Ingredients
3 cups traditional rolled oats1 cup quinoa fl akes2/3 cup seed mix1/2 cup whole sliced almonds1/4 cup coconut oil1/3 cup maple syrup2/3 cup shredded coconut1 teaspoon ground cinnamon1/2 cup dried cranberries1/3 cup dried apple, choppedYoghurt and fresh berries, to serve
Method
Preheat oven to 180ºC/160ºC fan-forced.
Place oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon in a large bowl. Mix well to coat. Transfer to a roasting pan.
Bake for about 45 minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries and apple then set aside to cool completely.
Serve with yoghurt and your choice of fresh fruit or berries.
