1)Fat or oil is any neutral, nonpolar chemical substance that is a viscous liquid at ambient temperatures and is both hydrophobic and lipophilic.

2)Fats are organic compounds composed of carbon, hydrogen and oxygen content and are usually flammable and slippery. 

3)The term fats includes fats and oils which are greasy in feel and insoluble in water.

4)In addition to fat and oils there are certain fat like substances called as cholesterol.

Uses of Fat or OilThe basic use of fats and oils in

cookery is to add richness and flavor to food and as a cooking medium to fry or cook food.

They improve the texture of various preparations of food.

The quality of the food product depends largely on the fat or oil which is used while preparing it.

Functions Of OilsPalatability and satiety of food. Concentrated source of energy.Protects organs. Protects nerves.Keeps body warm and helps to

absorb and move nutrients around.

Hormone production. Carriers of fat soluble vitamins.

Various Oils Coconut oil -- Extracted from the kernel or meat of the

fruit of the coconut palm.

Corn oil -- One of the principal oils sold as salad and cooking oil.

Cottonseed oil -- Used as a salad and cooking oil.

Olive oil --Used in cooking and salad making.

Palm oil -- The most widely produced tropical oil. Popular in west.

Peanut oil -- (Ground nut oil) A clear oil with some applications as a salad dressing and due to its high smoke point, especially used for frying.

Rapeseed oil--including Canola oil, one of the most widely used cooking.
