    Roman philosopher Cicero

    once said, Gratitude is

    not only the greatest of

virtues, but the parent of all the

    others.

I think he is absolutely right. An ungrateful person focuses on

what they dont have and is

    unhappy, discontent, impatient,

    unkind, proud (thinks he deserves

better), and reluctant to help oth-

ers. But a grateful person is happy

    and content. From that gratitude

    flows patience, kindness, humility,

    generosity, and love.

So, to raise the level of grati-

tude in my own life, in yours, and

in those around us, here are20 Thanksgiving and gratitude

quotes for you to read, reflect on,

    and share. Happy Thanksgiving!

    When you are grateful fear

    disappears and abundance

appears. Tony RobbinsGratitude makes sense of our

past, brings peace for today, and

    creates a vision for tomorrow.

    Melody Beattie

    Gratitude begins where my

    sense of entitlement ends.

    Steven Furtick

    I would maintain that thanks

    are the highest form of thought;

    and that gratitude is happiness

    doubled by wonder. G.K.Chesterton

If a fellow isnt thankful for

what hes got, he isnt likely to be

thankful for what hes going to

    get. Frank A. Clark

Grace isnt a little prayer you

chant before receiving a meal. Its

    a way to live. Jacqueline

    Winspear

He is a wise man who does

not grieve for the things which he

has not, but rejoices for thosewhich he has. Epictetus

    tude. Unknown

Not what we say about our

blessings, but how we use them, is

the true measure of our thanksgiv-

    ing. W.T. Purkiser

We can only be said to be

alive in those moments when our

hearts are conscious of our treas-

ures. Thornton WilderGratitude is a quality similar

to electricity: it must be produced

and discharged and used up in

order to exist at all. William

For 32 years, I have wit-

    nessed a great number of

    people deal with the

    financial trials and tribulations

    that befell them along the

financial road of life. I have

    seen examples of financial

    ignorance, unpreparedness and

direct denial of the effects offailing to save and invest to

    secure ones own financial

    future, coupled with the ero-

sion of economic capital due to

    inflation and improper with-

    drawal techniques from their

    retirement portfolio. I have

    observed missed opportunities,

as well as arrogance and disdainfor investing during both rising

    and falling stock markets, heed-

    ing false evidence why one

    should stay away from stock

    market investing altogether.

    Some people say they

dont have the stomach for the

roller coaster ride of stocks. My

    response? Bah, humbug. One

    cannot compete effectively

    against inflation without the

help of the stock markets reac-tion to both an expanding and

    Im frightened for my

    children (and yourchildren, too!)

    contracting economy.

    Lately, inflation is a word

thats been put into storage and

is not part of our daily vocabu-

lary. But, soon enough, it willbe back and with glowing

    prominence at that! This

brings me to the lesson of the

day. What has inflation done to

the dollar since the federal gov-

    ernment started tracking it in

    1967 under the name

    Consumer Price Index (CPI)?

First, think about what it used

to cost for a couple slices of

pizza and a coke in 1967. Over

the last 46 years, the averageannual inflation rate in the

U.S. has been 4.37 percent. At

this rate the value of a dollar is

cut in half every 16.47 years.

So, a 1967 dollar has the cur-

    rent day purchasing power of

    only 14 cents.

    Amazing, isnt it?

    My 1967 pizza recollec-

tion is from Tonys Pizza in

    Pompton Lakes. Order two

slices and a coke, pay with adollar and get change back

    with your food. Today, the

    same order tastes equally as

    good, but costs $5.75! What

will it cost when my kids and

yours are 46 years older? Lets

figure this on a different scale

    retirement portfolio size.

If back in 1967 you had a

    goal to accumulate $1 million

    in retirement funds by 2013,

thinking that beyond a shadowof a doubt you would then be

    financially independent, how

    would that have worked out?

Bottom line is this: due to the

    actual inflation rate you lived

    through, your $1 million is

    worth 86 percent less today,

    only $140,000 in 1967 dollars.

It adds up to $1 million when

you count it today. It looks like

$1 million when you take a pic-

ture of it today, but, it doesnt

spend like $1 million at all.Can a 1967 thinking person

    retire in 2013 with only

    $140,000 in portfolio purchas-

ing power and expect to live

comfortably for the rest of his

or her life? I think not!

