Slimy Lime Juice

The perfect dessert to sit by the fire and indulge!

INGREDIENTS• 3/4 cup sugar• 4 tablespoons unsalted butter• 4 bananas, cut into 2-inch pieces• 1 pint plus 1/2 cup vanilla ice cream• 1/4 cup shaved semisweet or milk chocolate

DIRECTIONS1. Heat sugar in a large heavy-bottomedsaute pan over medium-high heat. Letstand until edge of sugar starts to meltand turn golden. Carefully swirl pan toincorporate all of the sugar. Continuecooking until sugar is a golden-browncaramel, 6 to 8 minutes.

2. Reduce heat to low, and stir in butter. Add bananas, carefully roll in caramel,and cook, turning bananas occasionally until just soft, 3 to 5 minutes. Removebananas from caramel, and place in serving dishes. Add 1/2 cup of vanilla ice creamto caramel sauce, and stir until smooth and creamy. Scoop remaining ice creamover bananas, pour caramel over ice cream, and sprinkle with chocolate shavings.(Serves 4)

Autumn brings all the richness of fall vegetables, with their wonderfulflavors, and bright colors. The benefit of fall vegetables is all the vitaminsand minerals they bring to the table, especially those with deep colors.They also contain health promoting antioxidants. For example, deeporange colored carrots are rich in beta-carotene, and purple potatoeshave anthocyanins which have been shown to prevent blood clots, andimprove blood circulation. Use the following list to bring home the bestof falls bountiful harvest.

1. Winter Squash: Look for squash with thick hard skin, without blemishes.It should feel heavy for its size. It is an excellent source of vitamins A and C,potassium, fiber, and folic acid.

2. Potatoes: Look for firm, round or oblong shaped tubers without greenspots or sprouts. They provide vitamin’s B6 and C, potassium, niacin, andmanganese along with carbohydrates.

3. Parsnips: Look for small, well shaped, firm roots rather than large ones.They provide a good source of vitamin C and folate.

4. Carrots: Look for smooth skinned carrots without cracks. They are anexcellent source of vitamin A.

5. Cabbage: Look for tight, firm, heavy head. It is an excellent source ofvitamin A and C.

6. Pumpkins: Look for one that feels heavy for its size with thick, hard skin,and no blemishes. They are an excellent source of vitamin A, C, and folateacid.

7. Beets: Look for globe shaped roots with deep red flesh, and greenleaves. They provide folate, potassium, and vitamin C. Remember theleaves are a nutritional bonus.

8. Rutabagas: Look for smooth, thick skin that is yellow to tan in color.They should feel heavy for the size. They provide vitamins A and C.

9. Sweet Potatoes: Look for medium sized potatoes with tapered ends,without blemishes or sprouts. They provide vitamin A, C, and B6. Also fiber,copper, and potassium.

10. Spinach: Look for firm, fresh, crisp, deep green leaves withoutblemishes. It provides vitamin A, C, and folate.

11. Leeks: Look for white bulbs with crisp, straight green stems.They provide vitamin C.

12. Turnips: Look for smooth bulbs with white, and purple skin. They shouldfeel heavy for their size. They provide vitamin C. The leaves are nutritious.

Sounds nasty, but it’s a great fall quencher!

DIRECTIONS• 2 cups seedless green grapes• 2 cups sugar• 1 cup fresh lime juice (from about 10 limes)• 8 cups club soda• 1 cup gin (optional)

DIRECTIONS1. Freeze grapes until firm, 1 hour.Meanwhile, in a small saucepan,stir together sugar and lime juice; bring to a boil. Simmer until sugar has dissolvedand liquid is syrupy, about 2 minutes. Let cool completely, 30 minutes.2. In a punch bowl or pitcher, stir together lime syrup, club soda, frozen grapes,and (if using) gin. Serve immediately
