She and her husband teamed up to create a sweet and savory dish that offers loads of flavor without any spiciness. Rosy takes pride in carrying on her Cuban heritage and is careful to maintain certain cooking traditions. What a great blending of culture and creativity! Enjoy and remember, use “just a pinch”... www.justapinch.com/cubanpie What You Need PIE CRUST: 3 c all purpose flour 1 tsp salt 1 1/4 c shortening 8-10 tsp cold water 1 c dried beans (to weight crust) THE SOFRITO: 1/2 c sweet vidalia onions, diced 1/2 c green bell peppers, diced 1/4 c garlic, minced plus 1 Tbsp 1/2 c roma tomatoes, sliced 8 oz swiss cheese, shredded 7 oz pulled pork 5 oz deli-style ham, sliced 1/2 c heavy cream 4 Tbsp mustard (dijon or spicy) 4 Tbsp parmesan, freshly shredded 2 dill pickles, thin sliced 1 md tomato 2 1/2 Tbsp extra virgin olive oil Directions PIE CRUST: • Stir flour & salt in medium bowl. Gently blend in shortening until crumbly. Stir in just enough cold water to bind. Knead or process until smooth ball is formed, as little work as possible. • Roll in a ball, wrap in plastic and refrigerate 1 hour. Remove, divide into 2 equal balls and roll out to 9 inches. • Preheat oven to 450° F. Drape crust into pie tin, poke with fork and cover CalRio Cuban Pie with waxed paper. Fill bottom with dried beans (to weigh crust down) and bake pie shell for 10 minutes or until crust lightly browns. Remove, discard paper & beans, and cool. FOR THE SOFRITO: • Add olive oil to a medium saute pan over medium heat. Add onions, peppers and garlic, cook until translucent, but do not brown. Add tomatoes, cook for 3 to 5 minutes. Remove pan from heat and hold to add pork. • Preheat oven to 350° F. • Add 2 ounces of Swiss cheese to pre- cooked pie shell, add pulled pork on top of Swiss cheese. Top pulled pork with sofrito mixture, then add remaining Swiss on top of pork. Top with ham. • Mix together heavy cream & mustard; pour on top of ham and sprinkle with Parmesan. • Add pie crust to top, wrap aluminum foil around edges and bake for 25 minutes. Remove pie from oven; let cool for about 5 minutes. Add pickles to center of pie, overlapping them in the center. • Cut and serve with a slice of tomato and a dollop of Mojo Sour cream. Dickinson is a graduate of Middle Tennessee State University with a Bachelor’s Degree in Exercise Science. She is employed as a Physical Therapy Tech at Sports Plus Aqua Therapies in Jackson. Eubanks graduated with a Bachelor’s of Science from Lambuth University and a Master’s in Education from Trevecca University. He is a teacher with Crockett County School System. Dickinson-Eubanks engagement Fletcher Lewis and Janet Marbury began their courtship while in high school at Haywood High where they fell madly in love. Finding each other irresistible, they married on June 25, 1960 and have grown to love each other more each and every day. Mr. and Mrs. Lewis will celebrate their fiftieth anniversary this month. God blessed two children, LaRita Gillispie and Stephen Lewis, by giving them Fletcher and Janet to be their parents. Four grandchildren are blessed as well: Lewis and Grace Gillispie and Sara Kate and Hunter Lewis. In-laws, Jim Gillispie and Angie Lewis have been blessed to be in the Fletcher and Janet Lewis family also. LaRita and Stephen Lewises Celebrate 50 Years Barry Daniel of Indianapolis, Indiana contacted me and wanted to know more about his paternal ancestors. His lines include Daniel, Sweeney, Brock, Jackson, Poole and Williams. Following his Daniel line, I find they emigrated from Yorkshire, England in the 1600’s and settled in Virginia and later Rowan County, North Carolina. The first family to migrate to West Tennessee was James William Daniel who married Mary Mahalia Williams on 16 Aug 1815 in North Carolina. Their children were Greenberry; Lewis Charles; Judy; Mahalia; Freeling and Ralph. This family settled in Madison County near Pinson. James died in 1848 and Mary in 1870 in Madison County. Greenberry Daniel was born 24 Nov 1816 in Rowan County, North Carolina and married Nancy Ann Poole on 16 Aug 1842 in Madison County. Nancy was born in Alabama 6 Aug 1822. Their children were James W.; Freeling; Lonnie; Francis; Herbert; John W.; Nathan E.; Albert Jesse; and Hubbard. Greenberry died 10 Jun 1866 in Madison County and Nancy died 29 Apr 1902 in Haywood County. Albert Jesse Daniel was born Apr 1862 in Madison County and married Dora Olive Brock, who was born Feb 1871. Their children were Myrtle (b.1888); Edwin (b.1890); Aubrey N.(b.1894); Arthur (b.1895); Dulsa (b.1897); and Douglas (b.1908). By 1900 Albert and family were living in Haywood County on Tibbs Road near Nutbush. His mother, Nancy was living with them and his brother, Nathan and family lived next door. Aubrey N. Daniel, Sr. was born 16 Jan 1894 in Haywood County and married Lillian Rena Sweeney, daughter of Frank and Nancy J. (Mason) Sweeney of Nutbush. Aubrey and Lillian lived next door to his parents near Nutbush. Aubrey, Sr. was a WW1 Veteran. Their children were Aubrey N., Jr. (born 1924); Charles L. (born 1925); James W. (born 1930); Mary Nell; Patricia Ann. Aubrey, Sr. died Sept. 1981 and wife Lillian died July 1979 in Haywood County. Aubrey, Jr. and his brother Charles both were WW11 Veterans. Aubrey N. Daniel, Jr. was born 18 Mar 1924 and after graduation from high school, enlisted in the U.S. Army 4 Jun 1943 WW 11. He left the Army in 1949 then re-enlisted. He received a Presidential Citation. He died 22 Apr 1984 and is buried in the Danville National Cemetery, IL So far, I have been unable to locate where the Daniels are buried. Maybe some of our readers will know. Cooking Cuban cuisine is fairly new to me, but I’ve quickly become a fan thanks to dishes like

What You NeedPIE CRUST:3 c all purpose flour1 tsp salt1 1/4 c shortening8-10 tsp cold water1 c dried beans (to weight crust)

THE SOFRITO:1/2 c sweet vidalia onions, diced1/2 c green bell peppers, diced1/4 c garlic, minced plus 1 Tbsp1/2 c roma tomatoes, sliced8 oz swiss cheese, shredded7 oz pulled pork5 oz deli-style ham, sliced1/2 c heavy cream4 Tbsp mustard (dijon or spicy)4 Tbsp parmesan, freshly shredded2 dill pickles, thin sliced1 md tomato2 1/2 Tbsp extra virgin olive oil
