Yet Kathy Ireland remains, in a sense, the young lady she always was, born of a humble family with strong principles and work ethic, a remarkably grounded, earnest and noble human being. Her awareness and dedication to who she is, how she was raised, and what makes her life

When I asked Bryan to explain the inspiration for his project, his answer was pretty simple: a dream house for his family. Well, as it turns out, that dream house was destined for bigger things—a state-of-the-art showcase home for sustainable and beautiful design that exceeds your imagination (but not his). Bryan was involved in the entire design, selection, and construction process and enjoyed every minute of it. (Check out the video link within his story to see why he insisted on Cambria.) Inspired by our two feature stories, we wrapped the rest of our issue around aspirations and dreaming. We got to know Tamra Barney from The Housewives of Orange County as she unveiled her dream—a workout studio that brings fitness to a new level. We compiled beautiful ideas that inspire dreaming of all kinds—from design tips and product picks to the best ways to bring your grilling dreams to fruition! You see, Cambria believes that the only way to think is to dream. And if you’re going to dream, you might as well dream big.

DISPLAY LIKE A GALLERIST Of course you don’t have to limit yourself to plain white walls just to show off a great piece of art, but if you want to emphasize a certain painting, for example, it does make sense to keep the sur-roundings comparatively simple. I might choose a monochromatic color palette for the room, or stick with neutrals, highlighting with a few accents in colors pulled from the artwork.

GET INSPIRED BY STYLE If a certain piece of art really speaks to you—even if you don’t own it to display in your home—you can choose elements from its composition to incorporate into your interior design. For

example, Picasso’s Cubist style is characterized by intersecting geometric planes and unex-pected tricks of scale: To get this feeling in your own space, you might pick furnishings, like those at left, that share some of these stylistic qualities.

USE THE ARTIST’S TOOLBOX Artists and designers both rely on many of the same principles—color, proportion, texture, balance, and rhythm—to create appealing compositions. As you design a room to work well with a piece of art, make sure your furnishings, fabrics, and other elements, are in keeping with the color, scale, tex-ture, and rhythm of the artwork—but avoid being “matchy-matchy”.

FIND ART IN UNEXPECTED PLACES Not many of us can afford to hang an actual Picasso on our wall, but that doesn’t mean we can’t afford great art. A framed reproduction

poster can double as the real thing; or, have a photograph or even a child’s artwork printed on canvas and stretched on a frame for your very own contemporary master-piece. Also, seek out local artists.

Interior designers often let fine art lead their plans for a space, but getting just the right look can be an art in itself. Here’s how.

Step into almost any home built or remodeled in the past two decades and you’ll notice one common theme: The kitchen is much more than just a workspace, and it probably has a center island. “It’s been a gradual shift,” says designer Jose Cardenas of Hota Design, in Jacksonville, Florida.

“Over the years, we’ve seen our clients start to use the kitchen as a social environment as much as they use it for actual cooking.” Accordingly, form has followed function. In place of the small, closed-off food-preparation zones of the past, today’s kitchens are open to other rooms, and sometimes even to the outdoors. They’re project spaces, entertaining centers, dining rooms, and much more. And many of those roles pivot on the modern-day equivalent of the round table: the kitchen island. “An island can be a great, central hub for all sorts of family activities,” say designers Melandro Quilatan

and Tania Richardson of Tomas Pearce Interior Design Consulting in Toronto. But, while islands certainly are a practical and attractive addition to many kitchens, they’ve become so de rigueur that some designers and contractors will shoehorn them into a too-small space, says Cardenas. Another common mistake, says designer Sandy Varelmann of Weave Ideas in Cleveland, Ohio, is topping the island with a trendy, but high-maintenance material. You can avoid these pitfalls, and others, by keeping the basics in mind.

