February isAdopt-a-Rescued-Rab-bit Month, and Heath isone of the lucky bunnieswho has already found ahome, after four monthsin a shelter and overthree years in a fosterhome prior to that.
These days hehas more personal ac-commodations, thanksto his adopter, DanielTom in San Leandro,Calif.
Heath has hisown bed and litter box(yes, rabbits do use litterboxes) and has plenty ofspace to run and jump.He has a perch fromwhich he can keep aneye on his new familyand a dining area with aview.

Basic Meringue Recipe3 egg whites,
room temperature 1/4 tsp cream of
tartar 1/4 tsp salt1 cup sugar 1/2 tsp vanilla
extract
1. Preheat ovento 300F. Line a bakingsheet with parchmentpaper, securing paper tobaking sheet with mask-ing tape.
2. Beat eggwhites, cream of tartarand salt with a mixer athigh speed until softpeaks form (when thebeater is lifted from thewhites, peaks withcurled-over tops form).
Add sugar, 1 tablespoonat a time, beating untilstiff peaks form (whenthe beater is lifted fromthe whites, peaks re-main standing straightup).
3. Add vanillaand beat 30 secondsmore.
4. Drop batterby level tablespoonfulsonto prepared pan; or filla disposable pastry bagwith batter and pipe asmall amount (about 1tablespoon of batter foreach meringue) ontopan.
Bake 40 min-utes, or until crisp. Letcool on pan on a wirerack. Repeat procedurewith remaining batter,reusing parchmentpaper. Store in an air-tight container. Makes
40 (1-inch) meringues.

Sift 3 tablespoonsunsweetened cocoa and1 tablespoon instantespresso powder overegg whites; fold in. Foldin 3 tablespoons semi-sweet chocolateminichips
Toffee KissesUse 1/2 cup
brown sugar and 1/2cup granulated sugar.Omit the vanilla. Fold in1/2 cup milk chocolatetoffee bits.

3 pounds bone-less beef chuck,trimmed, and cut into 11/2-inch cubes
1 teaspooncoarse salt
Freshly groundblack pepper
8 teaspoonsvegetable oil
3 yellow onions(about 2 pounds), cutinto halves and sliced1/4-inch thick
3 tablespoonsall-purpose flour
3 large garlic
cloves, minced1 1/2 cups re-
duced-sodium chickenbroth
1 (12-ounce)bottle dark ale (Belgianale is best)
3 large thymesprigs
1 tablespoonDijon mustard
1 tablespoonred currant jelly
1 teaspoon cidervinegar
1. Preheat ovento 350F. Pat beef drywith paper towels; sea-son generously with saltand pepper.
2. Heat a largesaute pan over medium-high heat. Add 2 tea-spoons oil and a third ofthe beef. Sear 2 minuteson each side, or untilwell browned; transfer to
a large Dutch oven. Re-peat with remainingbeef, using 2 teaspoonsoil per batch.
3. Add remain-ing 2 teaspoons oil tosaute pan; reduce heatto medium. Add onionsand a pinch of salt.Cover; cook 5 minutes.Uncover and saute untilonions are soft andgolden, about 20 min-utes. Add garlic and tosswith onions 1 minute.Add flour; stir 2 minutes.Pour in broth; increaseheat to a simmer. Trans-fer contents of pan toDutch oven, scrapingbits from bottom of pan;add ale and thyme.Bring to a simmer, stirwell, cover, and transferto oven. Cook until beefis very tender, 2 to 2 1/2hours.
4. Stir in mus-tard, jelly and vinegar;let cool completely andrefrigerate. (The stew isbest made ahead 1 or 2days, and gently re-heated). Serves 6.
