Chef De Portemont trained under a number of world-renowned chefs in restaurants such as the Michelin starred Restaurants ‘Chez Bruneau’, ‘L’Ecailler du Palais Royal’ and ‘La maison du Cygne’ before joining the various cruise lines. His cruise line experiences
include Silverseas, Cunard and the top notch 5+ starred Seabourn cruise line which brings an impressive, wide-ranging culinary background. During that time Chef De Portemont worked together with celebrity chefs such as Charly Palmer and Thomas Keller
from ‘Aureol’ and ‘French Laundry’ in the USA.
Chef De Portemont specializes in combining authentic French - Belgian cuisine with contemporary trends to please even the most particular palate. Though it is not just the cuisine that will receive an invigorating boost, the entire food and beverage division will be focused on enhancing the menus including the redesign and revitalization of all catering and banquet menus. In this endeavour, Chef De Portemont
will be supported by the newly appointed Sous Chef Catering, Axel Van Gils who brings an impressive, wide-ranging culinary background that included experience working at well-known restaurants such as ‘Kleine Bareel’, the Michelin starred ‘ ‘t Zilte’ and Restaurant ‘Gusto’.
