This is not an all-inclusive cookbook; it only includes recipes that I think my family would like. These are only representative sample recipes, chosen to fit my family’s tastes. YMMV. I’m trying for no exotic ingredients like brand name protein powders, nutritional yeast, specialty flavoring syrups, sugar free jellos or puddings, etc. I do use some special flavoring extracts, but they’re not required.

Chapter 1: Basics

Introduction All recipes assume that you’re using a Dash mini waffle maker, and make 2 chaffles, unless stated otherwise in the recipe. Any waffle maker should do, but you may have to adjust the recipe for more batter. You can use other waffle makers, but sometimes the results aren’t the same. The Dash Mini is magic.

Recipes were chosen with an eye toward clean keto-friendly eating. Some of the recipes, particularly in the Desserts section, may contain some ingredients that are not keto-friendly, but fit in with low carb eating.

Tips and Tricks Non-chaffle tip: store your baking powder in the freezer. That way it won’t go bad and expire before you have a chance to use it all.

Shred a two pound block of cheese with food processor then add 1-2 TBS almond flour or coconut flour to the shredded cheese in a zip lock and toss it. The shredded cheese won’t stick together.

To make a fluffier chaffle, beat the egg whites until they’re frothy. Fold in the beaten yokes and other liquid ingredients, and then add the dry ingredients.

Make sure the waffle iron is hot before you pour in the batter. On the Dash mini, the light on the top will go out.

You can add a bit of grated cheese to the bottom and top before cooking for extra crunchiness if you like. You can also use a slice of cheese (Ultrathin works best) to the top and bottom of the egg layer. Let the cheese on the bottom melt a bit before you add the egg

If it’s still not crispie enough, cook it longer.

To substitute cream cheese for shredded cheese, put in 1 oz cream cheese for every 1 egg. This gives a more bread or cake like texture.

Add a tablespoon of butter for extra richness. It also makes them a bit more crispy.

Put about a tsp of mayo in your chaffle batter.

For an amazing flavor, add 1 Tbsp bacon grease to your chaffle batter.

Each Chaffle is about 1/2 egg and 1/4 cup (or less) cheese. Put 2-3 Tbsp batter in your Dash mini waffle maker. Don’t put too much in, or it will overflow. Use slightly less if the recipe includes baking powder. You can also use a medium ice cream scoop.

For a smoother texture, put the ingredients into a blender. Blend away until the mixture is pretty thick and the cheese is not chunky.

If you want to replace almond flour with coconut flour, it’s 3 parts almond flour to 1 part coconut flour.

Substitute 2 oz cream cheese for ¼ cup shredded cheese. Cream cheese has more moisture, and won’t give quite the same result.

For more fiber, add ground flax seeds, chia, or Psyllium husk powder. You can also add oat fiber (not flour).

To decrease the eggy flavor, try one of these: Use room temperature eggs Use only egg whites Add a drop or two of vinegar, lemon juice, or other acidic juice Have all your ingredients at room temperature add spicing or seasoning add some almond flour add 2tsp psyllium husk powder

Unused batter can be stored in the refrigerator for 2 -3 days in a tightly sealed air tight container. It’s probably better to make them all at once and freeze the unused ones. Frozen chaffles are good for 4 weeks.

Cool chaffles on a cake cooling rack, not on a plate. If you let the cool on a plate, they might get soggy.

Once chaffles are cool, you can put waxed paper or parchment paper between them, put them in an air-tight bag, and freeze them for later use. Reheat in a toaster oven.

Reheat in air fryer at 400 for 2 minutes, or put back in the hot waffle maker to crisp it back up. Don’t microwave chaffles; they turn tough in some recipes.

If you do choose to microwave your chaffles, wrap in a paper towel or otherwise cover it. This helps keep the moisture in.

To clean your Dash mini devices, wet a paper towel and, while the device is still hot, put it in the device. Unplug the device. When it’s cool, use the towel to wipe off any residue. You can also use a soft toothbrush to remove any stuck particles, and a Q-Tip to get between the teeth in the waffle maker.

You can also use a small damp foam paint brush to clean the iron, rather than a toothbrush or Q-tip as an option. Just be certain the iron is completely cool, or the foam may dissolve.

Basic Chaffles

The Original Chaffle Mild Cheddar Shredded Cheese (or mozzeralla) ¼ to ½ cup and 1 large egg

Variations On A Theme Note that these are only ideas. Feel free to mix and match, and to experiment with other ingredients.

1 egg, 1/4 cheese (Mozzarella gives a neutral tasting chaffle, good for adding seasonings or flavor to your batter), 2 tbls almond flour, 1/2 tsp baking powder.

1 egg, 1 tbsp almond flour, 2 tbsp mozzarella, ¼ tsp baking powder

1 egg, 2 oz cheese, and 1/4 cup of ground pork rinds.