FORM AND FUNCTIONIf you think you want an island in your new kitchen, begin by asking yourself the same kinds of questions designers ask their clients. “We always ask how many people cook in the space, what kinds of foods they cook, whether they entertain, if they want guests to be able to see what they’re doing,” says Cardenas. In addition to these questions, says designer Tineke Triggs of Artistic

Designs for Living in San Francisco, Calif., think about the non-cooking activities that will take place in the kitchen, like dining, or even work. “You may want to incorporate a dining bar, or make one end of the island a dining table,” she says. “And if you plan to spread out homework or papers, you should allow for plenty of flat, open space.” Bottom line: When it comes to choosing the countertop material, if you have a hard-working kitchen, make sure you select a surface that can stand up to what you dish out. Once you have a sense of your needs, consider the shape and design of the island. A dual-height island can shield the kitchen mess from an open living space, and an angled or curved shape may maximize the seating area, but, say the designers we polled, a simple, rectangular scheme is often the best bet. “A double-height island has its place,” says Varelmann. “But many designers are moving away from that in favor of a wide, open surface area. The look is cleaner, and the surface is more versatile.”

Perhaps even more important than shape is size, and this is one decision many homeowners get wrong. “A sense of scale is important for the overall look,” says Cardenas. “But, also, not every kitchen has enough room for an island, and if you squeeze it in you may not leave enough space for circulation, or for cabinet or appliance doors to open properly.” A general rule of thumb is to allow for 42”-wide aisles between the edges of the island and any adjacent counter or appliance. To get a sense of how big the island will look in the space, Triggs suggests moving a table to the spot where the island will stand, then putting a large piece of cardboard or plywood in the dimensions of the island on top of the table. “It’s hard to imagine a space when you’re just looking at two-dimensional drawings,” she says. “Creating a ‘dummy’ island before you commit to adding one for real can help you figure out the perfect size.”

MATERIALSNot just a crucial prep and serving space, an island tends to be the focal point of a kitchen’s design, so the materials you choose for it must be both durable and beautiful. Designers warn away from picking high-maintenance surfacing like limestone, marble, or stainless steel. “Cambria is natural and so much more durable than other stones. Plus its look and movement is just breathtaking,” says Cardenas. “If you really want something like stainless steel,” suggests Varelmann, “incorporate it someplace it won’t get a lot of abuse, like on drawer fronts.” To help focus attention on the island, designers often choose to mix designs and materials, using contrasting colors on perimeter counters and the island top, for example, or combining materials on the island itself, like pairing the classic stones from Cambria’s Waterstone Collection with

butcher block, for a warm, old-world look. The thickness of the countertop material—and the edge treatment you choose—has a big impact on the effect you create, as well: For a sleek, European look go with a thinner countertop; choose an ornate edge treatment to coordinate with an antique-inspired space. And, don’t forget the base of the island, another opportunity to make a bold statement. A painted finish can add exciting color, says Triggs. And, “we’re seeing more interesting woods with more pattern and grain,” says Varelmann. “Exotic woods like zebra wood are one option, and butternut is beautiful and underutilized.” A newer, more contemporary approach: Wrapping the entire island in one surfacing material (see photo on page 19). “Cambria is ideal for this kind of application,” says Cardenas. “It provides a very clean, seamless look.”

ACCESSORIES AND STORAGE An island can take up a fair amount of kitchen real estate, so it’s important to make the most of every square inch. To that end, designers are incorporating cooktops, as well as bar and prep sinks into the surface, and building storage and appliances into the base. “I love to incorporate a removable cutting board,” says Triggs. “You can rout Cambria to create a depression for the cutting board. I also like to use microwave drawers in an island—it’s a great location for the microwave, and safer because you don’t have to lift heavy dishes down from above your head.” Cardenas sees a trend toward integrated design: “Our clients really want luxuries and conveniences like wine coolers and trash compactors in the island—but they don’t always want to see them,” he says. “So we’ll integrate them with the millwork, facing them to match the surrounding island cabinetry.” Quilatan and Richardson make it a point to add storage wherever they can. “We’ll even put a shallow drawer at the bottom of the island, in the kick-plate area,” they say.

