Innovation – Rich’s Tradition

The image of Rich Products as a dynamic, growth-oriented

company dedicated to forging new technologies, developing

new products and taking the lead in customer service started

at its inception in 1945. It was then that Rich’s introduced a

totally new and revolutionary concept in food manufacturing:

a “non-dairy’’ alternative for whipped cream, later known the

world over as Rich’s® Whip Topping®.

In the decades to follow, Rich’s developed the first non-dairy

creamer, Coffee Rich®, introduced frozen proof ’n bake doughs

nationally and created Bettercreme® non-dairy filling and

icing, the perfect alternative to traditional buttercream frostings.

More recently, Rich’s introduced On Top® non-dairy whipped

topping in a unique, easy-to-use decorator bag, revolutionary

Growth – Rich’s History

When Rich’s began back in 1945, Robert E. Rich and three

associates handled all company functions: production, sales,

marketing, accounting and product development. The entire

operation ran efficiently out of a single facility located in

Buffalo, New York.

R ich’s technical assistance programs are designed to cover the diverse needs of foodservice professionals across the country – from commercial and noncommercial operators and chain account personnel to distributors and field sales representatives.

Support for today’s foodservice professional includes formal training at Rich’s Tech Schools, special on-site workshops, chain support programs, sales seminars, special instructional videos and quality printed materials.

Rich’s Technical Assistance Team is composed of a group of highly skilled bakers, home economists, education nutritionists and certified chefs who combine the best in culinary skills with the requisite educational expertise to make Rich’s technical assistance programs clearly relevant to the needs of other foodservice professionals.

Training


In The Classroom

At Rich’s National Training Centers and its Regional Classroom, five courses are available to foodservice operators.

Open to all customers nominated by Rich’s Sales Associates and Brokers, this two-day hands-on workshop at Rich’s Training Centers and select broker offices covers a wide range of food preparation techniques and menu merchandising ideas, using products available from Rich’s.

Continuing Education Credit is available for Rich’s Foodservice Culinary Course from the following professional organizations:

American Culinary Federation (ACF) - 10.5 hours (1.75 pts.)

American Dietetic Association (ADA) - 12 hours

School Nutrition Association (SNA) - 12 hours

Dietary Managers Association (DMA) - 12 hours

International Food Service Executives Associates (IFSEA) - 12 hours (24 pts.)

(Prerequisite: completion of Foodservice Culinary Course) Designed for the catering and banquet operator, this two-day course is an extension of the basic Culinary Course. It features Rich’s products, such as quick and elegant desserts, fancy breads, entrees and hors d’oeuvres, for volume settings. A show with the banquet presentation is created. Food safety procedures for transporting foods and on-site food handling/holding are included.

This course is designed to expand the pizza and deli sandwich menu ideas covered in the basic Culinary Course. In addition to being used for pizza, pizza dough is used to create such specialties as stromboli, calzone, panini, Italian flat bread and more. Designer sandwiches are created, spanning the categories from traditional to gourmet.

A course designed for Rich’s customers who currently use Rich’s Icings and want to develop their decorating skills and add new dessert items to their menu. Basic icing techniques as well as merchandising programs will be included in the seminar.

(Prerequisite: Foodservice Culinary Course and fee for materials) This course is conducted by Rich’s ServSafe®

certified trainers. Participants who complete the course and pass the certification exam will earn the ServSafe® Manager Certificate from the National Restaurant Association’s Educational Foundation.

On-Location Assistance

Located strategically throughout the United States, Rich’s Technical Consultants are available regionally to support local foodservice professionals in their day-to-day operations.

Assistance may range from offering advice to individual operators on menu development, cost containment and product handling practices, to conducting workshops for a group of local operators or an individual operator’s staff.

Chain Support

Rich’s National Account Culinary Managers are available to assist on projects ranging from customized product development and cost containment to menu analysis and product troubleshooting. They frequently organize and conduct on-site seminars and workshops to suit the special needs of participating multi-unit operators.

Sales Programs

Designed especially with today’s busy DSR in mind, presentations are cooperatively planned to make the best use of available time... on-site or at one of Rich’s training facilities. Discussion often centers on understanding product applications as they pertain to an operator’s menu needs and quality standards.

indentation remains, dough is proofed. If dough springs back,

continue proofing.

• When handling thawed dough for reshaping into signature

products, cut or shape while dough is cold.

• For best results, when frying, check fryer oil for cleanliness

• For best results always pre-heat oil to 350˚F to 375˚F for

battered/breaded items. Monitor the oil temperature and

age of the oil. If the oil is too hot, the outside of a breaded

product will darken too quickly and not heat the center. If

the oil is too new, it can take longer to brown the outside

and potentially cause the center to get too hot.

• For best results when cooking in convection and

conventional ovens, always preheat to the recommended

Place a layer of frozen Meatballs in a steam table pan

• Add your favorite sauce (Marinara, Primavera, Pink, Spaghetti,

Brown Gravy or White Sauce); reduce sauce with water, broth

or milk to liquefy. Cover with foil or lid and bake.

o Conventional oven at 350°F for approximately 40-45

minutes or until internal temperature reaches 165°F.

o Convection oven – 350°F for 30 minutes or until internal

temperature reaches 165°F.

Ravioli

• Bring 2 quarts of water to a boil.

• Place frozen Ravioli in boiling water.

• Let Ravioli come to second boil.

• Boil for approximately 2 minutes.

• Drain immediately.

• Place cooked Ravioli in half pan and cover with your

favorite sauce. You can add the half pan to a chafing dish

or place cooked Ravioli on a plate, add your favorite

sauce and serve.

