by ANGELA SHELF MEDEARIS Abeautifullybrowned turkey is typically thecenterpieceoftheThanksgivingholidaytable.Thepre-sentationandcarvingofthebirdandthedistributionofthecrispyskinandwhiteordarkmeatisacentralpartofthemeal.WhileIcanappreciateturkey,it’sthesidedishesthatIlookforwardto.Thefallbountyofveg-etablesandthetraditionalrecipesthatmyfamilyenjoysduringtheholidaysareworthwaitingforallyear. Thanksgiving isoneof theonly timesof theyearthatmysister,Sandra,makesherdeliciousfriedcorn.Mymother’sbutterycornbreaddressinghasbeenmy“after-gluttony-day”breakfastforaslongasIcanre-member.Hereare the recipes formy family’s sensa-tionalsidedishes.HappyThanksgiving!

FRIED CORN1 stick butter, plus 2 tablespoons4 cups fresh or frozen corn kernels, thawed1 cup sugar2 teaspoons salt1 teaspoon pepper Meltthestickofbutterinalarge,heavy-bottomedskillet.Add the sugar and salt, stirringwell until thesugarmelts.Addthecornandblackpepper.Dotwiththeremaining2tablespoonsofthebutter.Simmeroverlowheatfor15minutes,stirringfrequentlyuntilker-nelsaretender.Serves8.

CORNBREAD DRESSING6 cups crumbled, day-old cornbread 3 cups seasoned, dried breadcrumbs2 cups sauteed vegetables (see recipe below)3 to 4 cups seasoned broth (see recipe below)1 tablespoon poultry seasoning1 teaspoon salt 1 teaspoon freshly ground black pepper 2 eggs, lightly beaten3 ounces unsalted butter, softened for greasing panCooked turkey neck meat, chopped gizzards and livers, optional (see recipe below) 1.Heatovento400F.Inalargemixingbowl,com-binecornbreadanddriedbreadcrumbs.Combinesau-teedvegetableswithbreadmixture.Stirinthecooled,seasoned broth and any vegetables, using enough tomoistenthebreadmixture,withoutmakingittoowetorsoupy.Reservetherestofthebroth. 2. Mix in the poultry seasoning, salt, pepper andbeaten eggs, blending well.Add in the diced turkeymeat,liversandgizzards,ifdesired. 3.Lightlygreasealargeshallowbakingorroastingpanmeasuringabout10-by-15incheswiththebutter.Spreadthedressingmixtureinthepan.Bakefor20to30minutesuntilthetopislightlybrownedandacrusthasformedaroundtheedgesofthepan.

Sauteed Vegetables and Seasoned BrothThisseasonedbrothisadeliciouswaytomoistenyourdressingmixture. Italsomakesawonderfulbase forgravies,soupsandsauces.3 to 4 cups chicken broth4 ounces unsalted butter2 cups onion, chopped, divided2 cups finely chopped celery, divided2 tablespoons poultry seasoningTurkey neck, gizzards and liver 1. In a saucepan over medium heat, melt the but-ter.Addonion,celeryandpoultryseasoning.Sautethevegetablesinthebutteruntiltender.Donotbrown.Re-movehalfofthevegetablesfromthepanandsetasidetocool. 2.Addthechickenbroth,turkeyneck,gizzardsandthelivertothepan.Bringthemixturetoaboilandthenreduceheat tosimmer.Simmer for15 to20minutesuntilthemeatisdoneandtender.Setthebrothasidetocool. 3. Remove the neck, gizzards and liver from thebroth.Pickthemeatfromtheturkeyneckanddicetheturkey meat, the gizzards and livers. Use the cooledbroth and thediced turkeymixture in theCornbreadDressingrecipeabove.

Volunteers are needed to wrap the 1,100 toys and books for the 36th annual Elizabeth Witt Christmas Party which will be held Sat., Dec. 3 at the First Chris-tian Church in Irvine. The gifts will be wrapped at Citizens Guaranty Bank on River Drive on Thursday, November 10 at 9 a.m. and Wednesday, November 16. Paper, ribbon, and tape will be provided. The par-ty is being planned for children in Estill County that are 12 years of age and younger. Further dates for wrapping gifts will be announced later as needed.
