Sun exposure and Cancer The sun produces ultraviolet (UV) rays that can damage skin and eyes with too much exposure. People with light skin are more likely to get sun damage, but it can happen to anyone. People with darker skin, including American Indians and Alaska natives, can get sun damage and skin cancer. The good news is that you can do a lot to help protect yourself and your family from skin cancer. Sun safety Some people think about protecting their skin and eyes only when they spend a day at the lake, beach, or pool. Sun exposure adds up day after day, and it happens every time you are in the sun. There are some steps you can take to limit your amount of exposure to UV rays:
Cover up with clothes
Wear a hat with a wide brim all around
Wear sunglasses that block UV rays, Labels that say “UV absorbtion up to 400mn” or “Meets ANSI UV requirements” mean the glasses block 99% if UV rays. Those labeled “Cosmetic” block out 70% of UV rays.
Choose broad-spectrum sunscreen rated SPF 30 or higher. Apply it generously to all exposed areas, and re-apply every 2 hours you’re in the sun.
Limit Mid-day sun exposure
Avoid tanning beds and sunlamps
Protect Children from the sun by using the measures decribed above.
Babies younger than 6 months of age should be kept out of direct sunlight and protected from the sun using hats and protective clothing. For more information about sun safety, please visit cancer.org or call 1-800-227-2345

Last week, I checked into the Four Seasons in Palm Beach and was a bit lonely.
I thought, “I’ll call on of those men you see advertised in the phone books for escorts and
sensual massages.”
“Hello, Ma’am, How may I help you?” …
Oh my… he sounded soo sexy! Afraid, I woud lose my nerve if I hesitated… I rushed right in.
“Hi! I hear you give a great massage. I’d like you to come to my room and give me one.
No, wait… I should be striaght with you. I am in town all alone and what I really want is sex.
I want it hard, I want it hot, and I want it now. Bring implements, toys, rubber, leather, whips,
everything you’ve got in your bag of tricks. We’ll go hot and heavy all night.
You can tie me up, cover me in chocolate syrup and whipped cream, anything and everything
goes baby. Now how does that sound?

Buddy Valastro’s Brownies - The Cake Boss
Serves 24
Originally aired May 20, 2015
1 cup plus 1 tablespoon sugar
1/2 cup (1 stick) unsalted butter
4 extra-large eggs
2 cups chocolate syrup (24 oz. bottle of Hershey’s Syrup)
1 cup all-purpose flour
Nonstick spray, for the baking tray
For the Brownie Icing: (optional)
1 1/4 cups sugar
6 tablespoons (3/4 stick) unsalted butter
6 tablespoons whole milk
1 cup semisweet chocolate chips or coarsely chopped
semisweet chocolate (6 ounces)
PREPARATION
Position a rack in the center of the oven and preheat to 325°F.
Cream 1 cup sugar the butter in the bowl of a stand mixer fitted with paddle attachment. (You can use a hand mixer if you
allow the butter to soften at room temperature before starting.) Paddle on low speed, then medium, for a total of 2-3
minutes. Add the eggs all at once and paddle at low speed until blended, about 1 minute. Add the syrup and paddle for
another minute; the mixture will be very wet, but that’s okay. Paddle on low speed for about 1 minute then stop and
scrape. Add the flour, paddle on low for 1 minute, then scrape. Paddle on low until thoroughly mixed; the mixture will still
be very wet and look a little grainy.
Spray by 13x9x2” baking tray with nonstick spray and line the bottom with parchment paper. Pour the batter into the pan.
In won’t even come halfway up the sides—that’s all right.
Bake until crispy on top, the batter begins to pull away from the sides of the pan and a toothpick inserted to the center
comes out clean, about 30 minutes.
Remove the tray from the oven and let the brownies cool in the pan. Cover a cutting board with parchment paper. Sprinkle
the brownies with the remaining 1 tablespoon sugar and gently turn the brownies out onto the parchment paper by
inverting the tray. Peel off the parchment if it is stuck to the brownies.
ICING
For the icing, put the sugar, butter and milk in a pot and bring to a boil, stirring, over medium-high heat.
Remove the pot from the heat and whisk in the chocolate until melted.
Let the mixture cool slightly then ice the brownies using an offset spatula while the icing is soft and pliable. Use right
away; do not let it stiffen and do not store.
Cut the brownies into 6 even strips (1 1/2-inches each) along the length of the batch then crosswise at 3 1/4-inch intervals
to make 24 brownies.
Note: The brownies should be enjoyed as soon as possible, but can be refrigerated in an airtight container for up to 3 days.
They may also be frozen for up to 1 month. Let them come up to room temperature before serving.

Crawfish Enchiladas
12 – 16 oz. crawfish tail meat
1 Tbsp. unsalted butter
1 cup green onions, chopped
1/2 cup yellow onion, chopped
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1/4 cup yellow bell pepper, chopped
2 garlic cloves, minced
2 tsp. all-purpose flour
1 cup low-fat milk
1/2 tsp. dried oregano
1/2 tsp. chili powder
1 tsp. Tony’s Cajun Seasoning (or your favorite brand of
creole seasoning)
Dash of cumin
1/4 tsp. black pepper
Dash of salt
1 cup sharp cheddar cheese, shredded
1/2 cup sour cream
12 (6-inch) corn tortillas
Non Stick Cooking spray
1/2 cup Monterey Jack cheese, shredded
Melt butter in a large nonstick skillet over medium-high heat. Add onions, bell peppers and garlic. Allow to cook 2 -3
minutes to wilt onions. Add flour, continue to stir constantly to make a nice paste with the smothered down veggies and
butter. Reduce heat to medium. While stirring with a whisk, very slowly add the milk. Cook until thick (about 8 minutes),
stirring constantly. Stir in oregano, chili powder, Cajun Seasoning, cumin, black pepper & salt. Take off of heat and allow
to stand for 3 minutes to thicken up. Add cheddar cheese and sour cream and stir well until all the cheese melts. Stir in
the cooked crawfish tails.
Preheat oven to 325°.
Add water to a medium skillet to a depth of 1 inch; bring to a simmer. Dip 1 tortilla in water using tongs. Place tortilla on a
cutting board or other flat working surface. Spoon 1/4 cup crawfish mixture into the center of 1 tortilla; roll tightly, and
place in a 13 x 9-inch baking dish coated with cooking spray. Repeat procedure with crawfish mixture and remaining
tortillas. Spread remaining crawfish mixture over tortillas; sprinkle with Monterey Jack cheese.
Cover and bake at 325° for 10 minutes or until thoroughly heated.
