We were notraised eating chili, sothe first time we madeit, we were compulsiveabout following therecipe. The recipe wemade was fairlystraightforward—beef,onion, tomatoes, chilipowder, cumin andoregano.
Many potslater, we can honestlysay chili lends itself tounlimited variationsand is one of the mostrewarding dishes acook can make. It’sone of the truly au-thentic Americandishes. Although thereis some questionabout its origins, foodhistorians agree chili,made with cheap cutsof meat, peppers andonions, was the stewthat chuck wagoncooks dished out tocowboys working oncattle drives. It wasalso the one-dish mealthat fueled prospectorson their way to strike itrich in the Californiagold rush.
We’ve readthat instead of adding
pinto beans to their thechili, some puristsserve them on theside. And hard as it isto believe, somechilies are made with-out onions. For ourChicken Chili, withkale and garbanzos,but not a singletomato, we may havebroken a few rules ofchili cookery. But onething we’ve learnedover the years is thatit’s OK to be creative.
Chicken Chili2 T olive oil 1 C chopped onion 3 garlic cloves, chopped 2 t ground cumin 1 t cumin seed 1lb. ground turkeysausage 3 c roughly chopped ro-tisserie chicken
2/3 c barley 2 (16-oz) cans gar
banzo beans, drained
2 t pickled jalapeno 6 c homemade chicken broth or canned chicken broth 4 to 8 c chopped kale
(optional) 1/2 c shredded Mon-
terey Jack or Cheddar cheese
Chopped green onions Sour cream
1. Heat oil in a Dutchoven over medium heat.Add onion and garlic;saute 5 minutes. Addcumin, cumin seed andturkey sausage. Cookuntil sausage isbrowned. Add choppedchicken, barley, beans,jalapeno, broth and kale,if using. Bring to a boiland simmer about 20
minutes or until barley iscooked. Serve toppedwith cheese, greenonions and sour cream.Serves 10.