    One million dollars isnt a

    million dollars anymore! And

what about our children? If my

    now 25-year-old daughter accu-

mulates $1 million by the time

she is age 70, and assuminginflation is no worse over the

next 45 years than the last 45

    years (which is highly unlikely

since our current federal debt is

$17 trillion and it was basically

nothing in 1967), her $1 mil-

    lion will be worth only

    $140,000. She is ill-prepared to

    retire.

So, lets add a zero. If she

    were to accumulate $10 million

over 45 years, after inflation itwould be worth 86 percent less,

or only $1.4 million. At a

    respectable withdrawal rate of

    five percent annually, this fig-

ure would only be $70,000 in

2013 dollars. If I were to leave

her my home, she would be

unable to afford to live in the

house she grew up in. Between

    property taxes, insurance, utili-

    ties, maintenance and repairs

she could not afford to live inour house on a $70,000 annual

income in 2013 dollars, even in

2013! And she will need $10

million in 2058 dollars to be

    able to generate $500,000

    annually, which is exactly the

    same thing. My daughter and

    her entire 25-year-old peer

    group must be deca-million-

aires to be slightly better off

than poor when they retire at

    70 years of age!

Ill devote another col-umn to creating a $10 million

retirement nest egg over a 45-

    year time horizon, but know

    this: if your 25-year-old chil-

    dren or grandchildren do not

    accomplish this financial goal,

they will be working for the rest

of their lives, never being able

to retire! I base this prediction

    on the federal governments

CPI table as proof of my argu-

ment. Yes, I am frightened formy children, all four of them.

    The younger ones more so,

    because their figures are made

    worse by continuing inflation

over a greater number of years.

    There are financial strate-

gies that we and they can

employ to give our kids a fight-

    ing chance to beat inflation

    and to secure financial inde-

    pendence, when implemented

early enough. Time is the great-est asset in wealth accumula-

    tion, along with consistency of

    systematic contributions to

    retirement plans, both through

    employers and also non-

    employer related retirement

    portfolio building enterprises.

    Call me to discuss these

strategies during a no cost, no-

    obligation appointment. Your

    future retired children will

thank you. Im counting on it!

    Home health care

    allows people to

    receive quality indi-

    vidualized services in the

    comfort of their homes.

    Recipients of home health

    care include the elderly, those

    living with an illness, and

    those recovering from an acci-

    dent or surgery. More families

are choosing home care as the

preferred way of care for their

    loved ones for various reasons.

    Here are the top six:

    1.It is delivered at home.

    There are positive feelings

that all of us associate with

being home. Our home is our

    castle, our refuge from the

    storm. Whether were feeling

sick or well, we enjoy the

    sanctity of our residences and

the joy of being with our

    loved ones.

    2.It provides the elderly with

    a sense of independence. No

    one wants to feel totally

    dependent or helpless. With

    some assistance, seniors

    receiving home care can con-

    tinue to function as viable

    members of society.

    3.Home care can be safer.

    Statistics show it is not

    uncommon for patients to

    develop new health problems

or risk infection as a result of

    being hospitalized. Some of

    these risks are eliminated

when care is given at home.

    4.Home care allows the maxi-

    mum amount of freedom for

    the individual. A hospital or

nursing home can be a regi-

    mented, regulated environ-

    ment. Upon admission to

either, we are required to sur-

    render a significant portion of

    our rights. Such sacrifices are

    not required with home care,

    where flexibility is key.

    5.Home care is personalized.

Home care is tailored to theneeds of each individual. It is

    delivered on a one-to-one

    basis and involves the individ-

ual and the family in the care

    that is delivered.

    6.Home care is less expensive

    than other forms of care.

    Home care costs only one-

    tenth as much as hospitaliza-

    tion and one-fourth as much

    as nursing home placement.

    By bringing health services

    home, the patient does not

    generate additional board and

    room expenses.

    Beautytek is the break-

    through technology

    from Germany that is

helping people get rid of stub-

    born fat while lifting, tighten-

ing and firming skin. This new

    treatment is gaining so much

    attention and popularity

    because its surgery-free,

    affordable and completely

    painless.

    The cutting-edge tech-

    nology targets stubborn and

    embarrassing areas of fat and

    loose skin, like flabby chins,

    double chins, sagging eyelids,

bags under the eyes, flabby tri-

    ceps, cellulite and, of course,

    big bellies. Much like break-

    ing an egg yolk, Beautytek

    works by targeting the cell

    membrane around the fat,

releasing the fat deposits to be

    expelled from the body.

