Preheat oven to 400 degrees and pre-pare18muffincups,eitherwithlinersorgreaseandflour.Whisk together oat flour, almondmeal,salt,bakingpowder,cinnamon,andnut-meg. In a separate bowl use amixer tocombineeggs,canejuicecrystals,andco-conutoil.Asthecoconutoilmixeswiththe other ingredients it will inevitablystarttosolidify,andthebatterwilllookalittlechunky.Justkeepcalmandmixon.Itwillallevenoutintheend.Addorangejuice,vanillaextract,mixwell.Addflourmixtureslowlywhilemixing,untilthor-oughlyblendedandsmoothish.Setmixeraside.With a wooden spoon or spatulafold in carrots andCraisins. Fillmuffincups 1/3 full. Bake about 15 minutes.While muffins are baking, heat creamcheese andhoney in small saucepanonlowheat,whiskingconstantly.Topmuf-finswithasmalldollopwhensauceandmuffins are stillwarm to try to achievetheglazeconsistency.
