This course will explore world cultures, science and
health through the eyes of food. Of special interest will
be the development of Chinese food culture. In addition
to the classroom, the course will consist of visits and
local presentations on the historical development of
Chinese food culture.

Fermentation of tea is more accurately described as oxidation which is caused by enzymes, since the process involves oxidation of phenolic compounds and not fermentation by microorganisms
