Organic Verdejo

The Mesta was a powerful association ofshepherds in Medieval Castile, controllingthe routes for herding sheep across thecountry. Our vineyards are nestled deep inthe land of the Mesta, and are still passedover by flocks on their annual migration, areminder of ancient rights and a culturalcue for continuing co-existence withnature. Trough organic viticulture andrespectful winemaking, we produce winesof great purity, reflecting the uniquepersonality of our land and grape varieties.

TASTING NOTES

A crisp, aromatic white wine, showinggreat purity of aromas and a preciseexpression of the Verdejo grape. Bright,pale straw yellow, with intense, fresh notesof grass, fennel and white pepper. Dry butjuicy on the palate, with excellent balance,a moderate alcohol of only 12,5% with apersistent, slightly mineral finish. Excellentas an aperitif and with pasta, salads,poultry and fish dishes.

PRODUCTION

Produced from our own, organicallyfarmed vineyards in Uclés (Castile, Spain),managed as an integrated ecosystem andstudded with centenary oak trees. Theregion’s continental climate with sunnydays and cool nights allows us to achieveintense fruit and excellent varietaldefinition, while retaining remarkablefreshness. Grapes were picked at night andin the early morning hours and shippedquickly to our state-of-the-art winery for ashort prefermentative cold maceration,followed by pneumatic pressing andfermentation in stainless steel vats ataround 16ºC, to preserve fruit characterwithout producing excessive secondaryaromas. Malolactic fermentation wasprevented by chilling. Wines remain ontheir fine lees for a minimum of 2 monthsbefore bottling.
