Bioferm DouxYeast for the production of wines with higher residual sugar content. By keeping the natural fructose intact, a residual sugar level of 5-15 g/l is possible. Bioferm MalicThis new yeast decreases the present malic acid up to 50% ! Too much malic acid is a frequent problem in fruit wines. It generates an acerbic, sour taste. By using this yeast, the malic acid is largely “used” during the fermentation (1 g of malic acid is turned into 0,03% of alcohol). BIOFERM MALIC consumes 18 g of sugar for 1% of alcohol and is very suitable to make a wine with a low alcohol proof out of a must with a high density. The yeast improves the colour extraction (suitable for red wines) and has a neutral aromatic profile. Tem-perature range : 20-30 °C.Alcohol tolerance : 14-15 vol.%.Dosage : 2-3 g/10 l.

Bioferm AromaticSaccharomyces Cerevisiae var. Cerevisiae.Yeast specially selected for the production of more aromatic wines. Produces more esters, aroma components and glycerine than other yeasts. Alcohol tolerance : 15% vol. Wide temperature range : 10-30 °C. Improves malolactic fermentation through a rapid autolysis of the yeast cells at the end of the fermentation. 4007 Malolactic Wine Culture Malolactic culture with the Leuconostoc Oenos ER1A and EY2D strains. Zymex Color Special multi active enzyme (pectinase, cellulose and hemi-cellulose activity) in powder to extract more pigment and aroma from red fruit and grapes. Free of depsidase activity (prevents too much tannin and colloidal material being ex-tracted). Best kept in the refrigerator.Dosage : 4-8 g/10 kg of fruit or must at 20 °C with a contact time of 12 h. Add immediately after the fruit has been crushed.

Zymex Aroma Special multi active enzyme (pectinase, arabinase and beta-glycosidase activity) in powder for more aromatic wines and distillates. The arabinase and betagly-cosidase activity releases aromatic components, bound to sugars, from the fruit/grapes. This results in more aromatic wines/musts. Can also be used in distilling. May lead to a slight loss of colour. Best kept in the refrigerator.Dosage : 4-8 g/10 litres of wine, to be added at the end of the fermentation.

Ingredients :• 8 kg of washed white cabbage• 80-120 g of salt• Optionally ¼ litre whey or fresh buttermilk• According your personal taste: 3 table spoons juniper berries, caraway, 1 table spoon of dill and/ or kummel• Optionally 3-4 sour apples cut in parts.

PreparationHygiene is very important. Not only the vegetables have to be washed thoroughly, the pot and lid as well. The lead-free pottery is very easy to clean. Clean the pot and lid on the in- and outside with a brush and rinse well afterwards, then leave it to dry. The pot hardly takes in any water so you don’t need to worry about mildew. The material of the pot acts neutral towards the vegeta-bles.

Put the cut cabbage, mixed with the herbs, apple slices and salt into the pot, layer by layer. Press firmly. Fill up the pot for 4/5 and cover the up-per layer with the washed cabbage leafs. The vegetable juice needs to be 4-5 cm above the cover stones. If you don’t have enough vegetable juice you can add salted water (ca. 8-15 g of salt per litre of water). This water needs to be boiled first and then brought down to about 300 °C (lukewarm). Close the pot airtight by pouring water into the gutter of the pot and then placing the lid in it. Now put the pot in a warm room for 2-3 days (ca. 22 °C) so that the malolactic fermentation can start. After that decrease the room temperature (ca. 15 °C) for 2-3 weeks. Finally decrease the temperature till 4-8 °C and leave the pot for another 4-6 weeks. Dur-ing fermentation you need to watch the water in the gutter. Add water

should it evaporate. After the required weeks the con-tent is ready for consumption. Only take the amount of cabbage that you need at that time. If the veg-etable is too sour you can add some fresh vegetables, this will soften the taste substantially.

A few important instructions :- Everything needs to be thoroughly cleaned : the vegetables, the sauerkraut pot and lid, the cover stones.- The juice of the vegetable needs to be 4-5 cm above the cover stones.- Watch the water in the gutter carefully, add water should it evaporate.- Do not remove the lid the first 2-3 weeks of the fermentation process.
