In April, thoughts on our Encore Campuses turn to flowers and filling our outdoor planters with blooms galore. The Clearbrook Inn Garden Club meets on April 18th. The Country Meadows Spring Planting Day is on April 27th. We have the knowledgeable assistance of some dedicated and generous Master Gardeners who help us fill our containers with just the right amount of soil and plants for blooming beauty throughout the season. At The Ridge the after-noon strolls often involve tending the flowers growing in their lovely outdoor areas.

Even if you don’t consider yourself much of a green thumb, you can still be the “charming gardener who makes a soul blossom,” according to French novelist Marcel Proust. Sometimes that soul is our very own, and we need to take advantage of the opportunities in our current situation to “Bloom where we are planted.”

Nourish in Sequim Thursday April 13th, depart at 10:30 a.m. Some of the most delicious food on the planet awaits us at Nourish, which sources locally and cooks with love; on the way home we’ll

make a quick stop at Sunshine Lavender Farm to get a jump on summer.

Valley Nursery Friday April 14th, depart at 1:30 p.m.

Shopping for flowers for our Spring Gardening Day begins here this year.

Van Lierop Garden Market Thursday April 20th, depart at 10:00 a.m. After lunch at the Buttered Biscuit which

specializes in home-style cooking, we’ll visit the Garden Market for inspiration (& more plants). On the way home we’ll stop at the

Old Cannery for some fresh fudge.

Country Nursery & Gardens Friday April 21, depart 1:30 p.m.

More inspiration, a wonderful selection of flowers, and a caring staff to help us with

everything, plus a darling gift shop!

Choral Belles Tuesday, April 25th at 1:00 p.m.

We are looking forward to our first concert of the year by our friends from Port Ludlow.

Spring Gardening Day Thursday April 27th from 10:00-1:00

Stone Soup for everyone at Noon and lots of help with our Spring plantings with our

beloved Master Gardener friends!

We went to breakfast at a restaurant where the “Senior Special” was two eggs, bacon, hash browns and toast for $2.99. “Sounds good,” said my wife, “but I don’t want the eggs.” The waitress warned her, “Then I’ll have to charge you $3.49 be-cause you’re ordering a la carte.” “You mean I have to pay more for NOT taking the eggs?” my wife asked incredulously. “Yes, ma’am,” replied the waitress. “I’ll take the special, then,” my wife said. “How do you want your eggs?” the wait-ress asked. “Raw and in the shell,” my wife replied. She took them home and baked a cake. Don’t mess with Seniors!

So if you’re crazy for cauliflower but don’t cook

much, you can buy it riced and ready to steam.

Easy! If you want to cook a little bit, but time is

limited, try the current favorite at our house,

roasted cauliflower. For a quick fix, buy a bag of

cauliflower florets, dump into a big roasting pan,

drizzle some of your favorite extra virgin olive oil

over it, sprinkle lightly with rosemary or Italian

seasoning, a bit of garlic, salt and pepper, toss

thoroughly, and roast at 425 degrees for about

20 minutes. Store it in a few pint jars and have it

ready for a snack or quickly reheated for a meal.

Try this economical superfood trend: cook down

the bones from the chicken you roasted for dinner

with a few carrots and some onion (don’t forget