1 egg, 1Tbsp ricotta 1Tbsp almond flour ¼ TSP Baking powder (or boursin, or goat cheese)

You can also add 1 Tbsp cream cheese per egg to any recipe for a softer, fluffier chaffle.

1 egg, 2 oz. Cream cheese, 2T Almond flour, 1/2 baking powder, add spices cinnamon and vanilla for taste.

1 egg, 2oz cream cheese, cinnamon and vanilla flavoring

1 egg, 1oz parmesan cheese and 1/2 oz pesto sauce

1 egg, 1/2C shredded mozzarella cheese, 1tsp mayo, 1T almond flour, 1/4tsp baking powder, and salt/pepper/garlic powder/dried parsley to taste

1 egg, 2 Tbsp shredded cheese, 2 Tbsp almond flour, 2 Tbsp Swerve, 2 Tbsp melted butter. Add water if it seems too thick.

To replace an egg, 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before.

For onion buns, sprinkle dehydrated onion on the waffler plate before you put the batter in.

Perfect Breakfast Waffles 2 large eggs 2 oz softened cream cheese 3 tbsp butter, melted ½ tsp baking powder Makes 6 mini-waffles. Use a blender for smoother batter

Avocado Chaffles Add in 1 Tbsp mashed avocado to any basic recipe.

Cream Cheese Chaffles 2 ounces cream cheese 1/4 C mozzarella cheese 1 egg Splash of vanilla extract Sprinkle of cinnamon

Bread-Like Chaffles 1 oz softened cream cheese 1 egg 1 Tbsp almond flour ¼ tsp baking powder pinch garlic powder

Cottage Cheese Chaffles 8 eggs 1 c cottage cheese 1/2 tsp salt 8 tsp almond flour Mixed with stick blender, at this point can sit in fridge. For each C of batter add ¼ tsp baking powder. A little more in the large iron, a little less in the mini. Under cooked baking powder isn’t good. These are very delicate, crispy. Put berries and walnuts

“Fresh Baked” Flavor Add a teaspoon of active yeast to any of the basic recipes.

90 Second Bread Chaffles 3 Tbsp almond flour 1 Tbsp melted butter ¼ tsp baking powder 1 egg 1 Tbsp chia seeds, optional

High Fiber, High Protein Chaffles (hemp hearts and chia) 1 egg beaten 1/2 tablespoon hemp hearts 1/2 tablespoon chia seeds 1/2 tablespoon almond flour 1/2 cup Mexican blend cheese (or other) Let rest a little; the chia seeds will swell up and thicken batter. Then cook on waffle maker.

Portabella Chaffle Season the portabella mushroom, and add butter to the top and bottom of the mushroom. Place it in the waffle iron, and cook until the stem stops. Top with an over easy egg.

Flavored Chaffles Tips Add a tablespoon or more of marinara sauce, Alfredo sauce, etc in the batter before you make it.

If using flavoring extracts, let the batter sit overnight to develop the best flavor.

When you get your extract, rather than takaing the paper off the top of the bottle, cut a slit in the paper, for better control while adding the extract to the batter.

You can also use Jordan’s Skinny Syrups for flavoring, but make sure to get the ones sweetened with Swerve, not sucralose.

Stove Top Stuffing Chaffles 1/2 onion finely chopped celery salt just a sprinkle 1 tsp of poultry seasoning 1 cup of mushrooms finely chopped little bit of parsley for color 4 eggs 1 cup pizza blend (or whatever cheese I guess).

Cornbread 1 Ingredients • 1 egg • 1/2 cup cheddar cheese shredded (almond flour optional for a more cornbread texture) • 1/4 Baking Powder • 1/4 tsp corn bread extract • pinch salt & pepper Directions ⁃ Preheat the mini waffle maker ⁃ First whip the egg. ⁃ Add the remaining ingredients and mix it until it’s well incorporated. ⁃ Add a sprinkle of shredded cheese to the waffle maker for 30 seconds before adding some of the mixture. Sweet Hamburger Bun Chaffles 2 eggs ½ - 1 Tbsp Swerve 3 Tbsp almond flour 1/2 cup mozzarella 1/4 tsp baking powder 1 tsp Penzeys Sandwich Sprinkle *Extra mozzarella for sprinkling

Add sesame seeds on top if desired. Best on the waffle maker; doesn’t work well on the griddle.

Blend all ingredients in a blender, or food processor, until very smooth. Sprinkle bottom of hot waffle iron very lightly with mozzarella. Melt a little, add batter, then sprinkle again with mozzarella. This fills my large, 4 square waffle iron, or makes 4 in the Dash mini.

Chaffle Bagels (Rachael Dee’s Stupid Easy Bagels) Ingredients 4 cup shredded cheese (mozzarella, cheddar, colby jack, parm etc… mix and match) 4 large eggs 2.5 cups almond flour (I tend to go a bit more on the AF. We love THIS) 1 tbsp baking powder (We use THIS) OR 1/2 TBS of Baking powder for a super fluff! Seasonings to your liking (Garlic, salt, everything but the bagel seasoning!)

