Welcome to campusNYC & campusBrynMawr!Our program is a high-end first-class culinary arts program for students who are serious about learning culinary arts. Our program is designed for students who are serious about cooking and creating epic food masterpieces. We provide an absolutely first-class, top-notch culinary program to students from around the world. But our program is not limited to the kitchen. In each location we utilize the surrounding area as part of our campus and part of the student experience. In NYC we seek out the best in certain popular food categories, we go to a Broadway show, while also visiting top tourist destinations and lesser known attractions. In Philadelphia we do the same thing and visit the sites both well-known as well as food-oriented. Our program is composed of a

professional staff with over 20 years of experience in running academic summer programs. Our goal has always been the same: safety, fun, and learning. Our first parameter is to keep our students as safe as possible. From kitchen safety taught on our very first day in the kitchen, to proper supervision while on excursions, safety is our first and primary concern. But this is camp... and that means the program needs to be fun. Whatever it takes for us to generate fun and good times, we will do (as long as it’s legal and safe!). Our entire winter is comprised of generating fun and exciting experiences for our students. Our goal is to create an environment where students will learn while making new friends in a warm, supportive environment.

City as CampusIn addition to our work in the kitchen, our students get to experience the city and surrounding areas to their campus. In Manhattan we get to see NYC from the inside. We spend our evenings and the weekend exploring the City. Last summer our students saw Phantom of the Opera on Broadway, watched E.T. at sunset over the East River, played mini golf on the Hudson River, and walked the High Line after exploring Chelsea Market. We explored the vast array of cupcake shops, took in the sights of the South Street Seaport, walked over the Brooklyn Bridge and checked out the public art in DUMBO. We waved hello to the Statue of Liberty from the Staten Island Ferry, and visited the 9/11 memorial, spent the day at the beach and boardwalk in Coney Island, and some nights we just hung out in Central Park, we make sure our students get authentic NYC experiences! This summer we will do more of the same, finding the best in new adventures. In Philadelphia we will visit Independence Hall Park, home to the Liberty Bell and the Constitution Center, the Betsy Ross House, and all sorts of other historic sites. We will also visit places like the giant foodie paradise, Reading Termon Market for local organic foods, artisanal cheeses, and much more.

Day-by-DayIn both campusNYC and campusBrynMawr, all of our classes take place in a professional teaching kitchen with high-end equipment. We combine our top-notch culinary instruction, guided visits to specialty markets and stores, and event nights designed to show our students the best of NYC and Philadelphia.

Here is a sample of our kitchen and lessons from past summers, to give you an idea of how we organize our class sessions. We will operate a very similar curriculum this summer, but always with new recipes and special guest chefs!

Week 1 of the campusNYC & campusBrynMawr experience focuses on safety, the French Brigade system, creating from scratch many sauces and stocks, as well as the critical concepts of food presentation, and plating.

DAY 1Lesson:Safety in the kitchen is addressed thoroughly as the safety of our students is always the first and most important factor in our program. From hot fluids to hot plates to hot cooking surfaces, from knife use and safety to cleanliness , how to walk through a kitchen, how to call out, all are covered in-depth.

WEEKEND (DAYS 6 AND 7)After a long week in the kitchen we will be ready to have some fun! On Saturday we sleep in and head out to explore our City. Last summer in NYC we headed over to the Prospect Park GreenMarket to do a cooking demonstration, where the students showed off their new skills. The farmers of the GreenMarket donate fruits and vegetables and the students were broken into teams and they created a recipe with the ingredients and hand out samples of their creation to the public. This summer we plan to have a similar foodie spectacle! After the demonstration ends, we relaxed in the park, checking out the beautiful Brooklyn Library, and exploring Prospect Park. In Philadelphia we will head over to Independence Hall Center. We can check out some of America’s greatest historic sites, like the Liberty Bell, the Constitution, the Betsy Ross House, and all sort of cool neat historic spots. We may visit Reading Terminal Market, which is the top tourist destination in Philly and home to all sorts of foodie paradise destinations like artisanal cheese makers, organic food shops, and much more. Saturday night is typically relaxing, with movies and activities back at the dorm.