IN 1989, MODEL KATHY IRELAND, BREATHTAKING IN A TINY YELLOW BIKINI, DAZZLED AMERICA FROM THE COVER OF SPORTS ILLUSTRATED’S SWIMSUIT EDITION. Over two decades later, she still glows. A long-limbed beauty, with tousled hair and deep blue eyes, at 50, she’s the ultimate mature California Girl. But Kathy also has radiance of a different sort: the kind that comes when a highly focused, ambi-tious woman gets exactly what she always wants. The company she founded and still heads, Kathy Ireland Worldwide (kiWW) has grown from a fledgling enterprise to a multi-billion dollar international empire of style. Kathy’s managed the expansion without compromising the company’s longstanding commitment to creating products that are lovely, a good value, and crafted to meet the needs of real people, especially mothers. Since the company’s earliest days, “finding solu-tions for busy moms”™ has been both an ad slogan and mantra. Our kiWW designs, says Kathy, “are beautiful—but never so precious that you can’t put your feet on the furniture.” That same principle guided Kathy’s choice of Cambria counters for an upcoming kitchen and master bath remodel in one of her company’s oceanfront destination wedding properties in Honolulu, Hawaii. Looks and practi-cality, she says, are the ultimate winning combina-tion. Tommy Meharey, director of Kathy Ireland Weddings and Resorts, echoes this sentiment. “When Kathy decided to remodel the master bathroom and kitchen, here at our Hawaii design studio, we looked at every possible product,” he says. “Kathy decided to select Cambria, because of its superior strength and amazing look.” In person, Kathy exudes a gracious calm. She never seems rushed, on edge, or even mildly resentful of requests for her time and attention; her favorite phrase seems to be “thank you.” That cool elegance masks the fact she leads a life so full that just reading her schedule leaves an outsider exhausted. A self-described “control freak,” she’s not only kiWW’s chief designer, but hands-on when it comes to the company’s retail strategy, shipping, distribution, and sales. She’s also written six books, and is active in numerous philanthropic efforts.

If that weren’t enough, she’s in demand as a motivational speaker, and frequently addresses corporation and stockholder meetings. And because in her trio of prime values parenting comes after faith but before everything else, she does it all while carving out time to spend with her family: husband Gregory Olsen, an emergency room physician, and children Erik, 18, Lily, 14 and Chloe, 10.

“My goal has been to drive them to school every day and spend every afternoon with them,” she says. “I’m not perfect—I strive for balance, but don’t always achieve it. I was 40 before I learned that ‘no’ could be a complete sentence. Setting priorities has meant I couldn’t accept every business opportunity or go to every friend’s party. But time with children goes by very quickly, and I wasn’t willing to miss out on it.”

Perhaps Kathy has such prodigious energy because she flat-out loves what she does. When Forbes magazine put her on its cover last year, the accompanying article described her as a model who became a mogul. More accurately, she’s a born mogul who happened to spend some time in front of a camera. A sixth-generation Californian, raised in the upscale beach town of Santa Barbara, she went into business practically as soon as she could walk. At four, she was painting rocks and selling them door-to-door; at 11, a newspaper route was bring-ing in money she hoped to use to remodel her bedroom. If she was a less than motivated student—she admits to barely finishing high school—she never compromised when it came to work. “When I got my newspaper route, my dad told me to give the job 110 percent,” she recalls. “’He said ‘If the customer expects the paper to land in the driveway, put it on the front

porch.’ That’s something I never forgot.”Discovered at 17 by an agent for the presti-

gious Elite Model Management, Kathy quickly hit the industry’s top tier, appearing on the covers of Cosmopolitan and Vogue, and in the pages of Sports Illustrated for 13 consecutive years. That 1989 yellow bikini cover remains the best-selling Swimsuit Edition ever. But in many ways, she didn’t fit in. At 18, she became a devout Christian, who was outspoken that faith was a cornerstone of her life. Her father’s “110 percent” command prompted her to show up for fashion shoots early, bewildering photographers used to flakiness and drama. “I was a joke,” she says. She didn’t spend her earnings on clothes or fancy cars—“my friends called me cheap”—or indulge in romantic intrigue. In fact, she was 25 when she married Olsen, who

she’d met two years earlier through her mother. “I was traveling a lot and she hoped I’d marry a local boy. She was working as a nurse and one day when I was having lunch with her, I noticed this very cute guy walking by. She said ‘That’s Dr. Olsen’ and said such nice things about him...Mom didn’t usually speak so highly of doctors.”