    After the first session, 90

    percent of clients report visi-

    ble results. This is powerful

    inspiration to those trying to

    lose weight. Of course, regular

    exercise and dieting are need-

ed to shed pounds and keep

    them off. However, many peo-

ple have areas of stubborn fat

that dont seem to go away.

When they see results so fast

    from Beautytek, it prompts a

    more enthusiastic attitude

    about exercise and healthy

    eating.

    The Beautytek system

    uses two machines to target

    obstinate fat deposits and

    diet-resistant fat stores that

    cannot be reduced by exercise

    or diet. Gentle micro-currents

    boost cellular rejuvenation for

    a firmer, more youthful

    appearance. Stable cavitation

    and ultrasound enables selec-

tive impact on the fat cells

    while protecting surrounding

    tissue. Both machines tone

    and lift while reducing fat,

    cellulite, scars, stretch marks

and acne all while you are

    having a relaxing massage!

    Other cosmetic treat-

    ments namely surgery,

fillers and Botox are not as

    effective or efficient as

    Beautytek. Surgery is very

risky. You cant ever be sure

what results you will get and

they still wear off in 1015

years, which is why starlets are

    always under the knife. Fillers

    and Botox are expensive and

do not have any healthy ben-

    efits at all. Other procedures

    like CoolSculpting basically

    give your stomach frostbite

    a very painful experience!

Then you still have to wait six

weeks to begin to see results.

    Beautytek treatments last

up to a year, which is twice as

long as filler and three times

as long as Botox. Plus, unlike

    Botox and fillers, Beautytek is

    a holistic, healthy approach

    that actually works with body

    to remove wrinkles and fat,

    and stimulate the bodys own

ability to firm up and expel

toxins. It is also the only treat-

    ment that can actually keep

    your face looking younger by

    preventing the onset of wrin-

kles to begin with. (So the

    younger you start, the better

    you will look and feel!)

    Its also much more

    affordable. Some doctors

charge as much as $800 for

one area of filler. A Beautytek

    package of 12 sessions, howev-

er, costs less than $125 per ses-

sion. And since most of our

    business comes from friends

    telling friends about us, you

also earn a free session for

    three referrals.

    After Beautytek, you will

    immediately see healthier,

firmer skin. You will see inch-

    es reduced, confirmed by your

    before-and-after measure-

    ments and photos. After the

    third face treatment, you will

begin to see as much as a

    5075 percent improvement

in the bags under your eyes

    and the sagging jowls.

    Technicians will help

    you track your progress

    because its so reward-

    ing to see your confi-

    dence improve along-

    side your body and

    face!

    Cosmetic treat-

    ment is an investment.

    Hold off on the expen-

    sive surgeries that have

    no guarantees and

    come with too many

    risks. Review all the

    temporary treatments

    out there and remem-

    ber that Beautytek

    guarantees 100 per-

    cent satisfaction. If

    you dont see physical

    results (which have

    never happened), we

    will continue to work

    on them until you do!

    Kent Culuko, an all-

    state basketball player

    at Mahwah High

    school, was recently inducted

    into the James Madison

    University Athletics

    Hall of Fame.

    Culuko, of Peq-

    uannock, is the founder

    of IYB Basketball, a

    youth training program

    that uses the Wayne

    PAL and other facili-

    ties in Passaic, Bergen

    and Morris counties.

    A rookie of the

    year and all-conference

    player at James

    Madison, he led his

    teams to three regular

    season Colonial

    Athletic Association

    crowns, one conference

    tournament title, and four

    postseason berths. He scored

1,701 points and hit one of

    the biggest three-pointers in

    school history.

It was the shot of a life-

time and he was ready to take

    it.

    JMU trailed by two in

    the finals of the 1994

    Colonial Athletic Association

    tournament. With 1.1 seconds

left, there was time for one

pass and one shot off an

    inbounds play. Culuko was

open in the corner and nailed

    a three-pointer at the buzzer

    to defeat Old Dominion and

    send James Madison to the

    NCAA Tournament in dra-

    matic fashion.

    In the huddle, I told

    Coach Lefty Driesell, Give

me the ball. Lets go for the

    win. Thats what you dream

about as a little kid, said

    Culuko.

    His hoop dreams began

early when he was a ball boy

    at Bergenfield High School,

where his father Cliff was the

    coach. An unbridled passion

    for the game and countless

    hours of practice and playing

    on driveways, neighborhood

    courts and in youth leagues

enabled this gym rat to soar

    above the competition when

    he played at Mahwah High

    School, where he scored an

    astounding 2,780 points (No.

    two all-time in Bergen

County and No. 4 in New

    Jersey).

