2011 Fall Arts Festival Wines Have Arrived

Chef Michael Burke from the newly redesigned Garage restaurant (formally Burke’s Chophouse) in downtown Jackson, Wyoming shares his BBQ sauce recipe. Smother some chicken, ribs, or brisket with this sauce and pair with our $20 red wine, the NxNW Cabernet Sauvignon.

Thousands of art enthusiasts are drawn each year to experience the diverse artwork and breathtaking natural surroundings that make Jackson Hole a leading cultural center. The flavors of this unique South African grape varietal are complex and exciting with ripe plum and fruitcake all beautifully integrated and then finished with subtle oak for a lingering aftertaste. Lovely with rare beef, barbecued lamb and casseroles. This versatile lighter style of Pinotage is also a lovely combination with spicy chicken.

Intense red color with purple hues. Aromas of ripe red fruit with notes of dried fruits. Great structure, round and with a long finish in the mouth. We recommend popping the bottle thirty minutes before

consumption and serving slightly below room temperature. Our favorite pairings are a flank steak or a lamb cassoulet, though it goes surprisingly well with tandoori chicken. As you drive into Cafayate in the Calchaquí Valley, you encounter a combination of red rock outcroppings, candelabra-shaped

cacti, and sprawling vineyards. Just outside this small, picturesque mountain town, you will find a small, new winery with a panoramic view built on a hillside covered in cacti, dry rock and sand, and now vineyards. Domingo Molina is a family winery managed by three brothers (Osvaldo, Gabriel &

Rafael Domingo) who grew up in Cafayate, and their winery represents the second generation of Domingo brothers making wine together. The name Hermanos translates to “brothers”. Their high

altitude vineyards are located between 5,300 and 7,300 feet above sea level and are fed by the ultra-pure water that percolates through the mountains just above. This extreme altitude and 340 days of

sunshine yield wines with intense aromas and soft tannins which are a pleasure to drink.

A medium to full bodied red wine, with good complexity of aromatics and a supple mouth-feel. More nuttiness than outright oak on the bright nose, with some different red and darker fruits appearing, as well, a consistent toasted granola or cereal profile (consistent with past vintages). A slight meatiness (pleasant really!) consistent with warm-hot fermentations appears, while a toasted granola or cereal, fruit, and some spice quickly become more dominant. Slightly rustic tannins on the dry finish with an

integrated, not outright acidic, supple balance.

The wine was aged in French and Hungarian (20% new) barrels for approximately 8 months. The aging period was carried out with an extended period on the fine lees to both soften and protect the

young wine. A fairly low level of SO2 was maintained throughout this period to aid in the development of secondary and tertiary aromatic and flavor components. After 8 months the wine was clean-racked to tank, where small quantities of Grenache and Syrah were blended to the Counoise, before aging

another two months in barrel prior to bottling.

Recipes From the ValleyLengua (Beef Tongue)Recipe from All Recipes.com

Ingredients • 1 beef tongue

• 5 fresh green chile peppers • 1 tablespoon olive oil

• 1 white onion, sliced thinly • 4 cloves garlic, minced

• 4 small tomatoes, halved and sliced • 2 (15 ounce) cans whole kernel corn, drained

• Salt to taste

RecipeWash tongue and place in a large pot of water to cover. Simmer until no

longer pink, about 50 minutes per pound of tongue. Remove from water and let rest until cool enough to handle. Peel skin from tongue and trim gristle.

Cut into 1/4 inch slices.

Place whole peppers in a skillet over medium-high heat and roast, turning, until all sides are charred. Let cool, rub off skins. Remove stems and seeds.

Heat olive oil in a large skillet over medium heat. Saute chile peppers, onion and garlic until onion is translucent. Stir in tongue and continue to cook until

tongue is brown, 5 to 10 minutes. Stir in tomatoes and cook until limp, 5 minutes. Pour in corn and heat through, 2 to 5 minutes. Season with salt.

Serve immediately