Most of all, Kathy had a remarkably clear-eyed view of the profession in which she found herself. “I never believed I’d have a long career,” she says bluntly. “I realized that ‘success’ was having

the look of the moment, and that look constantly changes. I never felt secure earning a living based on how someone else perceived that I looked.” In fact, the money she wasn’t spending on glitz was funding a series of entrepreneurial start-up efforts. Every one of them failed, but the process of trying, Kathy says, taught her a lot. She assembled a business team of several dozen individuals, many of whom still work for her and with whom she shares a powerful “family” bond. “My father was a union organizer,” says Kathy, “and I learned at a young age that people come before profits.” In kiWW’s Palm Springs destina-tion home, for instance, there are almost as many photographs of the company corporate team as there are of Kathy’s family, making it hard to tell which is which.

Kathy also learned that it wasn’t enough to start just any business; the “what” mattered. “At one point, a friend gave me a book on making beer, which I recognized could be very profitable,” she remembers. “I’m not a good cook, but the first batch turned out really well and I got very excited. The second batch wasn’t so great, and I knew I needed help. Two years later, after doing research, investing and learning, I realized that I didn’t really care about beer at all. And a business has to be

about more than making money—you have to have a love for it, because when you face the inevitable tough times, you need something to carry you through.”

She found her calling in an unexpected way. In 1993, Kathy was carrying her first child and approaching her 30th birthday, when she got a job offer to model socks. She chose not to be insulted. “I was a pregnant, aging model with very few offers coming my way,” she says with brutal honesty. But rather than merely wear those socks, she proposed a business partnership to make some that would bear her name. “I believed that if my team could create something that women embraced, it would indicate we were on to something,” she says. “That we might have a brand that could endure.” Indeed, the socks, carried by K-Mart, became “a blow-out success,” and led to a Kathy Ireland clothing line for the retailer.

In 1998, her company expanded into home furniture, despite a lot of industry skepticism. But the owner of the Nebraska Furniture Mart—a subsidiary of legendary businessman Warren Buffett’s Berkshire Hathaway conglomerate—gave her a shot. It was another triumph, and since then, kiWW has moved into numerous other areas of the home, including its Acafe Chef André line of kitchen products. All are aimed at the same audi-ence: women who appreciate something of quality. “Value was a good place to start,” says Kathy. “I knew my potential customer was too savvy to buy something just because it had my name on it. I couldn’t leave the newspaper in the driveway—it had to be on the porch.”

Kathy credits her success to hard work (“If there’s an easy buck out there, I’m too stupid to find it.”) and her team who she says “are on the same page as me when it comes to core val-ues.” She also attracted some high-power mentors who taught invaluable lessons along the way. It was Warren Buffett, for example, who advised her to stick with home products, point-ing out, she says, that “fashion in apparel changes a lot faster than fashion in the home.”

Another mentor was the late Elizabeth Taylor, with whom Kathy became very close. It was an unusual pairing: a Hollywood icon and a conservative businesswoman, wife, and mother, but the connection was profound for both. Kathy calls Taylor “an inspiration to me—I was so blessed to have had the chance to learn from her.” Taylor pushed Kathy to be “more bold” in design, and imparted her famous love of jewelry—thanks to her, kiWW now has a luxury line. She also encouraged Kathy to invest in real estate. In fact, three of kiWW’s “destination” homes for weddings, one in Palm Springs and two in Hawaii, were originally purchased for Taylor to use as getaways. When Kathy

visited Taylor in the first Hawaii home, she decided the house was too small for her, and bought a second, a seven-bedroom, eight-bath walled and gated oceanfront estate with koa wood floors and cabinets and ocean views from every room. It’s in this home’s soaring, high-ceilinged kitchen where Aloha State Sales of Honolulu is installing Cambria’s Waterstone Collection Praa Sands surfaces. Kathy fell in love with its classic creamy white palette, with swirls of warm taupes and veins of cool grays and blues that echo the colors of the sea just outside. For the master bath, she’s chosen Torquay, also from the Waterstone Collection, a rich, subtle taupe with swirls of gray and tan.