    Culuko was named All-

    County for three consecutive

    years, First Team All-State

    Group II for two consecutive

    years, First Team All-State All

    Groups, and First Team All-

    Century (1900-2000) for

Bergen County. He was also a

    McDonalds High School

    All-American Honorable

    Mention.

One of only 50 players in

Division I history to hit 300

    three-point field goals,

    Culuko tried out for the

    Cleveland Cavaliers and

    signed a non-guaranteed con-

    tract with the Nets. Overseas,

    he played professionally in

    Argentina, Finland, Bulgaria

and South Africa. He led the

    German Professional League

in scoring with 24 points per

    game, going up against the

likes of Dirk Nowitzki of the

    Dallas Mavericks.

    Today, Culuko is

    using the knowledge and

    experience that helped

    him achieve high school

    and college fame to help

    players of all ages and

    abilities reach their

    goals.

    IYB Basketball is a

    premier hoops program,

    offering year-round

    camps and clinics, AAU

    programs, and individual

    and group training. From

    young players just start-

    ing out to 1,000-point

    scorers in high school to

    college players like Kyle

    Anderson (UCLA, St,

    Anthonys), Culuko and his

    team which includes for-

    mer NBA star Cliff Robinson

    take pride in developing

    todays young athletes with

    cutting-edge skill workouts,

    personal instruction and good

    old-fashioned hard work.

    Its a formula with a

    proven track record.

    Dont be afraid to take

    the big shot, Culuko often

    tells young players.

    At James Madison,

    Culuko certainly wasnt afraid

to take the big shot on a big

stage. And he is now a mem-

    ber of that prestigious univer-

    sitys sports hall of fame.

    Most drivers would not

    allow a 40-pound

    unsecured weight to

    ricochet around the interior of

    their vehicles. Passengers and

    cargo are typically strapped in

for safety. But if a driver is driv-

ing with an unsecured pet in

his or her car, he or she could

be putting everyone in the car

    at risk.

    The law states that chil-

dren and adults should be buck-

led up when riding in a car. The

    same regulations do not always

    pertain to pet passengers,

    although some experts think

    they should. According to

    Christina Selter, the founder of

    California-based pet advocacy

group Bark Buckle Up, pets can

be very dangerous inside of a

vehicle if they are not secured.

    A 60-pound Golden Retriever

can hit you with 2,700 pounds

    of force in a 35 mile-per-hour

    crash. However, thats not the

only danger. A dog or cat that

is allowed to roam freely inside

a car can pose a distraction to

    the driver, potentially imped-

ing a drivers line of vision or

    inadvertently bumping into the

gear shift. A small animal could

get down into the foot well on

    the drivers side and impede

    operation of the brakes or

    accelerator.

    In addition to the passen-

gers and driver in the car, an

unsecured pet poses a danger to

itself. A dog or cat that is pro-

pelled through the car in a

crash or sudden stop can risk

    injury or death. Even simply

    bumping noses on the dash-

board or a seat can be very

    painful to the animal.

    Here are some other reasons

why the pet should be tethered

    in the car:

A belt or tether secures the

    animal and prevents it from

hanging its head out of the

    window, where any small speck

of flying debris can cause a seri-

ous injury to the pets eyes or

nose. Its important to keep the

pets entire body inside of the

    moving vehicle.

A harness will prevent a dog

    or cat from physically jump-

ing out of the vehicle. If a

    squirrel or other distraction

    arouses interest outside, the

pet is unable to pursue it.

In the event of an accident,

a pet seat belt will keep the

    animal contained until emer-

    gency workers can assess the

    situation. A frightened or

injured pet may scratch or bite.

    Having an excited animal on

the loose can make rescue dan-

    gerous.

    When wearing a harness, the

pet doesnt have to work as

hard bracing itself while the car

    is maneuvering. The harness

    will keep it secure.

    There are many ways to

secure pets in a motor vehicle.

An animal crate that is belted

down is one option, and a pet

may be comfortable riding in a

    familiar crate and feel more

    secure as a result.

    For smaller dogs or cats,

consider a pet booster seat that

straps in with the vehicles safe-

ty belt. Some drivers have used

    childrens booster seats with a

    pet harness.

    Harnesses that work with

    safety belts are also available.

These can keep the pet in a sit-

    ting or lying-down position.

Securing pets in the car ensures

the drivers safety, the safety of

    the passengers and the health

of the pet going for a ride

Gift cards are a staple of

    the holiday season.

