Customer Appreciation Our mission includes broadening your knowledge of beer and wine styles, developing and broadening your fermentation your fermentation techniques, and introducing new products and techniques as well as the fun stuff. Our monthly Customer Appreciation events are designed to assist in attaining these goals. The first hour is social and community building followed by a mini talk or demonstration. Discussions and demonstrations are often lead by members of the Bacchus & Barleycorn team. Sometimes we have guest presenters. If there is something you'd like to share or discuss, just let us know. Your suggestions for presentation and demonstration topics are encouraged and your feedback is always encouraged. At the June event, Chelsea will be sharing some of her experiences as a newbie and answering newbie questions. If you know Chelsea, you know it will be entertaining. In July Bill Fullerton will be leading a blind Pinot Noir tasting. Should be educational and fun. Matt Metzinger created a DIY carboy cleaner which he will demonstrate and share with you how to make your own. Mark your calendar for the next two events. Fruit Wine Making, Saturday, July 29 - 1:00-4:00Summer is the time for a great variety of fresh fruits and what better to do with them than transform the fruit into wine. During the seminar we will be making a batch of fruit wine, demonstrating fruit preparation, recommended tests and balancing the wine. We will discuss the necessary equipment, the fermentation process, clarification, aging, bottling and sanitation. $20.00 per person

Introduction to Brewing, Saturday August 12, 1:00-3:00This seminar will demonstrate just how easy it is to get started homebrewing. We'll be making a one gallon batch of beer using specialty grains and extract. The process is the same for a five gallon batch but quantities are just larger. We'll be discussing sanitizing, equipment, what we are doing and why during each step of the process. $20.00 per person

Making Quick Cheeses, Saturday August 26, 1:00-3:00Mozzarella is so fast to make that we'll be sampling it before the conclusion of the seminar. While we are making the mozzarella, other soft,

quick and easy cheese will be discussed. Quirk or Creme Frache anyone? Cheese making equipmentand procedures will be demonstrated and discussed. $20.00 per person

All Grain Brewing, Saturday, September 9, 10:00-3:00We will be making a batch of all grain beer discussing the process each step of the way. Topics to be discussed will include different mashing techniques, equipment requirements for each, what's happening during the mashing process, sparging and on to the kettle for the boil. $25.00 per person

Tips & TidbitsGerman Beer Classifications for Tax PurposesWith all the beer styles made in Germany, Munich Helles to Kölschto Oktoberfest, Alt, Munich Dunkel, Bock and more, the

German tax collector list only four, none of which have anything to do with the color, flavor or strength of the beer.

Unlike here, German breweries pay tax on the extract strength of the wort. The extract strength means the nonwater compounds found in the wort.They are measuring the malt sugar, proteins, hop oils, minerals, vitamins, tannins, anything that leaches out of the grain and hops during the mash and boil. The four classifications are: Simple Beer 2-5.5% extract strength; draft beer 7-8% extract strength; whole beer 11-14% extract strength; strong beer 16-28% extract strength. Check the scale. You'll notice several gaps. Thereis no 5.6-6.9% 8.1-10.9% nor 15%. Do you suppose that means German brewers can't make a beer with 15% extract or they just don't have to pay tax on it?

There is no direct correlation between the extract strength of the wort and the alcoholic strength of the beer. There are things in solution in the wort that are not fermentable but contribute to the body of the beer. In most beers about 1/4 to 1/3 of the extract in the wort is converted by the yeast to alcohol. So a 12% extract beer will produce a 3-4% ABW or 3.5-5% ABV beer.