Kathy was thrilled to discover Cambria. “Elizabeth taught me to love jewelry, and Cambria is like jewelry for the home,” she says. “I saw nothing else that compared. Kathy sees kiWW’s future as limitless—she hopes to expand the company’s offerings still further, to feature “an explosion” of its fashion line, a foray into publishing, and “something connected to finance” to help promote financial equality for women.

“I love being of service to women, I love it,” she says passion-ately. “There’s a lot left to do.” Anyone who doubts Kathy will do just what she says only has to look at her past. “People told me that what I was aiming for had never been done,” she says. “But just because something hasn’t been done before doesn’t mean it can’t be.”

With every spin, he gets a panoramic view of the glittering Pacific Ocean, blue-green waves curling and breaking forty yards away. A fishing boat bobs offshore. The muted crash of the surf plays in surround-sound and a light breeze wafts through the patio doors. There isn’t a cloud in the azure blue sky. Viewers of the critically-acclaimed AMC show Breaking Bad might not recognize this happy fella as Walter White, the chemistry teacher turned crystal meth kingpin. to the trim, relaxed man in the chair. And at the moment, he is a very long way from the rusty RV that served as a makeshift meth lab on the show, which begins to air its final season in August. His new house was completed in January 2013, a five-year process that took Cranston and project designer John Turturro of Turturro Design Studio through dozens of revisions. It all started simply enough. “I just wanted to build a beach house for my family,” explains Cranston who, prior to Breaking Bad, was best known as the lame dad in Malcolm in the Middle, and as Jerry Seinfeld’s certifiably insane dentist. But once he bulldozed the ’40s-era surf shack off the property (he drove the ’dozer) he started to see the possibilities. “I thought, ‘I can’t wait to turn this into something quite beautiful and efficient’ and then it sort of mushroomed from there.” Cranston, a lifelong recycler and composter, set an ambitious goal: Use the greenest materials, products, and technology in the most beautiful way possible. “A misconception still reigns that when you say ‘green lifestyle,’

you have outdoor plumbing,” he says. “I wanted people to see this house and go, ‘This is a green house?’” He set out to design and build a structure that would raise the idea of living green to an aesthetically stunning new level of beauty and comfort and showcase how to do it. And Cambria, quite naturally, played a big role in those plans. There is plenty to showcase in his 2,400 square-foot, three-bedroom, four-bath house, named “3 Palms” for the majestic Mexican fan palms on the site. For starters, the structure is now targeted for LEED/Passive Platinum certification, the highest awarded by the U.S. Green Building Council, which requires adherence to the most stringent standards in sustainable site, materials, indoor air, water use and energy. The design avoids the block-like effect common to contemporary design through the use of the three titanium cylinders that now rise from the stuccoexterior. They are the first feature a visitor sees, ascending 28 feet into the air, and gleaming in the sun. These towers also create curved walls in the interior stairwell, living and dining areas, softening the space.

One of the linchpins of green design is to use only materials that will last, and titanium certainly qualified. “In this idea of sustainable buildings, durability is critical, and that’s especially important near the beach, where sandand salt are a factor,” says architect John Turturro. “Yes, it’s more expensive, but you don’t have to paint, repair, or replace. It’s a one-time cost.” That tenet, along with net-zero energy (the house makes energy to spare) and choice of eco-friendly materials, were the guiding principals. Sustainable, natural materials take pride of place, Cambria among them. “I said, ‘I only want to be involved with companies that have a sense of living responsibly,’” explains Bryan. “We loved the choices and the variety of Cambria, of course, but we also loved that it is manufactured in the U.S. People don’t realize the environmental impact

and carbon gases used to ship that stone from Europe or Asia. I wanted to use as local venues as possible.” Dressed casually in jeans and a blue-striped linen shirt, Bryan pads barefoot to the taupe-gray kitchen counter (Cambria’s Devon, from the Desert Collection) and slides his hand over it. “Another thing we like about Cambria is how easy it is to clean,” he says. “It’s one flat slab, which means no grout lines to stain, and no food particles to clean out with a toothbrush. The fewer chemicals you use to clean, the better.” Cambria was used everywhere in the home—as bookshelves, as closet ledges, and in all the baths. Elsewhere in the house, Bryan again took his cue from nature and chose recycled glass mosaic stones for shower walls, and cut beach pebbles for their floors. In the kitchen, the Wolf induction cooktop only heats when