    Often a go-to gift

when other options just do not

    seem to suffice, gift cards

    remove the worry about

whether or not the item will fit

or if its the right color or

    model. Gift cards can make

ideal gifts because they are cho-

    sen with the recipients likes

and tastes in mind while allow-

    ing recipients to shop without

    spending their own money.

    Todays gift cards are bet-

    ter than those of yesteryear,

    which typically came with

    expiration dates and onerous

fees. E-gift cards, which can be

    purchased and redeemed

    online, are among the most

    convenient of all gift cards.

    Although gift cards have

    many positive attributes, its

    difficult to overlook that gift

cards are viewed as a safe gift

    lacking in originality. But the

    National Retail Federation

notes that in 2011, 57.7 per-

    cent of survey respondents said

they would prefer to get a gift

card that year. This ranks gift

    cards higher than electronics,

    clothing and accessories as

    desired gifts. Recipients of holi-

    day cheer seemingly would like

to pick out their own presents,

which can ease the burden on

    gift-givers searching high and

    low for the perfect gifts.

Still, giving a gift card can

    remove some of the excitement

    of unwrapping a mystery gift.

    By employing a few creative

tips, gift cards can be fun and

    unique.

    Scavenger hunt

    Have the gift recipient

work a little in a clever way for

the gift. Plant clues around the

    house that will gradually lead

to the hiding spot where the

gift card is stashed. Clues can

    include witty poetic verses or

    tie into recipients personal

    interests.

    Nesting boxes

    Another way to present a

gift card is to hide it inside of a

box that looks like any other

    gift. However, once the person

unwraps the gift, he or she will

    discover another wrapped box

    inside. This prank can be

repeated over and over as many

times as desired until the gift

    card is unearthed.

    Gift basket

    A gift card can be

    ensconced with other trinkets

and tied into a theme. For

example, a gift card for a spa

    massage may be complemented

by lotions, massage oil and a

    terry-cloth robe. These items

can all be packaged together in

a decorative basket to make the

    entire gift eye-catching and

    appealing.

    Themed wrapping

    Place the gift card inside

of an item that epitomizes the

gift. A card for a bookstore can

be nestled inside of the pages of

a classic book. A gift card to a

hair salon can be attached to

the end of a hairbrush. For

those gifting to a favorite coffee

shop, place the gift card inside

    of an empty coffee mug.

    Shopping savvy

Offering a gift card as a

    present is entitling the recipi-

ent to a day of shopping. Wrap

the card with a reusable shop-

ping tote so that he or she can

    carry purchases inside. You

    can monogram the bag with

    initials or even decorate it.

    Otherwise, purchase a new

wallet and place the gift card

    inside. Wrap the wallet and

    encourage the recipient to go

    on a spree.

    Special delivery

    For a creative spin, work

    with a retailer that offers

    home delivery service. Ask

to have the gift card attached

inside of a pizza box or nes-

tled in a bouquet of flowers.

    When the recipient receives

the delivery, he or she will be

    surprised by the added gift.

    Gift cards make conven-

ient gifts, but they may not

    carry with them the panache

    of other holiday gifts.

Dressing up gift cards in cre-

    ative ways can make them

    even more appreciated.

    The holiday count-

    down is on and its

    time to get your

    house razzle-dazzle ready. But

before you do, make sure to

    check that your lights and

    decorations are still in good

working order after a year in

    storage. Not only can old

decor look worn out, but it

also can put you and your fam-

ily at risk which is the last

    thing anyone wants at this

    joyous time of year.

    CSA Group, a leader in

    public safety testing and certi-

    fication, offers these tips to

help you stay safe this holiday:

    Carefully inspect light

    strings each year. Discard any

    with frayed cords, cracked

    lamp holders or loose connec-

    tions. Inspect for storage dam-

    age from moisture or rodents.

Turn off the electricity to the

    supply outlet before working

    with outdoor wiring. Unplug

    light strings before replacing

    bulbs and check to ensure

    replacement bulbs match the

    voltage and wattage of the

    original. To avoid a shock

    from damaged wires, use insu-

    lated fasteners rather than

metal nails or tacks to hold

    light strings in place.

    Make decorating a family

    activity by planning this years

theme with the kids, but dont

let children or pets play with

    light strings.

    Keep electrical connectors

    for outdoor lights above

ground, out of water and away

    from metal gutters. Connect

    outdoor lighting into recepta-

    cles protected by weather-

    proof ground fault circuit

    interrupters (GFCI). These

    can provide protection from

    electric shock by sensing

    ground leakage and cutting

    electrical power.

