a. Quality assurance

b. Accreditation schemes

c. Rating systems

Are a commonly used quality assurance mechanism. To assist customers in making informed choices about which establishment to visit, ratings systems can be used to anticipate the standards that can be expected.

Is a system that is designed to ensure that the customer can always be guaranteed a consistent standard of product or service. Fast food chains are an excellent example of this type of standardisation. Their products are prepared following systematic processes, ensuring that they always taste and look the same, regardless of where they are made.

Businesses meet a standard set by the accreditation scheme and are issued Accreditation status and receive a certificate and accreditation logo for use in marketing activities.

a. EEO and Anti-discrimination

b. Gaming

c. RSA

d. Food Safety & Hygiene

In Australia, this legislation aims to improve food safety.

Food poisoning is a matter of serious concern for any food and beverage operation.

FSANZ estimates that over 5 million cases of food poisoning occur each year

Poor food handling practices could hospitalise or even kill a patron

Compliance with these standards is the minimum requirement for an establishment. They allow for planning of all operational duties around the framework provided.

Local councils are in charge of enforcing building codes, supervising safe food handling and conducting random inspections of food premises

Under Australian law, everyone has an equal right to work and to be treated fairly while at work and employers have a responsibility to make merit-based employment decisions when hiring or promoting staff.

It is illegal to deny someone an opportunity to work on the basis of their race, sexuality, age, marital status, political affiliation, religion, favourite sport team or anything else unrelated to their ability to perform the tasks of the job.

It is also illegal to discriminate against someone, on the same basis.

Each state has Equal Employment Opportunity (EEO) and anti-discrimination legislation, put in place to create a fair workplace.

Staff must ensure their work activities and behaviour is carried out fairly and respectfully of others and they follow organisation’s policies and procedures.

This legislation regulates activities in casinos and other approved venues and ensures operators conduct themselves honestly and responsibly.

There is a lot of legislation such as RSG controlling the operations of Australia’s gaming industry, with each state or territory responsible for the gaming activities in their jurisdiction.

Staff and management must ensure that they sell and supply liquor to patrons in a responsible manner.

The sale of alcohol in Australia requires a permit, or license.

Hospitality employees who are involved in serving alcohol must understand their legal responsibilities.

The laws and operational requirements vary between states. You must be aware there are state and region specific variations, such as total alcohol bans in some areas.

RSA is a course that provides employees with comprehensive training on how to provide alcohol responsibly, including the dangers associated with excessive consumption, techniques for handling difficult patrons, legal requirements and the fines associated with breaching liquor laws.

Task 5CASE STUDY (exert from “Tourism 2020” Tourism Australia”) Full version available in supplementary file

The Tourism and Hospitality industry is one of Australia’s largest employing industries, employing some 640,000 people across the sectors of hotels (170,000), accommodation (90,000), casinos (20,000), clubs (100,000) and restaurants & caterers (250,000). In contrast to other industries such as manufacturing or mining, the T&H industry employs people in every Australian state, city, town and electorate.

The industry generates $94 billion in spending and contributes nearly $34 billion to Australia’s GDP, directly employs over 500,000 people and earns nearly 10% of our total export earnings, making it Australia’s largest service export industry. It helps to fund critical economic infrastructure like airports, roads and hotels, and provides the people-to-people linkages to Australia’s international interests. It also plays an important role in the economic development of regional Australia, with 46 cents in every tourist dollar spent in regional Australia.

The T&H industry consists of almost 280,000 enterprises that support the visitor economy from accommodation and cafes, casinos, tour companies, travel agents, transport companies, and parts of the retail and education sector. The industry is supported by a supply chain that generates significant economic multipliers. Every dollar spent on tourism generates an additional 91 cents in other parts of the economy – higher than multipliers in mining, agriculture and financial services.

As a visitor-enticement tool and determinant of return visitation or recommendation, Hospitality is incomparable. The overriding social aspect and means by which it delivers life essentials such as food, drinks and rest in genial and relaxing settings, confirms Hospitality is at the heart and soul of the community as well as a powerful contributor to the economy.