magnetic cookware is placed on it. The amount of heat use is minimal and it cools the second the cookware is removed. The dual-compressor refrigerator operates on the power of a single 100-watt light bulb. Throughout the house, subtle LED strips take the place of fluorescent or incandescent bulbs, using a fraction of the energy and casting a warm glow. The house also harnesses the passive energy of the lowest technology there is: sun and wind. Its concrete slab floors and natural plaster walls absorb solar heat gain during the day and release it back at night. (The walls are also backed by CertainTeed AirRenew drywall that wicks noxious chemical compounds from the air.) The shape and placement of the super-efficient windows create cross-ventilation in every room, negating the need for any significant air-conditioning. Even the rain doesn’t go to waste: 600-gallon tanks beneath the house collect rainwater for outdoor showering, cleaning decks and watering xeriscaped plants. A soothing palette of warm grays, splashed with orange cushions and stools, renders the main living area at once sophisticated and playful. And personal. Bryan proudly points out a plush corner nook with a killer view, inspired by a similar alcove in his aunt and uncle’s house where he played as a kid. “Lie down,” he teases a visitor, who obeys at once. “Let me get you a blanket,“ as he mimes pulling it up. Similar ingenious pocket spaces abound; hidden drawers filled with board games (“all the essentials,” quips Bryan); a compact computer station under the stairs. “It’s like a ship,” says Bryan’s wife, Robin Dearden, who tackled the interior decor decisions, “trying to fit everything in.” In a media room that doubles as guest quarters, a stainless steel ladder leads to a queen-size loft bed tucked overhead. It comes in handy since the Cranstons’ 20-year-old daughter Taylor, is a frequent visitor, often with her college friends in tow. “We can sleep nine in this house in their own beds,” Robin says proudly.

Upstairs, the master bedroom reflects the sea and sand in a color scheme of celadon, pale taupe, and ivory (all fabrics in the house are natural fibers and blends, selected for their durability). In the master bath, Bryan chose Cambria countertops in sandy Templeton (Desert Collection), as he did for the other upstairs baths. Cambria is also versatile enough to use for entry hall shelves, an upstairs hall cabinet, walk-in bedroom closets, and atop the washer and dryer. “We wanted continuity throughout,” he says, “so virtually wherever we used countertop, it’s Cambria. We wanted it to be harmonious.” In addition, adds architect Turturro, “Cambria is less porous than granite, so it’s going to last longer, and not be replaced or end up in a landfill.” Suddenly, Robin enters and points to the ever-present Pacific, “Dolphin Alert!” Sure enough, four frisky dolphins are playing follow the leader a few hundred feet offshore. “We also see whales on their migration,” she says. When they are not watching marine life, the family kayaks, surfs, and swims. The house is, after all, a vacation and weekend retreat; their primary residence is a far more traditional home in a Los Angeles suburb. There is an irony in all this, however. When Bryan started 3 Palms, Breaking Bad was just beginning, and now, three Emmys and numerous awards later, the house is finished but he is almost too busy to enjoy it. Such are the sacrifices that come with success, although Cranston certainly isn’t complaining. “Walter White is the best role I’ve ever played,” he says. Being cast as CIA Chief Jack O’Donnell in the hostage thriller, Argo, was another stroke of good fortune, to put it mildly. When he saw the actors who had signed on for the picture—John Goodman, Alan Arkin and Victor Garber, in addition to director and star Ben Affleck—“I thought, ‘the sooner I get in there, the better.’”