    Use heavy duty extension

    cords for high wattage decora-

    tions and large electronically-

    animated displays, and dont

    overload extension cords.

    If you need to purchase

new lights, look for a certifica-

tion mark to ensure they are

    certified by an organization

    such as CSA Group.

    And remember: outdoor

    holiday lights are made for

    seasonal use only; extended

    exposure to the elements can

lead to damage. So when the

    holidays are over, take down

    the festive decorations and

place them back in their orig-

    inal packaging for next year.

    The Jewish celebration

    of Chanukah is often

    associated with the

    Christian holiday of

    Christmas, but that associa-

tion has little to do with the

    significance of each holiday

and more to do with the tim-

ing. Each is celebrated at the

end of the year when the holi-

day season has hit full swing.

But much like the story of

    Christmas, the story of

    Chanukah is a rich one.

    The celebration of

    Chanukah has a deep history

that can be traced back to a

    successor of Alexander the

    Great. Upon conquering

    Syria, Egypt and Palestine,

    Alexander the Great allowed

    these lands to remain relative-

    ly autonomous, a gesture that

extended to allowing residentsof these conquered lands to

    observe their own religions.

    However, more than 100 years

later, Antiochus IV, a less tol-

    erant successor of Alexander,

    began to oppress the Jewish

    people under his control, dese-

    crating their temples and even

    ordering the massacre of many

    Jews. This treatment eventual-

ly sparked a revolt led by

Mattathias the Hasmoneanand his son, Judah Maccabee.

    This revolt would ultimately

    prove successful, and the tem-

ple was rededicated. But at the

    time of rededication, oil need-

ed to light the menorah was

    very low, roughly enough to

keep the menorah lit for just

    one night. However, the oil

    stunningly lasted for eight

    days, enough time to prepare

an additional supply of oil for

    Looking at the menu,

    chef and owner Scott Gabriel

    is behind every menu selec-

tion, ensuring not only a fullbelly, but a gastronomical

    adventure to get you there.

    I had the opportunity to

    dine with Scott and experi-

ence a few of his creations.

We started with the bangbang shrimp, an appetizer dish

    that presented lightly fried

    popcorn-sized shrimp covered

in a Thai honey glaze. The

    burst of flavor was immediate

and anything but subtle. There was a rich decadence to

this plate that is making me

crave it even as I write.

the menorah. An eight-dayfestival was then declared to

    celebrate this miracle, and that

    festival is now known as

    Chanukah, which is often

referred to as the Festival of

    Lights.

    Though Chanukah is not

    as religiously significant as the

    Jewish holidays of Yom Kippur,

    Rosh Hashanah and Passover,

    many Jewish people still look

forward to the holiday and itstraditions. One such tradition

    for many families is cooking

    potato latkes, a relatively easy

    yet delicious food that

    Chanukah celebrants can

    enjoy on weekend mornings

    when gathered around the

    breakfast table.

    Potato Latkes

    Serves 4

    11/2 pounds russet potatoes,

    peeled

    There was also the

garbage salad, which is a gour-met take on a salad that has

    everything but the kitchen

    sink. There was creamy gor-

    gonzola, crisp cuts of bacon

    and plenty of other additions,

all tossed in a cranberry roast-

    ed pepper vinaigrette. Just out-

standing. The warm toppingsmixed with the cold greens

really set this dish on fire! This

is also an excellent option for

    those watching the waistline.

    Eating healthy doesnt mean

    you cant eat well!

    We also enjoyed a pep-

    percorn-crusted ahi tunacooked in a soy-garlic reduc-

tion. Served over a bed of

    sauted spinach, the visual

    presentation of the tuna was

    beautiful. More importantly,

    the contrast between the per-

    fectly seared crusted edges and

the buttery raw center is what

    really made this plate memo-

    rable.

    As if the previous three

    dishes hadnt left us impressed

    enough, Scott brought out the

grand finale. Served on aTurkish roll (the only roll

large enough to hold such a

    beast) was the 20-oz. stuffed

    burger. Chock-full of bacon,

    cheese, roasted peppers and

    oozing with every bite, there

wasnt any surprise why this is

    one of Scotts best sellers.

It was truly a pleasure to

    watch Scott explain his foods

and exude such a passion for

all things culinary. I will defi-

nitely be back at Trackside Bar

& Grill and I recommend yougo, as well. Trackside also