Directions Mix all dry ingredients first THEN add eggs! Flatten mixture evenly into tins (I use a sandwich bag to keep my hands clean) Bake for 10 minutes if you want then slightly underdone to pop in the toaster Bake for 12ish minutes for a more crisp texture

Store in air tight container for up to a week in the fridge!

Brulled French Toast Chaffle 1 large egg 1/8 tsp baking powder 1/4 tsp cinnamon 1/2 tbsp granulated Swerve or monkfruit 1 tbsp cream cheese 2 tsp brown sugar substitute

Place all ingredients except for the brown sugar substitute in a blender, making sure the cream cheese is closest to the blades. Blend until smooth and slightly foamy.

Preheat your Dash. When the light turns off, open it and sprinkle 1/2 teaspoon of the brown sugar substitute directly onto the iron. Pour half the batter onto the iron, then sprinkle with another 1/2 teaspoon of brown sugar substitute. Close the iron and cook for 3-5 minutes, until golden brown. Remove from the iron and repeat with the remaining ingredients.

Keto Ranch Dressing Mix 2 tablespoon Dried parsley 1 tablespoon Dried chives 1 tablespoon Powdered sugar (I used SF Sukrin Icing Sugar) 5 teaspoons Granulated garlic 2 teaspoons Onion powder 2 teaspoons Lemon pepper 1 1/2 teaspoons Dried dill 1/2 teaspoon Pink sea salt 2 packets Tru Lemon (1/8-1/4 tsp citric acid)

Measure all ingredients into a mortar and pestle and work ingredients into a fine powder. Alternately, use an electric coffee grinder to powder the ingredients.

Store in an air-tight container.

Makes 1/3 cup of ranch seasoning powder. Serving size is 1 teaspoon. NET CARBS: 0.98 g per teaspoon.

Stuffed chaffles, fried pickles, and other delights Layer a scant tablespoon of batter over the bottom plate of the waffle maker. Close the lid for about 30 seconds. Dry the pickle slices. Open the lid and layer sliced pickles over the batter. Spoon another scant tablespoon of batter over the pickles and cook as usual.

Low Carb Wraps Use the dash mini griddle for these, or make 5 inch circles on a regular griddle.

Ingredients 4 ounces plain pork rinds, crushed (113 g) 1/8 teaspoon baking powder 1/4 teaspoon salt optional 4 ounces cream cheese, softened (113 g) 6 large eggs*** (cold) see note 1/2 cup water (113 ml/ 118 g)

Directions Food Processor Method: Place the pork rinds in a food processor and process until they become a fine powder. Add the baking powder and salt and give it a little pulse to mix. Add the eggs and cheese and process until smooth and thick. Add the water and blend until all of the ingredients are completely incorporated. Pour into a bowl and let sit for 5-10 minutes until the batter thickens to the consistency of cream of wheat.

Hand Mixer Method: Put the pork rinds into a large zip-loc bag and crush in batches with a rolling pin or the smooth side of a meat mallet. They should be completely pulverized into a powder. Place the pulverized pork rinds into a medium bowl and stir in the baking powder and salt. In a smaller bowl, blend the cream cheese with one egg until combined and smooth. Add another egg and mix. Add the egg and cheese mixture to the pork rind crumbs and add the rest of the eggs. Blend with the hand mixer until smooth. Add the water and mix until thoroughly combined. Let the batter sit for 5-10 minutes until the batter thickens to the consistency of cream of wheat.

Directions

Preheat a pancake griddle over medium heat. When hot, oil the griddle and then gently wipe-off the excess with a paper towel or spray with cooking spray.

Using a 1/4 cup measure, pour the batter onto the skillet and spread into a 5 inch circle with the back of a spoon. Make it as thin as possible. I dip my spoon in water to prevent it from sticking to the batter. Having a cup of water nearby helps. Cook like you would a pancake. NOTE: You will need to thin the batter as it sits. Add 1 tbsp at a time as needed.

Keep in the refrigerator up to a week or freeze with a piece of waxed paper between each wrap.

Each wrap is 0.8 carbs or 1.6 carbs for 2 wraps. (There is no fiber in the recipe.)

Vegetable Chaffles

Zucchini Chaffle

Dairy Free Zucchini Chaffles 1 small zucchini (1/4 cup shredded) 2 large eggs 3 Tbls. almond flour 2 Tbls. coconut flour 1/8 tsp. salt 2 Tbls. melted coconut oil (I used butter flavor) or butter 2 Tbls. Cream cheese

Wash zucchini, shred zucchini, (no need to peel it) put in bowl. Squeeze zucchini with hands a little in the bowl to release the water in it. Let sit for at least 15 minutes

In another bowl, add eggs, almond flour, coconut flour, salt, coconut oil, and cream cheese. Hand mix with fork. This will be a little lumpy, as long as it doesn’t have big lumps it will work.