Sunday is everyone’s favorite day... a day at the beach (weather permitting!) In NYC we head down to Coney Island, at Bryn MAwr we head to the Jersey Shore to relax on the beach and hang out on the boardwalk. There are games, rides, snacks, waves, and sun. It is such a fun, and totally necessary day to unwind before another week of cooking begins. Be sure to bring your bathing suit and sunscreen!

Event Nights - campusNYCAfter our day in the kitchen is over, we head back to the residence hall to clean up and get ready for the night. Each night is something different, something fresh and fun. We also make sure to go and do the best of NYC tourist destinations, always with our local-living staff, to get the best insider’s perspective!

Every summer is different, but here are some of ourfavorite activities from last summer:

● A Broadway Show! We saw Phantom of the Opera and we will plan to see something just as iconic this summer.

● Mini Chopped Cook-off! Our Friday night event was one of the favorites, students were given a mission- to find a secret ingredient at the Union Square Farmers Market to be used in our Chopped cook off at the dorm. This is just a small group game we played to get us ready for the big Chopped cook off at the end of camp. Students made some inventive and fun things while using their new skills!

● Cupcakes! NYC has them all- from high-end food trucks to specific fancy cupcake stores, we try many kinds of delicious cupcakes.

● Central Park. We explore and enjoy the park. ● High Line. We walk and explore the High Line elevated park. ● Chelsea Market. Diverse, specialized, and has a little something for everyone, especially those who love to cook!

● Staten Island Ferry. We ride the Ferry, with open-air decks, and check out the Statue of Liberty.

● 9/11 Memorial. Most of out town students want to do the museum and infinity pool at the 9/11 Memorial.

● Shopping in SoHo and Nolita. The best shopping districts in the world.

● Chinatown. Explore and sample food in one of the most unique sections of Manhattan.

● Little Italy. Always good to walk through and experience. ● Times Square. A major tourist destination of course. ● Brooklyn Bridge walk. We walk across the bridge and get boutique ice cream on the Brooklyn side, always fun.

● South Street Seaport. A beautiful view of the bridges, and Brooklyn.

● Hunters Point Park, Long Island City. Free outdoor movies with a view of the entire Manhattan skyline.

● Coney Island Beach and boardwalk. Relaxing beach, games, and rides!

● Hudson River Mini golf. 18 holes of mini golf right on the pier, the best view of NJ.

● Museums. American Museum of Natural History, and the Metropolitan Museum of Art.

ON CAMPUSBecause our residence hall on the campus of Bryn Mawr College is so fabulous, many of our events will be held on campus, especially later at night. From a talent show to a dance to movie nights and game nights, the lounges in our building will be the site for many good times. We will be able to use the surrounding green space for everything from night glow-in-the-dark volleyball to water balloon wars. And we will be able to cruise over to the campus center and use the facilities, games rooms, TV lounge and much more.

OFF CAMPUSSometimes we will head directly from the kitchen to destinations in the metro Philadelphia area. For example, we will check out an urban farm and see the entire farm-to-table process in action in an urban environment (which is very cool). We will meet with local restaurateurs and food entrepreneurs who have started small food-oriented businesses, or folks who have built and launched food trucks, and much more. Check back often or call our office to see what trips and events we have planned. Most of our trips are food-oriented, with the goal of expanding our minds to the possibilities of combining food with being an entrepreneur, or opening a restaurant, or otherwise creating interesting lifestyle companies. Sometimes we will return from the kitchen back to the residence hall and then walk in to town. The possibilities are endless!

DESTINATIONS FOR campusBrynMawr:Reading Terminal MarketReading Terminal Market is Philly’s famous indoor foodie paradise and so is perfect for us. It is a one-stop shop for everything from local produce and delicious sandwiches to artisanal cheeses and desserts. More than six million people a year visit the market and for good reason: it’s amazing!

Independence National Historic Park + Liberty BellKnown as the birthplace of American democracy, Historic Philadelphia’s Independence National Historical Park is located on the site of many of the seminal events that carried the nation through its founding as a global leader of democratic ideals. The main location is Independence Hall. We will also visit the Liberty Bell! 3.5 million visitors a year can’t be wrong.

The Rocky Statue and Rocky StepsThe Rocky Statue and the Rocky Steps are two of the most popular attractions in Philadelphia. We don’t have an exact visitor count, but if we did it would be near the top. The Art Museum steps have been declared the second most famous movie location in the entire world. All of us will pose for pictures here. It is just simply required!

