Halibut Easy Summer Meal By CECILY BROWNSTONE
Acquaint yourself with the summer-style charm of fresh halibut, now In season, if you want a wonderfully convenient menu.
Poach halibut steaks, cook frozen mixed vegetables and refrigerate both. When you are ready to serve, arrange the fish on a platter; add the drained vegetables mixed with mayonnaise and spooned into lettuce cups. Mix up a quick extra sauce of sour cream and cucumbers. Add "bread sticks or crusty rolls, fruit and cookies, and you'll have a great easy meal. . We like to do the preparation on Friday for Saturday lunch; or on Saturday morning to serve that evening for a cool supper. Try it!
Poached Halibut 1 quart water 1 medium onion (sliced) 1 stalk celery (sliced) 1 carrot (sliced) 2 cloves garlic (bruised) 1 bay leaf
! 1 teaspoon salt . % teaspoon peppercorns
' 1 slice lemon 1 2 pounds halibut steaks
Cucumber Sauce. Pour water into a large skillet
Or Dutch oven and add onion, celery, carrot, garlic, bay leaf, salt, peppercorns and lemon; bring to a boil and boil 3 minutes. Add halibut in one layer. Add more water, if necessary, to barely cover fish. Return to boil; then reduce heat, cover and simmer 5 to 8 minutes or until fish flakes easily when:-tested with a fork. With a pancake turner, carefully lift fish out of liquid; remove akin and. place in a shallow dish. Strain cooking liquid; pour over
fish, cover tightly and chill 8 hours or overnight^ Remove fish from liquid and drain. Serve with Cucumber Sauce. Makes 4 servings.
Cucumber Sauce: Shortly before serving cold poached halibut, mix together 1 cup commercial sour cream, 1 tablespoon prepared horseradish, H cup (or more) peeled minced cucumber, 4̂ tea-s p o o n pepper, 1 tablespoon chopped chives. Makes Ua cups sauce. Choose a thin firm cucumber with small seeds for this good sauce.
Strawberries Ritz 1 box strawberries
Sugar % cup Anisette liquor
Put well-sugared strawberries in a bowl, pour the Anisette 11* quor over them and leave in the ice box for one or two hours to get well chilled. Meantime, make the following preparation:
3 ounces flour 8 ounces sugar 4 eggs 1 quart boiling milk
Blend sugar, flour and eggs together. Slowly dilute with one pint boiling milk and cook for a few minutes while stirring constantly until it bolls. This preparation must be smooth. Let cool, then add one cup of well-beaten cream and gently mix in the strawberries and juice. Add a little red coloring, if necessary, so as to give a nice pink color to the whole combination. A few l a r g e strawberries can be arranged on top so as to improve the appearance. Serve very cold. Yield: 8 servings.