Drain Zucchini, place in towel and wring (squeeze) water out of zucchini.

Measure out ¼ cup of zucchini and add to the other bowl with mixed ingredients. Mix again until everything is mixed together well.

Heat waffle maker, spray with coconut oil spray. Put in at least 3 Tbls. (or 2 ¼ Large Soup spoons) Spread to even out, (but not too much). Close lid, let cook for at least 3 mintues. I flip the waffle, then cook until golden brown.

This mixture should make 4 chaffles.

Broccoli 2 eggs 1 Cup steamed riced Broccoli 1 1/2 Cup Cheddar cheese 1/2 tsp pink Himalayan Salt 1 tsp. Onion Powder 1 tsp. Garlic Powder 1/2 t. Black Pepper

Add a few tablespoons of Alfredo sauce for extra goodness.

Cauliflower

Basic Cauliflower Chaffles 1/2 cup riced cauliflower 1/4 shredded cheddar 1 large egg with half the yolk taken out 1 TBSP fine almond flour Salt and pepper Do the extra sprinkle of cheese on bottom. Spread mix on waffle iron and top with a little more cheese. Cook for 8 minutes.

Cauliflower Chaffles 1 10 oz bag of steamed rice cauliflower cooked 5 mins in micro 4 eggs 1 1/2 cup of mozzeralla & mexican cheese blend Chopped green onion and added other seasoning, mix together

Heat irons, spoon on just enough batter let cook a little before closing lid, let cook 5 mins. Flip to the other side for a little bit and remove. Makes eight chaffles.

Eggless Hash Browns Mix cooked cauliflower with butter mild cheddar salt, pepper and the " bagel" seasonings.

Put cheese at the bottom of the machine and let it melt and bubble til it starts to crisp up, then spoon the mixture in, not a lot, then more cheese on top, then close and cook. You can serve it with low sugar ketchup and hot sauce , or sour cream, green onions and bacon. Man does it hit the spot if you're missing crispy fried potatoes.

Savory Cauliflower Chaffles Ingredients 1 cup riced cauliflower 1/4 teaspoon Garlic Powder 1/4 teaspoon Ground Black Pepper 1/2 teaspoon Italian Seasoning 1/4 teaspoon Salt 1/2 cup shredded mozzarella cheese or shredded mexican blend cheese 1 egg 1/2 cup shredded parmesan cheese

Directions Add all ingredients into a blender.

Sprinkle 1/8 cup parmesan cheese into the waffle maker. Make sure to cover the bottom of the waffle iron as shown in the video.

Fill the waffle maker with the cauliflower mixture.

Add another sprinkle of parmesan cheese on top of the mixture. Make sure to cover the top of the waffle iron as shown in the video.

Cook for 4-5 minutes, or until crispy.

Makes 4 mini chaffles, or two regular full-size chaffles.

Cauliflower Latke Chaffles 1 cup raw riced cauliflower 2 eggs about 1 Tbsp ea dried chives and parsley about 1tsp ea garlic powder & salt about 2 tsp minced dried onion.

Pulse all in Magic Bullet or other high powered blender. It will get thick. It's ok to leave some cauli unprocessed, but not a lot.

Add about 1/3 c shredded cheese to pureed mixture. Blend well with a fork. Sprinkle some cheese on iron, then a scant tablespoon of cauli mixture. Spread out with spoon. Give it about 30 seconds before adding top cheese. Close iron. Be patient. Lots of moisture to evaporate. Once the steaming has reduced to a bare minimun, try to open iron. Don't force it. If it won't open, let it cook a little longer. Once it opens easily, gently coax from the bottom plate with tongs. It will likely crack around the perimeter. Top with sour cream

Cauliflower Potato Pancake Blend 2 cups of cauliflower and a quarter cup of heavy cream in with the standard chaffle batter.

Caulilflower (makes lots) 4 eggs 1 bag of riced cauliflower 4 oz shredded cheddar cheese 1 tsp salt 1 tsp baking powder 1Tbsp garlic powder 1 Tbsp dried chives 1 tsp dried parsley 4 tbsp almond flour

Makes approximately 10 chaffles.

Celeriac or Jicama Peel and grate a medium sized celeriac and press to drain excess water Put in a large bowl and combine with 100g of grated cheese Add a large spoonful of almond flour (optional but helps reduce moisture fom celeriac) Add a large handful of chopped chives and salt and pepper to taste Add 1 egg to bind Scoop into waffle plate and cook for 15 minutes

Carnivore Chaffles

Tips Make chaffles out of seasoned patties of raw ground meat such as ground chicken, breakfast sausage, and so on. Mix in a well-beaten egg to help the chaffles hold together.

