Ingredients (serves 4)4 baking potatoes1 lb beef short rib

2 egg yolks1 1/2 c all purpose flour

3 cup red wine1 carrot 1 onion

1 bay leaf2 sticks celery2 cloves garlic

2 cups demi glace 2 oz. shaved Parmesan cheese

3 oz. buttersalt and pepper to taste

MethodBegin by setting an oven to 325.

This recipe takes time so you will need to devote a good part of the day to getting it right.

Start by heating a large deep pan to braise your short ribs in. Rough chop the carrots, onions, garlic, and

celery then begin searing the short ribs on each side to form a crust. Add the chopped vegetables along with the bay leaf, wine, and demi glace.

Bring to a boil the braise in the oven at 325 for three and a half hours. At the same time allow your potatoes to bake in the oven for two hours.

When they are done, begin to boil a pot of water, then split the potatoes with a knife and push the inside of the potato out leaving the skin behind. Dust a large flat surface with the flour, place the potato on the flour, and mix the egg flour and potato together with your hands and kneed like dough.

When you have a nice, uniform ball of dough, cut into four equal pieces, roll each piece out into a long tube and cut into one inch pieces. When this is done cook the gnocchi in the boiling water for two minutes. When they are done

cooking place them directly into an ice bath. Strain the gnocchi and hold in the fridge until the short rib is done.

When the meat is done remove it from the liquid and strain all the vegetables out of the liquid. Heat the butter and 1 cup of water in a sauté pan. Once it boils and becomes a

ARIES (Mar. 20 - Apr. 20) It may feel like you are ready to burst forward. It may seem that everything is lined up for you to make your move. However, you will have to wait a smidge longer. I know you hate the waiting, yet it will be worth it. Delays are in your favor so do something else instead -- and wait.

TAURUS (Apr. 20 - May 21) Stay focused on the goal and allow the details to unfold in their own way. Your job is to

be clear about the result you want. The way things work out will not go according to plan, but this does not mean that you will be denied anything. Trust and stay focused on the goal.

GEMINI (May 21 - June 22) Many, many ideas may be rolling around or even bursting into your mind these days, however, with your ruler Mercury retrograde this is a time of gathering those ideas rather than acting on them. Now is a time of catching a wave of inspiration and formulating ideas, the time to do something about them is coming.

CANCER (June 22 - July 23) I know it would be easy to give up, to throw in the towel and just sit this one out. But you need to stay in the game. There are still passions to pursue and choices to make. Don’t sit on the couch until you get over it, jump on the energy regardless of where it takes you.

LEO (July 23 - Aug. 23) It is all about the truth this week. Don’t be surprised if someone tells you something you had no idea about and don’t be afraid of revealing a truth that others haven’t a clue about. Don’t be hasty. Do use this time to express yourself, your whole self, and speak up.

VIRGO (Aug. 23 - Sept. 23) Time for some finishing up. Mars has been in your sign, so getting things done shouldn’t be a problem. You do want to prioritize and remember to take care of the old stuff before you run off with something new. Make a list (your favorite!) and finish what needs to be finished.

LIBRA (Sept. 23 - Oct. 23) It is all about priorities. It will be easy to get off track this week, so make sure your priorities are clear in your mind. Don’t worry that if you choose from a list of priorities, you will end up only doing the boring stuff. There is so much energy around, you will find the joy even -- or especially -- in what and how you prioritize.

SCORPIO (Oct. 23 - Nov. 22) You can have peace of mind this week; all you will have to do is choose it and believe you can have it. Make choices based on what will enhance your peace of mind and allow the other stuff to fall away. You are safe and it is all going to be okay.

SAGITTARIUS (Nov. 22 - Dec. 21) Surround yourself

with the people you love and take advantage of the help that is offered. Boldly ask for help when you need it. The people who love you want to help, they are just waiting for your permission. Open yourself to the love that is around you.

CAPRICORN (Dec. 21 - Jan. 20) Being authentic is your job this week. Remember that the authentic self does not make its choices from guilt, duty or obligation. Strip these away and find your authentic voice. You may find you actually want to do some of the things others are trying to guilt you into.

AQUARIUS (Jan. 20 - Feb. 19) Magical week is at hand and your job will be to embrace the little magical moments along the way. Keep on talking and know that anything can happen and probably will. Uranus your ruler is very active this week and it makes the possibilities endless. Look for and stay open to the magic.

PISCES (Feb. 19 - Mar. 20) Time for some emotional renewal. Take a nice long bath, or find a pool and go swimming. This is the week when you can melt off all the old energy and find yourself refreshed. Do some little thing that will thrill your soul and see how far it takes you.

Is he the most talented composer of all time?Many experts think so. The German born Johann Sebastian Bach

was born to play music: his father and uncles all played, and as a youngster he mastered the violin and harpsichord and later became proficient on organ and clavichord.

He won fame as a musician but his compositions were not received with as much enthusiasm. That was partly because Bach was wildly inventive, constantly incorporating new rhythms and forms from other countries and filling his melodies with textures and depths unfamiliar to the ear.

Bach, also a talented singer, served as director of music to Leopold, but he suffered a combination of maladies in 1749, and his health declined rapidly. He died in 1750.

Decades later, Bach’s compositions enjoyed a revival; the thematic detail, structural depth, and engaging drama prevalent in his best works proved to be enduring beyond his years.

One of the first of the new breed of German composers to champion Bach became a crucial bridge in the transition between the Classical and Romantic eras of music. His name was Ludwig van Beethoven.
