In our Rajah & Tann Asia Food Guide series, our lawyers are delighted to share with you their favourite dishes in the heart of the cities where we operate and give you a taste of the delightful food the region has to offer.

Singaporean cuisine greatly reflects its ethnic diversity and international outlook, with its local specialties bringing together the influences from different cooking traditions. From Indian and Malay to Chinese and European cuisine, visitors will always find a perfect match. Singapore not only offers an impressive diversity of cuisine but also its own original creations and specialties. The Chilli Crab for example, was invented in 1950 by a local chef and is a seafood delicacy dear to many Singaporeans’ hearts.

Singapore, whilst already having so much to offer to eager foodies, remains most receptive and keen to offer its platform and introduce to its audience more culinary delights – it has hosted many successful international gourmet events and food fairs.

1. GRILLED SATAY“The grilled meats are done to stunning perfection, just slightly charred on the outside but retaining the juicy succulence of good quality meat. The accompanying satay gravy is a harmonious blend of subtle spices with a peanut base, whipped together to provide the perfect match with the meat skewers."

5. CHILLI CRAB“Chilli crab, Singapore’s very own creation, is served on a hot-bed of thick gravy which is spicy, savoury, sweet and sour, all at the same time! Although man tous are popular, I simply deshell the crab and pour the gravy over my bowl of rice."

3. CHICKEN RICE“The chicken has a firm silky texture, and the sauce was nice and garlicky. The dish is simple but has a great flavor. This is my son's favourite chicken rice."

FRIED CARROT CAKE“This carrot cake is crispy on the outside but soft and wobbly on the inside, with each mouthful revealing a somewhat charred chunk of rice cake and radish which melts in your mouth. The “black” version is finely balanced with the dark sweet sauce that is delightful to the palette. Some like it white, some like it black. Others (like myself) cannot quite decide and end up ordering one of each!"