These will take longer to cook than regular chaffles. Please make sure that the carnivore chaffles are thoroughly cooked by using an instant read thermometer before you eat them.

You can make a bacon chaffle out of pre-cooked bacon.

You can also take pre-cooked crumbles of sausage and mix them in with the chaffle batter.

Another possibility is to layer slices of cheese, a slice of lunch meat, and another slice of cheese to make a sandwich. Use regular slices, not ultrathin ones.

Chicken Chaffles 8 ounces cooked chicken thighs or breasts 2 large whole eggs (or equivalent in egg whites for lower fat) 1/4 cup broth or water 1/4 teaspoon baking powder salt, pepper and seasonings to taste (sweet or savory)

Directions

Place all ingredients (except baking powder) in the bowl of a food processor and process until smooth. Add baking powder and blitz (pulse) just to mix in.

Divide batter to fit your waffle iron.

Cook according to your machine guidelines. Mine cooked for 3-4 minutes. Cooking longer does not make it crispy, it is a light, bready texture, good for sandwiches.

If you want it crispy, you can oil the waffle iron or simply toast the waffles in a toaster oven.

Chicken Chaffles 2 2 lbs of ground chicken 3 eggs 1/4 cup heavy whipping cream salt pepper Seasonings to taste

Hand mix or use food processor. Take about 1/2 cup chicken mix and roll in crushed pork rinds. (I used half reg rings and half spicy rinds). Place on dash mini waffler and cook 7-10 minutes or until done. Makes 14 waffles

Coated Chicken Chaffles

Ingredients 1 1/2 pounds of ground chicken 3 eggs 1/4 cup heavy cream 1 tablespoon salt 1 teaspoon ground black pepper ground pork skins for coating

Directions Preheat waffle maker. Mix ground chicken, eggs, heavy cream, salt and pepper in food processor or by hand thoroughly. Meat mixture should feel loose and slightly wet. For large waffle maker scoop about 1-1 1/2 cups of chicken for mini waffle maker use 1/2 cup. Pat chicken into a patty shape, drop in pork panko crumbs, flip and coat opposite side. Slightly press coating into chicken. Place in waffle maker and cook according to waffle maker directions.

Golden Girls Keto Carnivore Chaffles Sauffles (aka Carnivore Waffles) 12 pasture raised organic eggs 1 lb clean raw pork breakfast sausage. Blend all into meat goo. pour into waffle maker, cook til golden brown!

Makes 12 full-size Sauffles

Pizza

Pizzas Crust 1 egg 3/4 cup of cheddar cheese 1-2 tbsp almond flour dash of garlic powder 1 tsp baking powder heathy dash of Italian seasoning.

Toppings: Pizza Sauce, ground Italian sausage and more cheese (mozzarella). I crisped the crust a little more in my countertop oven before topping. Then put them back in once topped for a few minutes on broil.

If you like a more crispy base for your pizza, put down a layer of cheese, then your batter, then another layer of cheese.

After the chaffle is made, put down a bit of cheese before you add the pizza sauce. This keeps the chaffle from getting soggy.

Fathead Pizza Crust 1.5 cups part skim shredded mozzarella 1 ounce full fat chream cheese|3/4 cup almond flour ¼ tsp Lawrys seasoned salt ½ tsp garlic powder 1 large egg beaten

Roll out dough between pieces of parchment paper or waxed paper Prick dough all over with a fork Bake at 425 degrees F for about 7 minutes Flip the pizza over then top with wht you’d like. Bake for an additional 5 minutes.

Stuffed Pizza Chaffles Put a tablespoon or so of your pizza sauce in the batter for the pizza crust. Layer some cheese and then about 1 tbsp of the batter on the waffler, and close the cover for 30 seconds. Then layer meat and another tbsp. of batter and some more cheese.

White Pizza Top a pizza chaffle with Alfredo sauce, then put broccoli florets, spinach, and/or other vegetables. Place a piece of cheese over it all and broil until the cheese melts.

Keto Alfredo Sauce 1 tbsp Butter 6 cloves Garlic (minced) 1 1/2 cup Heavy cream 1/2 cup Grated parmesan cheese Black pepper (to taste) Sea salt (to taste) Nutmeg (optional - to taste)

Melt butter in a medium saucepan over medium heat. Add minced garlic and saute for about 30 seconds, until fragrant.

Add the heavy cream. Bring to a gentle simmer, then continue to simmer for about 5 minutes, until it begins to thicken and volume is reduced by about 1/3. (Amount of time will vary depending on the size of your saucepan.)

Reduce heat to low. Gradually whisk in the Parmesan cheese. Keep whisking over low heat, until smooth. If using nutmeg, sea salt, and/or black pepper, stir those in, to taste. (If sauce is thicker than you like, you can thin it out with more cream.)

