When choosing ways to spend their weekends, in the city or in other places, travelers are

interested in “real” experiences to make their trip enjoyable – and food is always number one

on their lists.

In a Food Travel Monitor report in 2016, 75 % of tourists said they wanted to visit a

destination or a place because of culinary or food activities. A study by Expedia Media

Solutions reported that 50% of those surveyed plan their travel around food and drink

experiences.

Although popular with tourists, eating out is not the only way to experience the food of a city

or a country. Other food travelers take cooking classes, visit food markets, vineyards, and

farms to experience the local food.

In Ireland, conferences which focus on food, such as Food on The Edge, touRRoir and

Ballymaloe Litfest have all helped in making the food tourism industry popular. Caroline

Wilson, owner and operator of Taste and Tour NI, says, “I can see that tourists are coming

here to Ireland to discover the food and drink we offer, alongside the people and places.”

In London, Jennifer Earle has run Chocolate Ecstasy Tours for more than 10 years and feels

lucky to be part of the food tourism business. “Our tours were the first regular ‘food tourism’

experience in London in 2005,” she says. “A tour is something you can enjoy at any age,

where you learn a bit of history, and experience the local culture. Taking a food tour is a

much more ‘real’ way to get to know cities and the people,” she adds.

Technology and social media are helping in advertising food tourism. For instance, when

tourists write their comments and reviews of restaurants and food on TripAdvisor, they are

helping promote a city and its local food.

Food trucks hit the streets in Hong Kong Adapted from Kate Springer, CNN • 12th February 2017

On a sunny Hong Kong afternoon in 2017, 80 people lined

up in Tsim Sha Tsui to experience one of Hong Kong's first

food trucks.

Pineapple Canteen is a cheerful yellow truck selling

traditional pineapple buns. The pastry seller is one of the

first three food trucks opened as part of the Tourism

Commission's program. Later that year, 13 more foods trucks

joined them, setting up in eight tourism destinations around the city, including the Central

Harbourfront, Hong Kong Disneyland and Ocean Park.

Pineapple Canteen sold 600 pineapple buns on its first day and an estimated 2,000 over the

weekend. In addition to the traditional buns, they serve buns filled with fresh cream and diced

pineapple, or with pork chops.

"I have never operated a food truck before, but I thought it'd be a fun challenge," says

operator Carrie Lam, who also runs a family-owned diner called Tan Sing Café. "We wanted

to change up the traditional pineapple bun recipe, so we gave it a crunchy texture outside, and

then we added fresh pineapple and cream for a smooth, cool taste."

Just across Victoria Harbour in Wan Chai, Bao & Buns food truck serves American-Chinese

fusion steamed buns stuffed with barbecued duck, chicken, beef or pork from a bright red

truck.

"I learned about food truck culture in Los Angeles, and I wanted to promote that in Asian

countries, starting in Hong Kong," says Bao & Buns operator, Raymond Wong. "In the

future, we are thinking about expanding into China and Southeast Asia because food truck

culture really doesn't exist in this region yet."

Before 2017, food trucks in Hong Kong were only used for private events. The city rules for

public food trucks made it impossible to legally operate one. In March 2016, the Tourism

Commission changed that – inviting individuals, restaurants and business to propose their

food truck ideas. Food trucks are popular in many cities because they offer a practical way for chefs to try new

ideas without committing to the expense of starting a restaurant.

In Hong Kong, the food truck program is part of the government plan to expand tourism.

Hong Kong's new food trucks stay at tourist sites, moving every two weeks. A smart phone

app – named HK Food Truck – explains when and where to find each truck. Kenneth Ip, an

architect in Hong Kong hopes the new food trucks will bring back street food in Hong Kong.

The number of Hong Kong street food seller or ‘hawkers’ dropped from 50,000 in 1974 to

roughly 6,000 in 2016 after the government stopped giving new licenses in the 1970s.

"It would be really exciting if the food trucks could bring street food culture back," Ip says.

"It is difficult to start a new restaurant in Hong Kong with all the competition and high rents.

For a young chef with an interesting idea, a food truck could help make the next big culinary

success."