Franklin SquareOne of the original five squares in William Penn’s plan for the city, Franklin Square is now a modern and fun family park, with a Philly-themed miniature golf course, a restored marble fountain, playgrounds and an old-fashioned carousel featuring famous Philly horses. We will finish off the visit with a stop at SquareBurger and have a meet-and-greet with Square Burger’s staff and head chef.

SPECIAL GUESTS!Each summer we invite chefs and restaurant owners to come in and speak to and lead a demonstration with our students. This past summer Julia Caruso of the amazing and educational Paleo blog www.juliasbitesandbeats.com. Julia came to visit the dorm, where we took over he kitchen and she demonstrated (with the help of the students) how to make some easy Paleo snacks while teaching the students about the Paleo diet and lifestyle. This summer we will have more guests just like this in the kitchen and at our event nights!

Grand Army Plaza Greenmarket | growNYCLast summer campusNYC participated in a demonstration at the Grand Army Plaza Greenmarket in Prospect Park. The students were split into two groups and they were challenged to create a recipe using only the ingredients available at the market. Then they took turns demonstrating how to prepare the salads and gazpachos that they had created. People gathered around, sampled the food, and got to take home copies of the recipes. It was one of the most fun days of camp, and also one of the most educational. The Greenmarket supervisors taught the students all about the produce and where it comes from while also testing all the farm fresh goodies!

About the Greenmarket: Founded in 1989, Grand Army Plaza is Greenmarket’s flagship Brooklyn market, and the second largest market in the program, behind Union Square. Located at the northwest entrance to beautiful Prospect Park and just steps from the Brooklyn Public Library, the Brooklyn Museum, and the Brooklyn Botanic Garden. This community destination brings together a mix of shoppers from the nearby neighborhoods of Park Slope, Prospect Heights, Crown Heights, and beyond. Runners, dog-walkers, families, singles and foodies all converge to buy from the huge array of farm fresh products, and to participate in the programming and cooking demonstrations that take place every Saturday all year long.

Our Residence - campusNYCAll campusNYC students will be staying again this summer (like the last 4 summers) at our partner Educational Housing’s premier residence hall located at 1760 Third Avenue. They will have access to a wealth of versatile amenities! Stay fit by working out in our 3,500 square foot, on-site fitness facility; save time with our modern laundry room with washing machines that text you when your laundry is done; and mingle with your neighbors playing pool in our game room or catching a movie in the screening room downstairs. As the first choice residence for international students, you’ll also make friends from countries around the world.

Fully FurnishedRooms at 1760 Third Avenue comes fully furnished with designer beds, desks, and wardrobes/dressers that maximize living space. Many of the rooms come equipped with private kitchenettes, and there are also full-sized communal kitchens on every other floor. Plus free high-speed Internet, TV with cable, refrigerator/microwave, and local phone service means from day one you’ll never miss a beat. Every room has a private attached bathroom-something you won’t find in most college dorms-and downstairs you will have 24-hour access to computers and a quiet study lounge.

Our Residence - campusBrynMawrAll campusBrynMawr students will be staying on campus at Bryn Mawr College in fantastic Bryn Mawr, PA, located just outside Philadelphia. The campus is secure, serene, beautiful, and has a host of fabulous amenities. We have our own building, which is just for us, and has two lounges, washer/dryers, and lots of green space to relax. We are located near the Campus Center which has a café, pool tables and all sorts of other fun things to do. Within our building and in our space we host all of our own evening activities. The rooms come with a desk, a bed, a lamp and a closet. The halls are divided by gender; boys and male counselors are housed on some floors and halls; female students and counselors are housed in different floors.

Culture, Cuisine, and CoutureThe area surrounding Bryn Mawr College is one of the nicest neighborhoods in the country, and so therefore is jammed packed with lots of fun things to do. There is a Starbucks just off campus which is very popular with

students; there is a main road (called the Main Line) which has tons and tons of cool shops, stores, café’s, restaurants and other opportunities to shop and explore. There are high-end consignments shops, record stores, and all sorts of one-off individually owned boutiques. It is a really fun neighborhood. Our students will from time-to-time get to go down to the main line and explore, shop, or just get a coffee, snack or ice cream, but when they do these excursions they will of course be chaperoned by counselors.

