2 tablespoons Dijon-style mustard
3 whole-wheat English muns, split and lightly toasted
6 1/2-ounce slices low-at cracked black pepper ham, chopped
2 tablespoons minced green onion (scallion) tops
3 ounces low-at sharp cheddar cheese, shredded
direCtions
In a small bowl, combine apple butter and mustard.
Spread 1 tablespoon mixture on each mun hal. In another
small bowl, combine ham, onion, and cheese. Spread each mun
hal with this mixture. Broil until topping is bubbly. (Both mixtures may
be prepared in advance and stored separately or a quick breakast.)
Serves six.
Each serving contains about 137 calories, 10 g protein, 3 g at (20 percent
calories rom at), 11 mg cholesterol, 19 g carbohydrates, 2.5 g ber, and

1 ripe tomato, quartered (or 8 cherry tomatoes)
1 small cucumber, washed and thinly sliced
direCtions
Drain chicken. Add chopped celery and mayonnaise.Mix lightly to keep the chicken chunky. Arrange lettuce in a
shallow serving bowl. Put chicken salad in the middle and
crumble blue cheese over it. Arrange tomatoes and cucumber
slices around the plate. Cover with plastic wrap and
rerigerate until ready to serve. Serves our.
Each serving contains about 175 calories, 15 g protein, 10 g at (51 percent

Preventing ObesityfActs AboUt PReventionObesity is a chronic disease aecting increasingnumbers o children and adolescents as well asadults. Obesity rates among children in the UShave doubled since 1980 and have tripled oradolescents. About 17 percent o children agedtwo to 19 are considered overweight comparedto over 66 percent o adults who are consideredoverweight or obese.
Earlier onset o type 2 diabetes, cardiovasculardisease, and obesity-related depression in childrenand adolescents is being seen by healthcare pro-essionals. The longer a person is obese, the moresignicant obesity-related risk actors become.Given the chronic diseases and conditions associ-ated with obesity and the act that obesity is di-cult to treat, prevention is extremely important.
A primary reason that prevention o obesity isso vital in children is because the likelihood ochildhood obesity persisting into adulthood is
thought to increase as the child ages.
infAntsBreasted babies are 20 percent less likely todevelop diabetes and are less likely to becomeoverweight. Thereore, the longer babies arebreasted, the less likely they are to becomeoverweight as they grow older.
