    Fusion Pasta : Fusion pasta combines culinary techniques and ingredientsfrom two or more countries to create a unique and interesting dish.

    Problem

    There is a new restaurant due to open in Sukhumvit, Bangkok. The restaurant is owned by an Italiancouple that have a passion for food across the world and have decided to combine their passions tocreate a new Fusion pasta menu for their opening in February 2011. They require 8 new dishes.

    Brief

    We propose to plan and create a fusion pasta dish that is a fusion of the flavors of Thai and Japanesefood. The pasta dish will be aimed at foreigners that are working in Bangkok.

    Different Types of Pastas

    SpaghettiOriginally spaghetti came fromsouthern Italy during the 12 th century.It then spread to the whole of Italyand became a common Italian dish.Spaghetti is a long, thin and cylindricalpasta. It is traditionally about 50cmlong but now the sizes are about 25cmso that it is easy to prepare and store.

    Spaghetti is usually served with tomato sauce and may contain herbs such as oregano andbasil, olive oil, meat or vegetables. Other spaghetti preparations may include Bolognesesauce, Alfredo and carbonara. Grated cheese is often added and it is also sometimes servedwith chili.

    Penne

    Penne is a type of pasta with cylinder-shapedpieces. It originates from Italy, with the wordpenne being a plural form of the Italian wordpenna, deriving from the Latin pennameaning feather or quill. Penne is madehollow so that the inside part can be used tohold sauce. It is usually eaten in a salad or apasta sauce.

    Farfalle

    Farfalle is Italian pasta commonly known as bow-tiepasta. The name is from the Italian word farfallemeaning butterfly. The letter e at the end of theword is an Italian plural ending making the meaningof farfalle butterflies. Farfalle originates from theLombardi and Emilia-Romagna region in northernItaly during the 16 th century.

    Farfalle is best suited with cream and tomato dish.

    Linguine

    Linguine is a form of Italian pasta that is flat like fettuccine andtrenette and is wider than spaghetti. It is seasoned and eaten withsimilar sauces as spaghetti. Linguine is often served with eitherseafood or pesto sauce.

    First we mix eggs with the pasta dough. We then form the dough together into a ball. If thepasta is to dry add water, if it is too wet add more flour. Then we knead the dough into aball. Cover the balls and leave them for about 15-20 minutes. You then flatten the pasta tomake it thinner. Using a pasta machine or a rolling pin we make then dough very thin and

    long. After you get the desired thickness you cut into the strips of pasta. (If you want tomake farfalle you have to fold them into bow shapes). Then you boil the pasta for 5-10minutes. After that you can add sauce and eat it. The whole procedure will take about 1hour.

    Ravioli

    To make ravioli we make pasta dough similar to other Italian pastas. The difference is thatwe cut circular holes in the dough to put in our filling. Then we put another layer on top andcover the filling up. We cut the dough into square shapes. We then boil it for about 5-10minutes. After that we eat it with a sauce such as tomato or cream sauce.

    Similarities

    Most pasta types are made from similar recipes. The only difference is that at the endbefore we boil the dough, we cut and make different shapes. Also pasta is usually made sothat it is easy to eat. Pieces like penne, macaroni, farfalle and ravioli are bite-size pieces.Also types like spaghetti and linguine are in long strips because when the dough is made wecan use all of the dough if we make it in strips.

    Fusion Salad Reflection

    Today in Food Technology my partner Mari and Imade a fusion salad. Our task is to make a salad that

    combines the ingredients and cooking techniques of both Japanese and Thai cuisine. For the saladvegetable we decided to use normal vegetables suchas lettuce because it works well with both cuisines.To make it Thai we decided to add tomato,cucumber and chilli. To make it Japanese we decidedto add Japanese salad dressing, raw tuna, raw

    salmon and tofu. The dish came out very successful and very tasty. We all brought ouringredients and we made the dish in time. My classmates also liked the taste of the salad.

    One thing that we couldve done differently is to add fewer ingredients. We added to muchvegetables and fish. It made the dish look overloaded and too messy. But however, overallthe salad was a very good success and came out very good.