Gyros 1 egg 1/2 cup extra sharp cheddar 1tsp almond flour 1 tsp garlic powder 1/2 tsp italian seasoning 1/2 tsp baking powder a sprinkle of salt

Cook 4-5 min.

On each 1oz goat cheese 5-6 leaves of spinach 3 slices of salami or gyros meat 3 slices of pepperoni.

Spanakopita Chaffle 1 slice of thin cheddar on the bottom of the dash In a ninja blender - 1 whole egg A little fresh onion About a tablespoon some fresh dill chopped A spoonful of Parmesan

Mix in some squeezed frozen chopped spinach- about 1/4 cupish

Crumble up some feta

Onto the cheddar put half your spinach mix on top of that some crumbled feta Cook. Makes 2.

Chicken Pesto Chaffles Italian seasoning in the chaffle with a little garlic and Colby Jack cheese. Monterey chicken seasoning on the chicken breast in air fryer. Shred it then top with a little basil pesto and mozzarella cheese. Put under broiler to melt the top slice of cheese.

Chicken Parmesan Chaffle Chaffle Ingredients: 1/2 cup canned chicken breast or leftover shredded chicken 1/4 cup cheddar cheese 1/8 cup parmesan cheese 1 egg 1 teaspoon Italian seasoning 1/8 teaspoon garlic powder 1 teaspoon cream cheese, room temperature

Topping Ingredients:

2 slices of provolone cheese 1 tablespoon sugar-free pizza sauce like Rao’s sauces

Chicken Chaffle Fritters. Makes 10

Layer some with ultra thin colby jack slices, some with shredded cheddar, and some with no cheese layers to see which you like best.

Ingredients

1 lb chicken breast 2 large eggs 1/3 cup mayo 1 package ranch dip mix (or you could mix your own ranch seasoning) 2 TB parmesan cheese 1 cup shredded mozzarella cheese 1/4 cup chopped bacon (optional) 1/4 cup green onion (optional, I didn't have any sadly) salt/pepper to taste

Directions

Dice chicken into small pieces and place them in a large mixing bowl. Into the mixing bowl, add remaining batter ingredients. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight. Prepare waffle maker, layer thin layer of batter with cheese, or not, and cook for 4 minutes.

Salmon Patties Chaffles 1-2 eggs 1/2c cheese old bay seasoning to taste canned salmon (skin/cartilage removed) (can also use canned chicken or tuna) 1/2c chopped onion,or chopped green onion black pepper 1/4c almond flour.

Lobster Roll Chafles 1 egg and 1/2 cup Mozzarella cheese. Filling is 1 lobster tail diced with 2 Tbs of cream cheese.

Chaffled Crab Cakes 9 ounces lump crab meat, shell pieces removed 1/2 cup panko crumbs, plain or gluten-free (for Keto, use ground pork rinds) 1 large egg, beaten 1 large egg white 1 tablespoon mayonnaise 1 teaspoon Dijon mustard 2 tablespoons chopped chives 2 tablespoons minced fresh parsley 1 tablespoon fresh lemon juice 1/2 teaspoon Old Bay Seasoning 1/8 teaspoon paprika few dashes tabasco, optional 1/8 teaspoon kosher salt black pepper, to taste

Grilled Sandwiches Build your sandwich. Butter the bottom of the bottom piece, and the top of the top piece. Place in a hot skillet, and turn, until both sides of the sandwich are brown and crispy.

Use neutral cheese (mozzarella) for the outside and really good cheese for the inside.

Tomato Soup Chaffles ( It tastes like grilled cheese sandwich dipped in tomato soup) 1 egg 1/2 cup cheddar cheese 1T. Tomato paste 1 tbsp almond flour 1/2 tsp baking powder. Salt & pepper Blend/mixed together, I cook until all steam is gone or 4 minutes. The grill in skillet or griddle as you normally would for a grilled cheese sandwich...makes 2 pieces.

Egg Roll Chaffle Batter 4 egg whites beaten 8 tbsp almond flour 1 tsp baking powder 1 tbsp brown sugar Swerve 1 tsp toasted sesame oil

Mix any left over Egg Roll Bowl into the batter to make a mushy but not runny mix. Layer cheese, batter, cheese to make a crispy egg roll chaffle.

Faux Potatoes

Jicama Hash Brown Chaffle Ingredients 1 large jicama root 1/2 medium onion, minced 2 garlic cloves, pressed 1 cup cheese of choice (I used Halloumi) 2 eggs, whisked Salt and Pepper

Instructions 1) Peel jicama and shred in food processor 2) Place shredded jicama in a large colander, sprinkle with 1-2 tsp of salt. Ruben Sandwich Chaffles

Tips Grind 1 tsp of the caraway seeds before mixing it in with the batter for a stronger flavor. You can also toast the caraway seeds for a better flavor.

You can also add a bit of sesame oil. Add a bit of expresso powder for color.