The campus is awesome! There is lots of green space, and lots of things to do. We can use the pool, we will hang out in the campus center, and we will eat in the college’s dining hall. It is a very collegiate atmosphere that will be a wonderful introduction for our high school students to what life on a college campus will be like.

Enrollment/TuitionEnrollment process: Admission is rolling and subject to closure upon the program reaching maximum enrollment. We do not require letters of recommendation, transcripts, essays or pictures of previous culinary masterpieces. Applications will be accepted until a week before the program begins, or when the program fills, whichever occurs first. It is recommended that students enroll as early as possible to reserve their space.

For all programs a non-refundable deposit due at the time of registration is $1000 and is included in the full tuition price. Residential students’ tuition includes: Breakfast, lunch and dinner, a room in our residence hall (which is air-conditioned, secure, and very luxurious), tickets to a Broadway show(campusNYC only), all transportation with the staff on

event nights, ticket and entry fees when required on event night, metro passes for any train travel, food and cooking supplies, a personalized chef’s jacket, a camp t-shirt, and as much fun as we can jam into a two-week period.

Day Program: Day students’ tuition includes: lunch, food and cooking supplies, a personalized chef’s jacket, a camp t-shirt, and two weeks of top notch culinary instruction.

Deposit: A non-refundable deposit of $1000 is due at the time of registration. Deposits can be refunded only if a student withdraws before June 1st. Spending Money: Residential students will need to bring spending money with them. We will be visiting many attractions that will have souvenirs, snacks, and more. When we are out on event nights or even just relaxing – students and staff often take quick trips to get coffee or ice cream, and those items are not included in your tuition. When you drop off your student on check in day, you can leave the spending money with the director to keep locked up and safe for your student to use as needed.

Enrollment/Tuition cont.Optional Airport Service: We offer pick-up/drop-off service from JFK and LGA (LaGuardia) airports fopr xcampusNYC and from Philadelphia International Airport (PHL) for campusBrynMawr. One-way service is $95, two-way service is $195. Staff members escort students to and from the residence hall. Please email us your student itinerary and receipt from the airline as soon as you have it. Students should arrive ideally the morning of Sunday of the first day of the session and students departing should have tickets booked the morning of Saturday, the last day of the session. We cannot accept students early or keep students late, as we do not have access to the residence hall and rooms at that time.

Refund Policy: On or before June 1st all tuition, including additional optional charges, will be refunded excluding the $1000 non-refundable deposit. After June 1st, no tuition, including additional charges, will be refunded for any student who withdraws or is dismissed for any reason.

Frequently Asked Questions What’s new in 2016?1. New destinations: We are always adding new spots all the time to our list of destinations.2. Size does matter: Because we have more room, we can limit the size of the program.3. More staff: This summer we will have more staff than ever before!4. More visiting chefs: Our student told us they wanted more visiting chefs… sushi chefs to teach sushi-making; dessert (pastry) chefs to teach how to make yummy treats, etc.

We are worried about our daughter in regards to safety. She’s 13 and we live in a small town in western PA; we have visited Philadelphia, but we are worried about her safety overall. How do you keep the kids safe when you travel around town? Are there chaperones?Student safety is our number one concern. Most of our students come from outside Philadelphia and may have limited experience in an urban environment or on a college campus. This is totally expected and what we train for every year. Everywhere we go, at all times, chaperones who know the Philadelphia area are with the students every step of the way. While we can never 100% guarantee anything, we 100% do our very best to ensure that safety remains our top priority!

Who will my roommate be? What is my room like? Is the dorm nice?Our residence hall is awesome. We have the entire building to ourselves. Students are housed on halls organized by

gender and age. The rooms are a mix of singles and doubles. Roommates are matched by age and geography. We try to mix international students with American students to maximize socialization. Staff live on the same floors as students to provide maximum supervision. Each room comes equipped with beds, desks, and air-conditioning.

I’m flying to camp; can someone pick me up?Yes! Both campusNYC and campusBrynMawr offer one and two way airport service. Staff members accompany students for the whole process as allowed by law; we can’t go through security but we make sure to be in touch with families ahead of the arrival day to let them know who is doing the pick-up and send them the picture of the staffer doing the pickup. The staff will be wearing a camp t-shirt and carrying a sign with the student’s name. Just tell your student to look for the the person in the picture we email on Saturday evening!

