The description of fish is presented in a systematic manner (their families, genera and species). For convenience in using the handbook, an alphabetic index of the scientific and common names of fish is also given. The handbook consists of two sections: the first is a description of cartilaginous fish and the second of bony fish. The handbook describes 452 species of fish belonging to 91 families and includes diagrams, common and scientific names, commercial significance, area of distribution, size parameters, weight proportion of individual body parts, chemical composition of meat and other
parts of the fish body along with a brief assessment of the organoleptic properties of fish meat and recommendations for processing and consumption. However, in the descriptions of less known fish, in the absence of required data, some of this information could not be given. In preparing the handbook only those names were used which could be found in local literature on fish technology. The handbook indicates whether a particular species is a commercial fish or is only incidental in the catch. However, in some cases this information has not been given as these species have not been studied in detail and their commercial value is undetermined.
