Spray muffin pan with cooking spray. Mix all wet ingredients thoroughly. Combine dry ingredients in separate bowl. Add wet to dry ingredients slowly, scraping bowl to make sure no dry ingredients are left. Pour into muffin pan. Bake in preheated oven for 1 hour and 15 minutes. Cool before serving.
