Spinach and Artichoke Stuffed Mushrooms — Serves four

What You’ll Need:

Archer Farms Creamed Spinach and Kale2 Tbsp. Archer Farms Shaved Parmesan Cheese4 portobello mushrooms or 1 (8-oz.) pkg. baby portobello mushrooms½ cup chopped artichoke hearts2 Tbsp. panko breadcrumbsWine Pairing: California Roots Moscato

What You’ll Do:

1. Microwave creamed spinach and kale according to package directions. Stir inartichoke hearts.

2. Remove stems from mushroom caps and place top half down on baking pan.Divide creamed spinach mixture evenly between mushrooms.

3. Mix breadcrumbs and Parmesan cheese together in small bowl; sprinkle on topof stuffed mushrooms.

4. Bake at 375 degrees F for 15 to 20 minutes until mushrooms are tender andtopping is light golden brown.
