GREEN CURRY BROCCOLI SOUP

INGREDIENTS

1 onion, diced 4 cloves of garlic, minced 1 tbsp. minced ginger 1 jalapeno, minced 2 tbsp. green curry paste 2 heads of broccoli, roughly chopped 2 cans of coconut milk 2 tbsp. fish sauce 1 handful of fresh spinach Coconut Oil for cooking salt and pepper to taste

METHOD

Heat a large pot over medium heat. Add a tablespoon of coconut oil and once melted, sauté the onion. Once the onions are soft, add the garlic, ginger, jalapeño and curry paste. Cook for an additional minute, letting the aromatics release their aroma. Add the broccoli, coconut milk, and fish sauce. Reduce the heat to the lowest setting and cover with a lid. Every five minutes give the broccoli a stir to mix. When the broccoli is very soft, blend with an immersion blender, At this time add the fresh spinach at the end for a vibrant green colour. Taste and season with salt and pepper to finish. Serve with Crusty bread ENJOY x