Eggs Benedict (with Basil)

Ingredients

Chaffle 2 egg whites 1 t tomato sauce a few fresh basil leaves or 1/2 teaspoon basil a pinch of salt and pepper 70 grams mozzarella cheese, shredded

Benedict: 1 t olive oil 3 ounces prosciutto or ham 3 large eggs

Basil Hollandaise: 1 egg yolk 2 teaspoons white balsamic vinegar or lemon juice 2teaspoons water 4 fresh basil leaves, chopped 1 pinch salt 1/4 cup butter

Directions

Chaffle Brush oil on your waffle maker or spray with oil spray. Preheat your waffle maker. Set aside 42 grams mozzarella. Put the chaffle ingredients, including 28 grams mozzarella in a bowl. Whisk until well blended. For each chaffle: Sprinkle 7 grams mozzarella evenly over the bottom of the waffle maker. Let it start to cook for a few seconds. Pour about 2 tablespoons tomato-egg white mixture over the cheese. Measure 7 grams mozzarella and sprinkle it over the top of the tomato-egg mixture. Close the lid and let the chaffle cook. When the steam diminishes, check it. Remove if it's done or let it cook a bit longer, as needed. Put the cooked chaffle on a cooling rack. Repeat to make a total of three chaffles.

Benedict Warm the prosciutto in a small skillet. Cook the eggs however you like to eat them. Put the cooled chaffles on a plate. Top with prosciutto and cooked eggs.

Hollandaise Start the butter melting in a small saucepan on the stove. Put all remaining ingredients in the cup for your immersion blender or in the jar of your blender. Blend them until combined. When the butter is melted and bubbling, check it on an instant read thermometer. You're looking for about 220º. Pour the butter into a small measuring cup to make it easier to pour. Turn on the blender and very gradually drizzle the butter into the egg mixture. If the sauce is still a bit thin after all of the butter has been incorporated, continue processing until it's thickened.

Divide hollandaise over each benedict. Sprinkle extrabasil over all.

Krispy Kreme Copycat Chaffle

Ingredients 1 egg 1/4 cup mozzarella cheese, shredded 2 T cream cheese, softened 1 T sweetener 1 T almond flour 1/2 tsp Baking Powder 20 drops glazed donut flavoring

Raspberry Jelly Filling 1/4 cup raspberries 1 tsp chia seeds 1 tsp confectioners sweetener

Make the chaffles: Mix everything together to make the chaffles first. Cook them for about 2 1/2-3 minutes.

Preheat the mini waffle iron. In a small bowl, whip the egg with a fork. Add the shredded cheese to the egg mixture. Place half of the egg mixture in the mini waffle maker and cook it until it’s golden brown (about 4 minutes) While the mini Chaffle is cooking, add the Swerve Brown Sweetener and cinnamon in a separate small bowl. How to Prepare Cinnamon Roll Keto Mug Cake Put all the cake ingredients in a mug or ramekin and mix them well to get a smooth batter

Take a small bowl, mix all the swirl ingredients in it, and microwave the same for about 20 to 30 seconds or until you get a smooth melt. Stir the swirl to ensure there no lumps are formed

Spread half of the swirl mixture on the mixed cake batter and then disperse it well using a knife or toothpick

Microwave the cake mixture for about 60 seconds or until it rises well and pulls away from the sides of the mug or ramekin. Set it aside

Next, put all the icing ingredients in a small bowl and microwave the same for about 15 to 20 seconds or until the icing ingredients melt together easily when stirred. Add some more heavy cream if the icing mixture appears to be much too thick. Combine the mixture thoroughly to ensure no lump formation

Use a knife or fork to loosen the cake from the sides of the mug or ramekin and then flip it onto a plate

Now, pour the remaining swirl over the cake

Pour the icing over the cake and spread it thoroughly using a knife or spoon. You can also let the icing drip over the cake without spreading it

Brown “Sugar” Cinnamon Chaffles 1 egg 1/2 c. Mozzarella 1tbs almond flour 1/2 tsp cinnamon 1/2 tsp baking powder 1 tbs brown sugar swerve 1/2 tsp vanilla extract 1/2 tsp heavy whipping cream

Mix all ingredients except mozzarella until combined. Then I add mozzarella until the mixture has coated all the cheese. Makes 2 dash mini size waffles.

Cinnabon Waffles

Waffles: 2 eggs 4 Tbsp almond flour 2 Tbsp cinnamon 2 Tbsp HWC 2 Tbsp granular erythritol.

Add all the ingredients to a bowl and stir to combine. Cook as usual in the iron

Frosting: 2oz softened cream cheese 1 Tbsp powdered erythritol 1 tsp vanilla 1 Tbsp HWC.

Soften cream cheese in the microwave. Stir in the HWC, then stir in the erythritol, until you have a goopy paste. If it's too thick, add a splash of HWC and put it back in the microwave. Stir in the vanilla to combine.