Do international students attend this program?Yes! As much as 25% of the program each year at campusNYC has been international. We expect to have some international students at campusBrynMawr as well.

Can I bring my cell phone or lap-top?Students may bring their phones and they can use them during strictly monitored times of the day, and during travel to and from the kitchen. However, during normal camp times and during class and free time in the dorm, phones are to be turned off and/or to maximize the experience with new friends and

There will always be a way for parents to reach their student in the case of emergency, and students are always able to reach their parents if they desire by simply talking to the Director. There will be a cell phone use policy in your welcome pack which will detail everything.

How do I get my welcome pack?Welcome pack pdf’s are emailed to the family immediately upon registration at our premier summer cooking camp. Nothing else is sent to you, and nothing is ever sent through the USPS snail mail.

How well supervised are students in both programs?Safety is our top priority! Students are chaperoned at all times, and we never travel anywhere without staff. We have strict buddy-group rules, and we work closely with the students to bring them up to speed as to what is expected in terms of behavior and actions throughout the day. Nothing comes before student safety, in the kitchen, in the subway, on our trips, or anywhere else.

Can I stay both sessions as a residential student? What happens in the weekend in-between?Students who stay for both sessions must pay for both sessions in full, as the program carries such an expense load we cannot offer a discount to multi-session students. However, we WILL host the student between each session for FREE. So when all of the Session 1 students pack up and depart on Saturday morning, our 2-session students will be sleeping in

and saying good-bye. Then, Saturday afternoon we will go and do something totally fun! An experience nobody else gets, followed by a fun Saturday night (movie, show, concert in the Park, it all depends what is going on that weekend in NYC but let’s face it, a fun Saturday night with the staff and just a small group of the most die-hard kitchen junkies… it’s going to be fun!), and a sleep-in on Sunday anticipating the next 2 weeks of kitchen skill-building…. all free for students who attend both sessions as a residential student.

How do you possibly move around, in either program, with a large group of kids? How is it possible to keep the group together, or what I mean is, how do I know my son/daughter is going to be safe and supervised and such during traveling around town and in general?Our students are a fun group. And that means they want to do all the fun things... and we get them there. The secret is to have lots of staff, to use a buddy system, and be responsible. Each counselor moves around with his/her little group, so it’s more of a bunch of small groups than one big big group.

How old are students in both programs?Our student age range is quite diverse. We do have students of each age attending our program, from 12-year old students to 17-year old students, and each age in between. Our program will have enough of each age represented, so your student will be able to make friends and hang out with similar-aged students.

Frequently Asked Questions cont. What if my student is vegetarian, vegan, or has food allergies?No problem! We will substitute a different menu item to replace meat or animal by-products for those who do not want to learn to cook, prepare or eat those items. And of course we will watch out for food allergies! Just let us know. When you register you can tell us (in the enrollment process there is a field where you can tell us anything you want about your student; fill this information in there) You can also just tell us when you arrive. We will make any reasonable accommodation for our students, no worries.

How much experience does my student need to have to attend this program?All we require of our students is that they be excited about learning to cook! We do not have any experience requirements. While some of our students are already quite good, some have very little experience. We divide the students up into much smaller sub-sets, so that they can work with students of equal skill. And since everyone makes everything, all the students in the end get to learn individually based on their own unique skill set and personality.

Do you offer scholarships or financial aid?No, unfortunately. Our program does work with foundations, churches, and other non-profit groups who wish to send a student to our program, if you are able to find a group to sponsor your tuition, we will work with that group on the billing and payment side. Unfortuantely, we do not have funding for scholarships or financial aid for our program.

What is the difference between campusNYC and campusBrynMawr?The curriculum and cuisine is exactly the same at both locations. We follow the French brigade system; we work on skill building; we make sure each student makes each dish. The experience in the kitchen is the same. What is different is what we do outside the kitchen... mainly the event nights and tourist=y things that we do. Both NYC and Philadelphia offer all sorts of attractions and events that we can attend. It is in the nature of those events that the difference between the programs can be found. But big picture, both programs have the same philosophy: keep it safe, keep it fun, and learning will occur! We will do everything we can possibly think of and to do, especially if it is food-oriented.
