Being a 5’11” stunner and a last name that translates to “winner” sets the bar pretty high. Pamela Bianca Manalo, the Philippines’ bet to the Miss Universe pageant held in Nassau, Bahamas last August, passes this standard with flying colors. Although the crown was not placed on her head, Bianca shows why she still emerged victorious.

On joining the contestMonarchies are built on lineage. For this reigning queen, this is no exception. Her older sister, Katherine Anne, was a top 10 finalist in the 2002 Miss World competition while her aunt, Nini Licaros, was crowned Bb. Pilipinas-International in 1968. Bianca did not tell anyone about her Binibining Pilipinas plans at first. It was only when she was announced as an official candidate that the secret was revealed.

Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen.

When did you get interested in becoming a chef?I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

How would you describe the restaurant business?For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience.

Do you have any favorite ingredients?I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved?I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options.

Are there any trends in the way Filipinos enjoy their food?Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

The stars of the menu include the Mushroom Burger and Malunggay Pesto Pasta with Herb Chicken. They also have a choice selection of wines and alcoholic drinks for those who want to experience a different kind of oasis after office hours. THE 11TH CINEMANILA INTERNATIONAL Film Festival is a prestigious cinematic experience that screens critical successes from the Cannes, Berlin, Rotterdam, Sundance and Pusan film festivals. It also features hits from the local indie scene. With over 100 films that are scheduled to be screened in just 10 days, it gives new meaning to the term movie marathon.

This year, a first in introduced: the 1st Machinima Film Festival. Machinima is a play on machine-animation or machine-cinema and makes use of scenes from video games as video footage. If you are a fan of the South park episode of “Make Love, Not Warcraft,” then this event is a must-see.

To signal the start of the festival, Brillante Mendoza’s latest work, Lola, will be shown as the opening film. Brillante’s previous film, Kinatay (The Execution of P), garnered him a Best Director Award at the 62nd Cannes Film Festival last May 2009 where he beat filmmakers like Quentin Tarantino and Ang Lee.

THE 11TH CINEMANILA INTERNATIONAL Film Festival is a prestigious cinematic experience that screens critical successes from the Cannes, Berlin, Rotterdam, Sundance and Pusan film festivals. It also features hits from the local indie scene. With over 100 films that are scheduled to be screened in just 10 days, it gives new meaning to the term movie marathon.

This year, a first in introduced: the 1st Machinima Film Festival. Machinima is a play on machine-animation or machine-cinema and makes use of scenes from video games as video footage. If you are a fan of the South park episode of “Make Love, Not Warcraft,” then this event is a must-see.

To signal the start of the festival, Brillante Mendoza’s latest work, Lola, will be shown as the opening film. Brillante’s previous film, Kinatay (The Execution of P), garnered him a Best Director Award at the 62nd Cannes Film Festival last May 2009 where he beat filmmakers like Quentin Tarantino and Ang Lee.

When did you get interested in becoming a chef?I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

How would you describe the restaurant business?For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience.

Do you have any favorite ingredients?I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved?I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options.

Are there any trends in the way Filipinos enjoy their food?Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

THE 11TH CINEMANILA INTERNATIONAL Film Festival is a prestigious cinematic experience that screens critical successes from the Cannes, Berlin, Rotterdam, Sundance and Pusan film festivals. It also features hits from the local indie scene. With over 100 films that are scheduled to be screened in just 10 days, it gives new meaning to the term movie marathon.

This year, a first in introduced: the 1st Machinima Film Festival. Machinima is a play on machine-animation or machine-cinema and makes use of scenes from video games as video footage. If you are a fan of the South park episode of “Make Love, Not Warcraft,” then this event is a must-see.

To signal the start of the festival, Brillante Mendoza’s latest work, Lola, will be shown as the opening film. Brillante’s previous film, Kinatay (The Execution of P), garnered him a Best Director Award at the 62nd Cannes Film Festival last May 2009 where he beat filmmakers like Quentin Tarantino and Ang Lee.

When did you get interested in becoming a chef?I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

How would you describe the restaurant business?For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience.

Do you have any favorite ingredients?I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved?I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options.

Are there any trends in the way Filipinos enjoy their food?Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

When did you get interested in becoming a chef?I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

How would you describe the restaurant business?For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience.

Do you have any favorite ingredients?I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved?I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options.

Are there any trends in the way Filipinos enjoy their food?Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

THE 11TH CINEMANILA INTERNATIONAL Film Festival is a prestigious cinematic experience that screens critical successes from the Cannes, Berlin, Rotterdam, Sundance and Pusan film festivals. Pamela Bianca Manalo, the Philippines’ bet to the Miss Universe pageant held in Nassau, Bahamas last August, passes this standard with flying colors. Although the crown was not placed on her head, Bianca shows why she still emerged victorious.

On joining the contestMonarchies are built on lineage. For this reigning queen, this is no exception. Her older sister, Katherine Anne, was a top 10 finalist in the 2002 Miss World competition while her aunt, Nini Licaros, was crowned Bb. Pilipinas-International in 1968. Bianca did not tell anyone about her Binibining Pilipinas plans at first. It was only when she was announced as an official candidate that the secret was revealed.

Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen.

When did you get interested in becoming a chef?I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

How would you describe the restaurant business?For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience.

Do you have any favorite ingredients?I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved?I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options.

Are there any trends in the way Filipinos enjoy their food?Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

THE 11TH CINEMANILA INTERNATIONAL Film Festival is a prestigious cinematic experience that screens critical successes from the Cannes, Berlin, Rotterdam, Sundance and Pusan film festivals. It also features hits from the local indie scene. With over 100 films that are scheduled to be screened in just 10 days, it gives new meaning to the term movie marathon.

This year, a first in introduced: the 1st Machinima Film Festival. Machinima is a play on machine-animation or machine-cinema and makes use of scenes from video games as video footage. If you are a fan of the South park episode of “Make Love, Not Warcraft,” then this event is a must-see.

To signal the start of the festival, Brillante Mendoza’s latest work, Lola, will be shown as the opening film. Brillante’s previous film, Kinatay (The Execution of P), garnered him a Best Director Award at the 62nd Cannes Film Festival last May 2009 where he beat filmmakers like Quentin Tarantino and Ang Lee.