Good move: the film won the Best Picture Oscar in 2013. In the wake of his current success, Cranston now has his choice of acting projects, but he has no intention of repeating himself. He just completed shooting a big-budget remake of Godzilla in Vancouver, playing a father and engineer who is wise to a scientific anomaly that indicates…well, let’s just say it’s due out in May 2014. And later this summer, he turns presidential and heads to Boston to appear in the American Repertory Company’s production of All The Way, by Pulitzer Prize-winner Robert Schenkkan. He’ll portray Lyndon Baines Johnson, from his traumatic ascension to the presidency after JFK’s assassination, to his landslide re-election in 1964. “I like the departure and I wanted to be open to whatever resonates with me,” Bryan explains. Clearly, the philosophy of living sustainably—and well—is resonating too, proof positive that eco-friendliness and aesthetics are perfectly compatible. At 57, Cranston is more philosophical now. “Our priorities have adjusted,” he says. “As I get older, I want fewer things in my life, and more experiences. By having this place, we create the opportunity to have those experiences.” Given the way he built his home, and the materials he used, 3 Palms could stand for 100 years. That’s kind of the plan, says Bryan. “I have no intention of replacing virtually anything here,” he says, spreading his arms wide. “This is it.”

SWEET AND SPICY PICKLED CAULIFLOWER AND CARROTSMakes 1 64-ounce jar (or 4 1-pint jars)

INGREDIENTS2 ½ cups water2 ½ cups white vinegar 3 Tbsp. sugar 3 Tbsp. kosher salt 4 bay leaves8 star anise pods2 Tbsp. coriander seeds2 Tbsp. pink (or black) peppercorns2 Tbsp. mustard seeds4 tsp. dried chile flakes4 cloves garlic, peeled1 pound slender young carrots, about 7 inches long, tops trimmed away, washed and peeled¾ pound cauliflower, core trimmed away, florets washed and trimmed to ¾-inch pieces.

DIRECTIONS1. In a large saucepan, combine water, vinegar, sugar, and salt. Bring to a boil and stir until sugar and salt dissolve. Remove from heat.2. Add half the bay leaves, spices, and garlic to the bottom of the jar. 3. Arrange half of the cauliflower florets on the bottom of the jar, packing them in carefully. Holding the jar at an angle, add the carrots vertically to the jar, resting the bottoms on the cauliflower, packing them tightly so they all stand up. Carefully arrange the remaining cauliflower on top of the carrots, leaving ¾ inch of space from the top of the jar. Top cauliflower with the remaining spices and garlic. 4. Ladle hot brine into the jar, leaving a ½-inch gap from the top. 5. Screw the lid onto the jar firmly, but not too tight. Cool to room temperature and store in the refrigerator for up to 3 weeks, or for shelf stability, process for 15 minutes in boiling water. Cool jar on a towel or rack. Then store in cool, dry place

INGREDIENTS8 ounces dried chiles (check chile packages for description of heat level; I like to use a mix of milder and hotter, as well as throw in a few smoked chiles, i.e. chipotle)1 tsp. caraway seeds1 tsp. coriander seeds1 tsp. cumin seeds½ cup extra-virgin olive oil8 cloves garlic, chopped¼ cup freshly squeezed lemon juice1 tsp. freshly grated lemon rind3 tsp. kosher salt

1 pint jar, with lid and screw band, sterilized

DIRECTIONS1. Using gloves (to protect your skin from chile oils) and working over a bowl to catch the seeds, pull the stems from the chiles. Tear the chiles in half lengthwise and scrape the seeds into the bowl. Discard stems and seeds.2. Heat a cast iron skillet over medium-high heat. Working in batches, lay the chile pieces flat in the pan and toast until fragrant, just a minute or two, being careful not to burn them. Toss them into a large bowl as you go. Cover the chiles with boiling water and let soften for 20 to 30 minutes.3. While the chiles soften, add the caraway, coriander, and cumin seeds to the skillet and toast for a minute or two until fragrant. Transfer to a spice grinder or mortar and pestle and grind to a powder.4. Drain chiles and transfer to a food processor or blender. Add the toasted spices, olive oil, garlic, lemon juice, lemon rind, and salt. Process to a smooth paste.5. Transfer harissa to jar, leaving ½ inch from the top. Screw the lid onto the jar firmly, but not too tight. Cool and refrigerate for up to 3 weeks, or for shelf stability, process for 10 minutes in boiling water. Cool jar on a towel or rack. Then store in cool, dry place

Divide spices and rosemary between the jars.3. Gently pack pears into the jars, alternating up, down, and sideways. 4. Ladle hot brine into the jars, leaving a ¼-inch gap from the top. 5. Screw the lids onto the jars firmly, but not too tight. Cool to room temperature and store in the refrigerator for up to 2 weeks, or for shelf stability, process for 15 minutes in boiling water. Cool jars on a towel or rack. Then store in cool, dry place.

