ANITA “THE BAKER” THOMPSON

INGREDIENTS:

1 1/4 cup icing sugar4 cups white flour2 tbsp. baking powder (or cornstarch)2 1/4 cup butter

COOKING INSTRUCTIONS:

Sift together sugar, flour and baking powder. Cut in butter until dough is the consistency of play dough. (I have to mix it with my hands to get it like that - and yes, I always wash my hands first). Break into small balls and roll out and cut with cookie cutters.

I find you have to add a bit of flour to roll it out or it gets sticky. I leave the cookies fairly thick when cutting them.

Bake at 275 for about 18 - 20 minutes. I bake them on parchment paper so they don’t stick to the cookie tray.

When you take them out, they will still look pretty raw but if you over bake them they turn brown (yuk), I transfer them to a baking rake and them let them cool and then they harden up.

For the icing, I melt chocolate chip wafers and add food colouring and decorate them.

I like to have this meal with steamed veggies and rice

or quinoa.

I don’t really measure when I cook, so use your

judgement. Remember you can always ADD salt as

you work, but you can’t take it away so season

carefully!

CHICKEN BREAST WITH MUSHROOMS IN RED WINE AND CREAM.

SEAR THE CHICKEN ON BOTH SIDES IN A DIFFERENT PAN

ADD CHICKEN TO CREAM AND MUSHROOMS. COVER AND SIMMER

UNTIL COOKED - ABOUT 25-30 MINSPLATE IT UP AND EAT!