Stuffed Shells & Manicotti

• Cover bottom of a half or full steam table pan with your

favorite sauce (Marinara, Pink, Primavera, White, reduced

with liquid).

• Place Stuffed Shells/Manicotti FOLD SIDE DOWN in

sauce (approximately 12 Stuffed Shells or approximately

10 Manicotti).

• Cover Stuffed Shells/Manicotti with additional reduced

liquid sauce.

• Cover pan with a lid or foil and bake.

o Conventional oven – 350°F for approximately 30-35

minutes or until internal temperature reaches 165°F.

o Convection oven – 350°F for 20-25 minutes or until

internal temperature reaches 165°F.

Product Preparation

Proof & Bake:

1. Store dough frozen at 0°F to -10°F.2. Thaw dough out of case; pan on greased or

parchment baking paper-lined pans.3. Cover dough with oiled plastic sheet to

prevent crusting on surface during thawing. Place in refrigerator (34°F to 38°F) overnight or at room temperature for approximately 1 hour for rolls and 2-3 hours for bread.

4. Let dough proof in proofing cabinet with 90°F to 110°F temperature and 80% to 85% humidity. Dough is proofed when it is double in size or fills template. Or dip finger in flour and press lightly into dough.

If indentation stays, dough is proofed. If dough springs back, it is underproofed. 5. Remove plastic cover and bake (325°F

convection oven; 375°F other ovens) until dough is evenly browned on sides, tops and bottoms.

NOTES: Yeast begins to die at 130°F, so watch temperature! If proof box is not available, leave oiled plastic on dough and proof in warm spot in kitchen.

Freezer-to-Oven:

1. Store product frozen at 0˚F to -10˚F.2. Pan frozen products on lined sheet pans and customize as desired.3. Bake at temperature recommended in specific handling instructions for each product.

Par-Baked:

1. Store product frozen until ready to use.2. Remove desired amount of product from

carton and place on baking pans. Reseal carton and store unused portion in freezer.

3. Bake as directed on package.

Thaw & Finish:

1. Store product frozen at 0°F to -10°F.2. Remove desired amount of product from

carton. Reseal partially used carton and store in freezer.

3. Thaw cakes and brownies in their own plastic bags. Loosen bags from tops of cakes before thawing to prevent sticking to cakes.

4. Finish with desired icings or toppings.

Fully Finished/Thaw & Serve:

1. Store product frozen at 0°F to -10°F.2. Remove desired amount of product from

carton. Reseal partially used carton and store in freezer.

3. Cover and let sit at room temperature to thaw.

NOTES: Puddings should be thawed in refrigerator only. If product is already wrapped, DO NOT store in refrigerator. Moisture will develop and cannot escape through wrapping.

Ready-to-Serve:

1. Store product as directed until ready to use.2. Remove desired amount of product from

carton. Reseal carton and store unused portion.

Mix & Bake:

1. Refer to individual dry mix packages for proper preparation instructions.2. Store in a dry area at room temperature.

Blend & Serve (Beverages):

1. Thaw product and store at room temperature.2. Prepare with ice and/or other ingredients in high-speed/2-step blender, ice shaver or granita machine.3. Prepare servings as needed with blender and ice shaver. 4. Granita machine holds product ready-to-serve up to 2 days. Clean and refill machine every 1 to 2 days for best- tasting product.5. Store opened cartons of beverage mixes in refrigerator between uses.

Ready-to-Whip:

1. Store product frozen at 0°F to -10°F.2. Thaw in refrigerator for 12-36 hours. Times

vary with product. Refer to individual product packaging for specific thawing times.

3. Shake well and pour product into bowl (45°F to 50°F). Whip at medium speed using wire whip for 8-12 minutes until soft peaks form.

4. To hold, refer to individual products for specific holding times.

NOTES: Dilute Whip Topping® Base, two parts base to one part liquid. For convenience, Whip Topping® Gold Label® requires less whipping time. Please consult packaging for specific whipping instructions.

Ready-to-Finish: 1. Store product frozen until ready to use. 2. Thaw in refrigerator overnight. Cover to retain moisture. 3. Finish as desired. 4. To hold, seal container and store refrigerated. DO NOT refreeze.

Prewhipped:1. Store frozen at 0˚F to -10˚F.2. Thaw in refrigerator 14-36 hours. Time varies with size of package.3. Store thawed product in refrigerator between uses.

Refrigerator-to-Oven:1. Store product frozen at 0˚F to -10˚F.2. Thaw dough out of case; pan on greased or parchment-baking-paper- lined pans.3. Cover dough with oiled plastic sheet or covered rack to prevent crusting on the surface during thawing.4. Place in refrigerator (34˚F to 38˚F) overnight.5. Heat & Serve (Bar-B-Q and Meatballs):1. Store frozen at 0˚F to -10˚F.2. Place trays of frozen meat or meatballs in 325°F convection oven, or 375°F other ovens until the internal temperature of the tray or the meatballs reaches 165°F.

NOTES: If Bar-B-Q is thawed, heating time ranges from 35-45 minutes.

Thaw & Sell:1. Store frozen at 0˚F to -10˚F.2. Remove individual items and thaw at room temperature.3. Serve or display for sale.

Cook & Serve:1. Bring water to a boil.2. Add un-cooked pasta and bring water back to a slow boil.3. Cook until pasta is al dente.4. Pre-cooked pasta only needs 2-3 minutes to heat.5. Drain pasta and serve with a heated sauce or chill pasta and toss with other ingredients for a salad.
