot and seed-piece decay in potatoes duringstorage and in the field. Fusarium is usually manifestedin a dry rot characterized by sunken, wrinkled, brownto black lesions. The tissues can be crusty and canexhibit different colored molds. Once the piece isweakened by fusarium, wet rots caused by soft rotbacteria usually follow. Fusarium, which is presentnearly everywhere in our environment, gains entrance

    into the tuber through wounds or injuries sustainedduring harvesting, handling, and cutting operationsprior to planting. If infections are left unchecked, theywill cause the tubers to rot slowly during storage, orwill cause seed piece decay after planting, resulting ina poor stand and lost yields. The growth of fusariumis inhibited below 40F, but temperatures greater than50F allow growth, with growth being more rapid atwarmer temperatures. Some varieties are much moresusceptible to fusarium than others (Yukon Gold,Purple Majesty, and Mountain Rose, for example).

    Dry rot can be difficult to identify, as the decay isusually internal rather than on the surface of the piece.Dry rot is often caused by bruising during harvest.Seed lots are allowed 2% dry rot at shipping time;

    grading may be required to meet this tolerance.Susceptibility to dry rot increases during storage,making the risk greatest at planting time. Because thefresh cut surface of cut seed is an ideal entry site forthe fusarium fungi, it is always best to cut and plant inone operation. Prolonged holding of pre-cut seed underimproper conditions is risky and can cause severe dryrot or seed-piece decay of the cut seed.

    Because fusarium is present in most soils, it isimpossible to eliminate it entirely from any growingoperation. Follow these guidelines to minimize therisk in your own crops.

    INSPECT your seed as soon as it arrives. As soon asyou receive your order, open the package immediatelyand inspect each seed piece in each bag. Openthe bags to encourage air flow and to remove anypotatoes that show signs of fusarium. If some pieceshave small spots of dry rot, you can cut these off andplant the healthy pieces.

    REPORT any problems to us immediately. We maybe able send a replacement right away and advise youon proper storage and handling.

    STORE the seed properly. If your planting date ismore than a few weeks away from the time youreceive the seed, you may choose to greensproutyour seed (refer to the growing instructions includedin your order) or store it in a cool place (below 50Fbut above freezing).

    WARM your seed gradually, by positioning it inindirect light at 55F-60F for two weeks beforeplanting. This step will condition the seed potato so asto minimize bruising.

    PLANT the seed in well-aerated, moist soil. Inspectthe seed before planting, removing or trimmingpieces that show signs of infection. Be sure that thesoil is between 50F-60F, which is the optimumtemperature to encourage wound healing and tominimize decay. Any time you plant in conditionsoutside this range, you risk fusariam infection andseed piece decay, which can occur whether the fungusis in the seed piece or already present in your soil.

    REMEMBER that once you receive, inspect, andaccept your seed and deem it healthy, any lateroccurrence of seed piece decay is probably dueto post-receipt storage, handling and preparation,growing conditions, pre-existing fusarium in the soil,and/or the susceptibility of the variety.

    Certified Potato Seed A rigorous certification and inspec-tion process (distinct from organic certification) ensures thatseed potato meets standards for freedom from diseases orpests. All the potato seed sold by The Maine Potato Lady iscertified by the state in which it is grown. Our products mustalso meet the certification requirements of the State of MaineDepartment of Agriculture. During the growing season, each lotis field inspected three times for specific pests and diseases.A 400-tuber sample, taken at harvest time, is grown out inFlorida during the winter, then visually inspected for viruses andfor variety purity. In order to be designated as Certified Seed,the sample must show 5% or less total virus. Certification is notcomplete until the winter grow-out inspection has been final-ized (usually at the end of January). Certification representsonly that the seed potatoes were inspected and certified inaccordance with the state regulations.

    Organic or Certified Organic Both of these terms referonly to products that have been produced on a farm that meetsthe standards established by the National Organic Program ofthe U.S. Department of Agriculture. The farm must complywith USDA/NOP regulations and pass an inspection by anapproved accredited certifying agency. Production practicesmust enhance the health of the farm. No synthetic inputsare allowed.

    Conventional In conventional agriculture, synthetic inputs(fertilizers, insecticides, fungicides, and herbicides) are usedto produce the highest yields and maximize profits. Thereare good conventional growers who use crop rotation andintegrated pest management to minimize their use of syn-thetic inputs. The Maine Potato Lady offers products from somecarefully-selected conventional growers.
