INGREDIENTS • chicken breast, cooked and cut into small pieces

• canola oil • 1 large red pepper, chopped • 1 clove garlic, crushed • 1 medium white onion, chopped • 1 cup rice • 3 cups water • 2 cups chopped mixed vegetables (carrots, peas, beans) • 1 chicken bouillon cube • 1 packet of seasoning with saffron • Salt to taste

INSTRUCTIONS• Place the oil in a large saucepan over low heat.

Saute the chopped peppers, garlic and white onion and stir until they turn golden brown color.

• Make the cups rice, stir well is important. • Add 3 cups water, chopped vegetables, chicken breasts, cube chicken bouillon, sazón and salt to taste. Stir and cook over medium heat for about 15 minutes or until rice is dry. • Once the rice has absorbed all the water cover the pan and cook over low heat for 10-15 minutes until rice is tender.
