Avial is a traditional south Indian recipe and is prepared in many ways . The combination of vegetables used also differs and so one can use their comfortable choice while selecting the vegetables. I learnt this from my mom who is an expert in making avial. Preparation time:15 minutes |Cooking Time: 20 minutes | Serves 4 INGREDIENTS: Normally veggies like carrot,beans,potato,rawbanana,yam,drumstick,chow chow,white pumpkin,snake gourd , green peas are used in AVIAL. METHOD:If you are using peanuts soak it an hour before and pressure cook it with little salt, drain the water and keep it aside. Cut the carrots and chow chow into cubes and beans into1/2 inch size. Steam all the veggies in a pressure cooker for 15 mins or cook it till one whistle adding a little salt to it.Add the peanuts to it.

If you are adding white pumpkin(ashguard) or drumstick cook it seperately.Grind the chillies,coconut and jeeragam into a fine paste using a mixie.

In a pan put all the cooked veggies and add the coconut paste to it and mix it carefully to get an even coating and at the same time take care the veggies shouldnt get mushy.Bring it to boil. Switch off the gas and add the coconut oil to it and mix well.Transfer it to a serving bowl.

Add the curd at the time of serving , mix it evenly with the veggies and garnish with fresh curry leaves.

Enjoy avial with rice.