BRAISED LEEKSMakes 2 1-quart jars

4 cups chicken broth1 cup white table wine, (preferably not Chardonnay)2 Tbsp. lemon juice½ tsp. kosher salt (or to taste, depending upon saltiness of broth)12 leeks, roots trimmed away, trimmed to 6-½ inches (so they fit vertically in jars leaving ½-inch gap from top)2 bay leaves2 tsp. fennel seeds1 tsp. black peppercorns2 cloves garlicSeveral sprigs of fresh thyme

2 1-quart canning jars with lids and screw bands, sterilized

1. In a large saucepan, combine broth, wine, lemon juice, and salt. Bring to a boil and stir until salt dissolves. Remove from heat.2. Halve leeks lengthwise. Discard outer-most layers; then, keeping leek halves intact, carefully wash leeks under running water to remove grit.3. Divide bay leaves, spices, garlic, and thyme sprigs evenly among the jars. 4. Pack the leeks vertically into the jars, tilting each jar a bit sideways in order to fit as many leeks into each jar as possible. Really pack them in.5. Ladle hot broth into the jars, leaving a ¼-inch gap from the top. 6. Screw the lids onto the jar firmly, but not too tight. Process in a pressure canner according to manufacturer’s instructions**. Cool jar on a towel or rack. Then store in cool, dry place

Tamra Barney of The Real Housewives of Orange County and her fiancé Eddie Judge recently opened CUT Fitness, an elite exercise studio in Southern California that’s home to three distinct studio spaces and 15 kinds of fusion fitness classes. “You can take a different type of class every single day or twice a day,” says Barney.  “People are just excited and they’re not bored with the same old workout.” Barney and Judge designed their sleek new space to reflect the fusion workout philosophy, which emphasizes an innovative and inviting take on fitness that does not rely upon a static row of treadmills, elliptical machines, or stationary bikes. CUT Fitness spans more than 6,200 square feet and provides an open, luxurious feel in each of its three distinct studio spaces. Another unique element—a central, glass-walled room where children can watch their parents work out and learn how to exercise properly on their own kid-friendly workout equipment.   Mariel Hemingway, Cambria advocate and health, wellness, and fitness expert says the key to lifelong fitness involves constantly challenging your body in new ways and maintaining an element of fun. “The classes are so popular because anything that distracts a person from monotony helps the brain and the body respond,” explains Hemingway. “People just enjoy it.”  The lack of a tedious, repetitive motion on machines, coupled with a mental and physical focus on precise movements remains key to the success and effectiveness of fusion workouts, says Nicole Romano Uribarri, mind-body manager at Exhale Chicago. Exhale began their fusion focus 10 years ago when they debuted their signature Core Fusion Barre class in New York City. The Chicago location now offers four additional Core Fusion classes that incorporate plyometrics (high-intensity jumping), yoga, sports training, cardio intervals, and kettlebell work. ”As the business started to grow, fitness trends changed and no one thing worked for everybody,” explains Uribarri. “So we created programs that worked for several different kinds of athletes and people who like to work out.”

Industry leaders and enthusiasts alike continue to respond to the evolving nature of these workouts. “If done right, they are ever-changing and energizing, and they produce real and noticeable changes.”  says Kate Albarelli, creator of Figure 4, an invigorating, full-body workout developed exclusively for Pure Yoga in New York City. Albarelli’s Figure 4 classes combine the alignment and discipline of dance, the lengthening and stretching of yoga, the core strength of Pilates, and the resistance training of free weights. This kind of variety is what makes fusion classes so exciting, she explains. “They keep the mind and body ‘confused’ and wondering what is coming next.”