Makes 5 waffles, and just about over a 1/4 C of frosting.

Eggnog Chaffle Chaffle

- 1 Egg, separated - 1 Egg Yolk - 1/2 cup (57g) Mozzarella, shredded - 1/2 tsp Rum, Rum Extract OR YOU CAN OMIT THIS (I used Kraken Black Spiced Rum) - A splash of Vanilla Extract - 1 tbsp Sweetener (I used Erythritol) - 1/4 tsp Nutmeg, dried - A dash of Cinnamon, dried - 1 tsp Coconut Flour

Icing Ingredients

- 2 tbsp Cream Cheese or Double/Heavy Cream (it will be much more liquid-y with cream) - 1 tbsp Sweetener, preferably powdered (I used Powdered Erythritol) - A splash of Rum or Rum Extract

Directions

1. Preheat your waffle maker (preferably a mini waffle maker) according to the manufacturer's guidelines. 2. In a small bowl mix BOTH egg yolks until smooth. Add sweetener and mix again until the sweetener has almost entirely dissolved and the yolk is smooth. Add in the nutmeg, cinnamon and coconut flour. Mix well and set aside. 3. In a separate large bowl, add the egg white, rum and vanilla. Whisk until they are well combined (the whites should not be anywhere near peaking, they should just be darker in colour from the other ingredients). 4. Add the yolk mixture into the egg white mixture and mix well - you should have a thin batter. Fold in the mozzarella cheese so it's all coated and well combined. 5. Once the waffle maker has heated up, add a small coating of butter or oil (I used Coconut Oil Spray). 6. Add the half of the batter if your waffle maker only makes one waffle. Making sure to spread it evenly. Cook for about 6 minutes or until solid - check your waffles every minute after 5 minutes. 7. If you have a single serving waffle maker, repeat steps 3-4. 8. Once your chaffles are cooked, in a small bowl, combine ALL icing ingredients well. Pour over your chaffles or use as a dip for them, enjoy!

Raspberry Chaffle 1 Egg 3 tbsp almond flour 10-15 drops monk fruit sweetener 1/4 tsp vanilla extract 2 tbsp cream cheese, divided 6 raspberries rough chopped 1 tbsp butter Allulose

Apple Chaffles

Tips If you don’t want to use apples, jimcama, chayote, or zucchini work just as well for texture, and get your flavorings from the seasonings and spices.

Chaffle with Fried Apples 4 oz ricotta cheese one egg whisked together.

Made 2 small chaffles. Apples sliced and fried in butter. Heavy cream, whipped

Mock Apple Pie Chaffle Make chaffles using any sweet chaffle recipe. Sweeten the batter to taste and add vanilla extract to taste.

For the mock apple filling: One medium chayote (about 250g) peeled, quartered lengthen wise, cored and sliced into chunks.

Cook the sliced chayote in the microwave using a covered microwave safe dish until just fork tender about four minutes. Drain well and place on paper towels to absorb excess moisture.

Lightly brown two table spoons of butter in frying pan and add the sliced chayote. Add 1 1/2 tbs golden monk fruit (you could use sweetener of your choice. I like the golden monk fruit and it adds a brown sugar flavor). Add 3/4 tsp cinnamon and 2 tbs fresh squeezed lemon juice.

Toss the chayote to coat well and continue cooking until the chayote is fork tender, but not mushy. Remove from heat and chill.

To assemble: Plate chaffle and top with half of the chilled chayote mixture.

Apple Pie Chaffles 2 cups mozzarella 4 eggs 1 T apple pie spice 2 packets pure or other sweetener to taste 1 t vanilla 2 T shredded apple.

Caramel Apple Chaffle 1 Tablespoon chopped apples

Steps for Caramel -1 cup packed sugar free brown sugar -1/2 cup butter -1 Tablespoon cream or half/half -1 teaspoon vanilla extract (add at end off heat) You will use maybe a full Tablespoon of this mixture. Put rest in fridge to save. Could be good on fathead bagel for a yummy treat!

Appendix 3: Batter Enhancers

Glucomannan Powder ¼ tsp of glucomannan powder (from Konjac root) is said to improve the texture of baked goods. A little goes a long way.

Xanthan Gum Xanthan gum is used as a thickener and as a binder. Use very little. Too much makes your food slimy. Use the handle end of a spoon or the tip of a knife dipped into the powder to keep the amount small. It can sometimes be used instead of an egg in chaffles. Premix it with a little oil prior to using to prevent clumps.

Psysilum Powder Psyllium husk is most often used as a thickener. You can use psysilium powderto improve texture to a more bread-like consistency and to add fiber to your chaffle. Use one Tbsp psysilum powder in place of or in addition to other flours.

One egg one and a half ounces of mozzarella one teaspoon of psyllium husk.
